Steps:
- Preheat oven to 350˚F (180˚C).
- Over medium-high heat, melt butter and stir together brown sugar, cinnamon, and vanilla. Bring to a simmer and add the sliced bananas.
- In a large bowl, whisk 8 eggs, brown sugar, cinnamon, nutmeg, vanilla, heavy cream, and milk.
- Add the cubes of French bread, and gently stir until the bread has soaked up all the liquid.
- Pour the bread into a greased 9x13 inch (23x33 cm) baking dish. Top with the banana and sugar glaze.
- Bake for 45-50 minutes until golden brown and slightly crispy around the edges and top. (Times and temperatures may vary based on oven).
- Serve with powdered sugar on top.
- Enjoy!

- Heat a lightly oiled skillet over medium heat and brown the slices of bread on both sides. - Heat the butter in a medium nonstick pan over medium heat. Add 2 tablespoons of the bourbon and all of the brown sugar and stir to dissolve. Cook for 1 to 2 minutes until bubbly. Add walnuts and cook for an additional 2 minutes; add the bananas and heat through. Stir in 1⁄4 cup milk and keep warm. Whisk together the remaining 3⁄4 cup milk, eggs, cinnamon, vanilla, and the remaining 2 tablespoons bourbon. Heat a large cast-iron skillet over medium heat. When the skillet is warm, spray with a light coating of nonstick cooking spray. Working 2 pieces at a time, dip the bread into the bourbon-egg mixture. Let soak for 30 seconds. Flip each piece over and soak the other side for 30 seconds. Add the bread to the hot skillet. Cook until golden brown on the bottom, about 3 minutes. Flip and cook for an additional 2 to 3 minutes, until both sides are golden brown and slightly crispy. Serve with the warm banana topping.

- Melt a few Tablespoons of the butter in a large skillet over medium-heat.
- In a large shallow bowl or pie plate, whisk the eggs and egg yolks until well combined.
- Add in the cinnamon, nutmeg, and both sugars, and whisk until well combined. Finally, whisk in the milk, heavy cream, vanilla extract, and rum.
- Dip each slice of brioche into the egg mixture, making sure both sides are well coated.
- Place brioche slices into skillet and cook until the undersides are golden brown, about 2 to 3 minutes.
- Flip, and continue cooking on the other side until equally golden brown, about another 2 to 3 minutes.
- Continue with all french toast, adding more butter to the pan as needed.
- In a large skillet over medium-low heat, melt the butter. Add in the brown sugar and cook, stirring with a whisk, until the sugar has melted and mixture is bubbling, about 2 minutes.
- Add in the cinnamon, heavy cream, and salt and whisk to combine. Add in the pecans and bananas and, using a rubber spatula, fold them into the liquid mixture until they're completely coated. Cook for 1 minute. Then remove from heat and stir in the vanilla and rum.
- Pour on top of the french toast and serve at once!
PEANUT BUTTER AND BANANA FRENCH TOAST

- Using 16 slices of bread, prepare 8 peanut butter and banana sandwiches by spreading 2 tbsp of peanut butter only each slice and topping with banana slices.
- In a small bowl, mix the flax seed meal and hot water together until a very thick paste forms.
- Add the flax mixture, oat milk, vanilla, and cinnamon to a bowl. Whisk until completely combined.
- Bring a skillet with about a tablespoon of vegan butter to medium heat. Once the butter sizzles, use your spatula to push it around the pan until it is evenly coated.
- Dip the sandwiches into the mixture for about 1 second so that it is coated on both sides. Don't let it stay in the mixture too long or it'll be soggy. Immediately place the coated bread into the skillet and cook for about 2 or 3 minutes (or until golden). Use your spatula to flip the bread over.
- Repeat until all of the sandwiches are fried and golden, top your peanut butter and banana vegan french toast with powdered sugar, maple syrup, and banana slices. Enjoy!
VANILLA FRENCH TOAST
This is my FAVORITE french toast recipe. Cooks up light and fluffy and so flavorful every time. Recipe found on website of Stonyfield Farms (maker of yogurt and milk). I have made this recipe with all kinds of bread and it's fabulous. . .doesn't need to be cinnamon raisin bread. I actually just made it with Hawaiian Sweet Bread this morning and it was fabulous. Also feel free to use banana or strawberry yogurt instead of vanilla. Have fun with this recipe; you won't be disappointed!
