3 (15 ounce) cans creamed corn
2 eggs
1 cup crushed saltine crackers
½ cup butter
½ teaspoon paprika
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 8x11x2 inch casserole dish.
  • In a medium sized mixing bowl, combine the creamed corn, eggs, 1/4 cup of the melted butter and 1/2 of the cracker crumbs. Pour mixture in into the prepared dish.
  • In a small bowl, mix the remaining melted butter, cracker crumbs, paprika and pepper. Sprinkle crumb topping over the casserole.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, until topping browns slightly and corn is bubbly around the edges.

I have made this recipe twice now. The first time I wasn't sure I was going to make it public, because it was such a flop. Raw, liquidy, thoroughly unappetizing looking. The second time, though, it was beautiful and tasty, so here it is. I figured out the problem. Do not put this in the wrong size dish. I made a triple batch, and cooked half that night in an 11x7" casserole and froze the other half. The second half I baked in a 9x13" dish. If you need to cook more than 6-8 servings, make it in two 9x13"s. And add extra cracker crumbs to the top - you won't be sorry! :) Holiday recipe from Once a Month Mom and her cousin, Vanderbilt Wife.

15 ounces canned corn, drained
15 ounces cream-style corn
1 1/2 cups milk
2 eggs, beaten
4 tablespoons butter, melted
1 tablespoon sugar
salt and pepper
2 cups cracker crumbs
paprika

Steps:

  • Mix together everything but the paprika and one cup crumbs.
  • TO FREEZE: Pour into a gallon sized, labeled bag and freeze.
  • TO SERVE: Thaw (if necessary), and pour into a greased 9x13" baking dish. Top with additional cup of cracker crumbs, and sprinkle lightly with paprika. Bake at 350 degrees for 30-35 minutes. When you pull, the center might still be a little wobbly, like jello, but not liquid.

1 (16 ounce) can cream-style corn
1 (16 ounce) can sweet corn
1/4 cup butter
1/2 cup onion, finely chopped
2 eggs
1 1/2 cups crushed saltine crackers
1/2 cup milk

Steps:

  • Preheat oven to 350 degrees fahrenheit.
  • Grease casserole dish.
  • Saute the chopped onion in the 1/2 stick of butter or margarine.
  • Mix corns, 1 cup of the crushed crackers, 2 eggs, and 1/2 cup milk.
  • Add the sauteed onion and butter and pour into prepared casserole dish.
  • Put remaining 1/2 cup (or more if you like!) crushed crackers and dot with butter on top.
  • Bake for 30-45 mins until top is golden brown.

1 cup milk
1 cup cracker crumb
1/2 cup chopped onion
1/2 cup green pepper
1 cup cheddar cheese (sharp cheddar is the best to use)
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • Mix all ingredients and spoon into a greased 1-quart casserole dish.
  • Bake uncovered for 35 minutes.
