CLASSIC DOUBLE CHEESEBURGERS WITH SPECIAL SAUCE

Steps:
- For the special sauce: Stir together the mayonnaise, ketchup, mustard, relish and Worcestershire in a medium bowl. Set aside.
- For the double cheeseburgers: Prepare a grill for cooking over medium-high heat.
- Divide the ground beef into 12 equal portions. Roll each portion into a ball, then flatten it into a thin, 4-inch-diameter patty. Lightly sprinkle the patties with salt and pepper. Grill on one side until about halfway cooked, about 3 minutes. Flip the patties, sprinkle the other side with salt and pepper, top each with a slice of cheese and continue to cook until the patties are cooked through and the cheese has begun to melt, 1 to 2 minutes more.
- Build each burger on a bun with 2 patties, tomato, lettuce, onion and a generous slathering of special sauce.

CREAMY ARTICHOKE PASTA

- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions for al dente.
- Meanwhile, blend the drained artichoke hearts, 1/4 cup water, 1/4 teaspoon salt and 1/4 teaspoon pepper in a high-powered blender until completely smooth. Set aside.
- Heat the olive oil in a large high-sided skillet or braiser over medium heat. Add the roasted red peppers, olives, capers and red pepper flakes and sauté until warmed through, about 2 minutes. Stir in the garlic and a drizzle of oil if needed. Continue to cook, stirring frequently, until the garlic is slightly softened but not brown, about 1 minute. Stir in the blended artichoke hearts, then reduce the heat to low.
- When the pasta is ready, reserve 1 cup of the pasta water, then drain the pasta and add it directly to the skillet with the artichoke sauce. Add about 1/2 cup of the reserved pasta water and toss together until the sauce and water become a cohesive creamy mixture, add more pasta water as needed. Turn off the heat. Add the basil and parsley, toss to combine and serve.

- Add olive oil to a non-reactive pot or Dutch oven (see recipe note) and place over MEDIUM heat. Add ground beef, onion and garlic and cook, stirring to break up the beef until crumbly and browned with no pink remaining. Drain off excess grease, if necessary. Stir tomato paste into the mixture and cook for a minute or two and then add basil, oregano, thyme, salt, pepper, fennel seed and crushed red pepper (if using). Cook, stirring, until well combined. Add whole tomatoes and all liquid from the can, breaking up the tomatoes with your hands as you add them. Add beef broth and sugar and stir to combine. Use the spoon to mash the tomato down to desired consistency.
- Increase heat to MEDIUM-HIGH and bring mixture to a boil. Reduce heat to LOW and allow to simmer, uncovered, for at least 30 minutes while you cook your pasta or for up to 2 hours to deepen the flavors.
- Taste and season with additional salt and pepper, only if needed. If the sauce is too acidic for your taste, add optional butter and allow to melt into the sauce. Let sit for 5 to 10 minutes before serving for sauce to mellow. If you've used San Marzano tomatoes, it is unlikely you'll feel the need to add the butter but it is an excellent way to balance the flavors even further if you'd like.
