Many years ago, a friend of mine bought some tomato bread at the store and served it with spinach dip. I searched high and low for a recipe and could never find one so I made my own. After many failures and starting out with tomato sauce, I finally settled on V-8 juice. Of course, when I got a bread machine, I had to re-do the recipe!! I am always asked for this recipe!! Hope you enjoy it!

Number Of Ingredients 12

1 (11 1/2 ounce) can V8 vegetable juice
1 teaspoon olive oil
3 garlic cloves, minced
3 cups bread flour
1 tablespoon brown sugar
1 teaspoon salt
1 dash pepper
1/2 teaspoon oregano
1/4 teaspoon dried basil
1/8 teaspoon dried rosemary
2 1/4 teaspoons yeast
3/4 cup sun-dried tomato, chopped to about the size of raisins

Steps:

  • In the bread machine pan, place all ingredients (except the dried tomatoes) in the order suggested by the manufacturer.
  • Use the 'basic' bread setting and'light' crust color.
  • Bake according to your machine directions.
  • When the machine beeps during the kneading cycle, add the dried tomatoes a few at a time until they are kneaded into the dough.

2 cups v 8 vegetable juice
2 tablespoons butter
3 tablespoons white sugar
1 teaspoon salt
1 teaspoon basil, scant
1 teaspoon oregano, scant
1/2 cup grated cheddar cheese
1/4 cup ketchup
1/4 cup warm water
1 (2 1/4 teaspoon) package dry yeast
7 cups all-purpose flour (may need more)

Steps:

  • Heat V-8 and butter until butter melts. Add sugar, salt, herbs, ketchup, and cheese. Cool to lukewarm.
  • Add lukewarm tomato mixture to 3 cups flour and yeast. Beat until smooth. Gradually add more flour until you have a soft workable dough. Knead 8 to 10 minutes until smooth and elastic. Place in greased bowl, let rise until doubled (1 1/2 hours).
  • Punch down and divide in half. Let rest 10 minutes, covered. Shape into loaves and place in well greased bread pans. Cover and let rise until doubled again (1 hour).
  • Bake at 350 degrees F for 25 to 35 minutes.

1 cup mayonnaise
1 cup grated cheddar cheese
2 tablespoons onions, minced
1 -2 tablespoon fresh herb (basil or parlsey, can substitute 1/4 tsp dried)
fresh ground black pepper
1 1/2 cups baking mix such as Bisquick (good clones or substitutes on Zaar)
1/2 teaspoon baking powder
1/4 cup buttermilk
1/4 cup water
4 -5 ripe tomatoes, peeled and cut into 1/2 inch slices (best if using center slices drained 10 minutes if extra juicy)
2 tablespoons parmesan cheese (I double this amount) or 2 tablespoons romano cheese (I double this amount)

Steps:

  • Preheat oven 350 degrees.
  • Thoroughly mix mayonnaise, cheddar cheese, minced onions, herbs and pepper; set aside.
  • In large mixing bowl, mix together baking mix, baking powder, buttermilk and water.
  • With floured fingers, pat mixture into the bottom and sides of a lightly greased and floured 9" pie pan.
  • Bake crust 10 minutes. Remove from oven.
  • Arrange tomato slices on top of crust to completely cover; cut smaller pieces of tomato to fill in gaps. At this point you may want to lightly salt the tomatoes.
  • Spread mayonnaise mixture over tomatoes and sprinkle with parmesan cheese.
  • Bake until biscuit is nicely browned and top is bubbly, about 30 to 40 minutes.
  • Cut into wedges and served still warm or if made ahead, briefly reheat in low oven.
  • Refrigerate leftovers.

6 tablespoons tomato paste
1 egg
2 teaspoons olive oil
1/2 teaspoon salt

1/4 teaspoon garlic powder
1/4 teaspoon grated nutmeg

2 tablespoons olive oil
1 clove garlic
1 large tomato
2 teaspoons course sea salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Split the bread in half lengthwise and place it on a baking sheet. Drizzle the cut side with the olive oil. Bake until golden brown and toasted, 5 to 8 minutes.
  • While still warm, rub the cut side of the bread halves with the garlic. Cut the tomato in half and rub it on the bread halves.
  • Sprinkle with course salt, then cut into 4 pieces.

3 tablespoons sugar
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
3/4 teaspoon dried oregano
1/2 teaspoon garlic powder

1/4 teaspoon dried rosemary, crushed
2 cups tomato or V8 juice
1/2 cup tomato sauce
2 tablespoons olive oil

  • In a large bowl, combine 3 cups flour, sugar, yeast, salt, oregano, garlic powder, basil and rosemary. In a large saucepan, heat the tomato juice, tomato sauce and oil to 120°-130°, stirring occasionally. Add the dry ingredients; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into two loaves. Place in two greased 8x4-in. loaf pans. FANTASTIC GAZPACHO!

Gazpacho just couldn't be better than this, and so easy to make! I make this recipe with half V-8 tomato juice and red ripe tomatoes from my summer's crop, you can also use just plain tomato juice, but the V-8 is much better lol! Also I use chipotle corn salsa. Use as much Tabasco as desired, for my family the more the better. This soup is so good you will want it all year around! Try to prepare this hours in advance to blend the flavors. I make my early in the morning to serve in the evening. You can even make this up to 24 hours in advance. Don't omit the cilantro and the onion is optional. I usually use roasted red bell peppers from the jar in place of fresh, but fresh will do fine! Do not use Clamato juice for this, there is not enough thickness and your soup will be too thin.
