MICROWAVE FUDGE

- Microwave 12 ounces semisweet chocolate chips and a 14-ounce can sweetened condensed milk, 5 minutes. Stir vigorously, then add 1 1/2 cups chopped nuts and 1 teaspoon vanilla extract. Spread in an 8-inch-square pan lined with buttered parchment paper. Refrigerate, then cut into squares.
FUDGE
I double the recipe and put in a glass baking dish (9x13 inches). Nice for holidays . . . Keep it for a secret and family and friends will think you worked forever on it . . . (smiles). You can also use peanut butter chips and make peanut butter fudge.

- Place chocolate chips, sweetened condensed milk, and butter or margarine in large microwaveable bowl. Zap in microwave on medium until chips are melted, about 3-5 minute, stirring once or twice during cooking. Stir in nuts, if desired.
- Pour into well-greased 8x8-inch glass baking dish. Refrigerate until set.

FUDGE
This is a fantastic fudge. This is my grandmother's recipe. Actually the French Canadian name for this recipe is sucre a la creme. It's delicious and also very rich and sweet for all you sweet lovers.

Steps:
- In pot melt butter.
- Add brown sugar and evaporated milk.
- Bring to a medium boil.
- Boil for exactly 5 minutes.
- Remove from heat.
- Add icing sugar and mix well with electric mixer (Do this fast enough because it will start to harden around the edges of the pot).
- Add walnuts.
- Pour in a 9x9 square pan.
- Cool completely before cutting into squares.

NUT FUDGE
Some 17 years ago, when I was dating the man who is now my husband, his mother gave me this recipe for his favorite fudge. It's a tasty treat that's so simple to make.

- Line a 13x9-in. pan with foil; butter the foil with 1 tablespoon butter and set aside. Break German chocolate into 1-in. pieces; place in a bowl. Add the chocolate chips and marshmallow creme; set aside., In a large saucepan, bring the sugar, milk and remaining butter to a boil over medium heat, stirring often. Reduce heat; simmer, uncovered, 6 minutes, stirring occasionally. Slowly pour over chocolate mixture; stir until mixture is smooth and blended. Stir in nuts., Pour into prepared pan. Let stand at room temperature until cool. Cut into 1-in. squares. Store in an airtight container in the refrigerator.

CHOCOLATE NUT FUDGE
I've had this recipe over 50 years, and it is still my favorite. It isn't too sweet, and best of all, no cooking! Keeps well when wrapped and placed in refrigerator. I make this for Christmas giving.

- Line an 8x8-inch baking pan with aluminum foil.
- Melt chocolate chips in a large, heavy pan over low heat, stirring constantly to avoid scorching, until melted and smooth, about 10 minutes. Stir sour cream, confectioners' sugar, and salt into the chocolate. Mix the vanilla wafer crumbs into the chocolate mixture and stir in broken walnut pieces. Spread fudge into the prepared pan, refrigerate until firm, and cut into squares.
