  • To make these chips in the dehydrator, prepare a bowl with 2 cups of water and 1/2 cup lemon juice.
  • In the oven we prepare the bananas the same as the dehydrator, letting them soak in the lemon water five minutes before placing in a single layer on a foil lined baking sheet.
  • With the air fryer I recommend using barely ripe bananas that are firm. Slice the banana thinly and soak the slices in lemon water for five minutes.

  • Sun Drying. Dehydrating bananas by sunlight is a great and natural way of preserving food. It doesn’t require a lot of equipment to get started either.
  • In the Microwave. Who knew that you could use your microwave for dehydrating foods? Well, you can! It is a quick and easy process and one that you’ll definitely be glad that you knew about.
  • Fruit Leathers. I love fruit leathers. I know most people are only familiar with the store bought kind but making your own homemade fruit leathers is super simple and healthy.
  • In the Oven. Just because you want to dehydrate bananas, doesn’t mean that you have to own a dehydrator. In fact, if you have a working oven, you can dehydrate bananas all day long.
  • Dehydrator. This is the method I use most frequently because it is so simple. If you have a dehydrator, then you know how wonderful they are. My husband built us a huge dehydrator that we use for drying fruits and making jerky on a regular basis.

  • Thinly slice the banana into coins. Combine lemon juice and water, and swish the banana slices through the mixture as they are cut.
  • Dry at 125F for 8-12 hours for chewy banana chips. Banana chips become crisper if the dehydrator temperature is at 135F, but they need to be monitored at that temperature to prevent the sugars from caramelizing.
  • Let cool naturally, and peel off the trays. Store in ziploc bags, glass jars, or vacuum sealed bags. If you are concerned about the shelf life, store in the freezer. In my experience, dried bananas have lasted in ziploc bags, in cool storage, for several years without any change in flavor or texture.
