¾ cup butter, softened
1 ½ cups sugar
3 eggs
1 teaspoon vanilla extract
½ cup milk
1 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 tablespoon cinnamon
4 apples, peeled and cut into ¼-inch (6.3mm) thick slices, recommended: granny smith or pink lady
1 cup butter, melted
1 cup brown sugar

Steps:

  • Preheat oven to 350°F (180°C) and grease a 9-inch (23cm) cake pan.
  • In a bowl, cream together the butter and sugar.
  • Whisk in the eggs, vanilla and milk until fully incorporated.
  • Add the flour, baking powder, salt, and cinnamon. Whisk until combined.
  • For the sauce, melt butter in a saucepan over medium heat, and stir in the brown sugar. Bring to a boil and continue to stir for 30 seconds, or until vigorously bubbling.
  • Pour the sauce into the greased cake pan.
  • Arrange the apples on top of the sauce in a circular pattern. Pour cake batter on top of apples and smooth the top of the batter.
  • Bake for 45-55 minutes, or until the cake is done (the top will spring back when gently poked).
  • Cool for 10-15 minutes and loosen the sides of the cake by running a butter knife around the edge.
  • Place a plate upside down on top of the pan, then invert the pan, flipping the cake onto the plate.
  • Garnish slices with vanilla ice cream or whipped cream.

3 figs (chopped)
2 tbsp honey
225 g unsalted butter (softened, plus extra for greasing)
225 g caster sugar
4 large free-range eggs (lightly beaten)
225 g self-raising flour
2 tbsp orange juice
3 tsp baking powder

Steps:

  • Preheat the oven to 160C /180C/ 350F /gas 4 and line and lightly oil a 23cm cake tin.
  • Place the sliced figs in a layer in the cake tine and drizzle on the honey.
  • Add butter and sugar in a large bowl and beat with an electric hand whisk until pale and fluffy.
  • Then gradually beat in the eggs until combined.
  • Fold in the flour and baking powder and orange juice, the chopped figs.
  • Transfer the cake batter into the prepared tin and smooth the surface.
  • Bake in the hot oven for approx. 45 mins or until a skewer inserted into the cake comes out clean.
  • Let the cake cool in the cake tin for 10 mins before carefully inverting the cake and removing the baking paper.
  • Enjoy.

Steps:

  • Heat oven to 350°F.
  • Melt 1/3 cup butter in 13x9-inch ungreased baking pan in oven. Stir in 3/4 cup brown sugar. Spread mixture evenly in pan.
  • Arrange 12 pineapple slices on top. Place cherry in center and between each pineapple slice, if desired.
  • Combine flour, baking powder and salt in bowl; set aside.
  • Combine 1 cup brown sugar and 2/3 cup butter in bowl; beat at medium speed, scraping bowl often, until creamy. Continue beating, adding 1 egg at a time, until well mixed. Stir in vanilla. Gradually add flour mixture alternately with milk, beating at low speed and scraping bowl often after each addition.
  • Gently spread batter over pineapple. Bake 35-40 minutes or until toothpick inserted in center comes out clean. Loosen sides of cake from pan by running knife around inside of pan. Invert cake onto serving platter; let stand 5 minutes. Remove pan. Cool completely.

  • Preheat oven to 350 degrees. Make the topping: Stir together butter, flour, sugar, and 1/4 teaspoon salt until moist and crumbly.
  • Make the cake: Butter a 9-inch round cake pan (2 inches deep). Dot with 4 tablespoons butter (cut into pieces). Toss rhubarb with 3/4 cup sugar; let stand for 2 minutes. Toss again, and spread in pan.

1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/2 cup (1 stick) unsalted butter, melted and divided
2 large eggs
1/2 cup brown sugar, packed
4 nectarines, sliced into 1 1/2-inch thick wedges

Steps:

  • Preheat oven to 350 degrees F. In a large bowl, combine flour, sugar, baking soda and salt. In a large glass measuring cup or another bowl, whisk together buttermilk, 4 tablespoons butter and eggs. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Add remaining 4 tablespoons butter to the bottom of a cast iron skillet or 9-inch cake pan, swirling the pan until the bottom and sides are well coated. Sprinkle brown sugar evenly over the melted butter. Arrange nectarine slices on top in a single layer. Scoop the batter evenly over the nectarines, smoothing out the top. Place into oven and bake for 45 minutes, or until a tester inserted in the center comes out clean. Let cool for 5-10 minutes. 1 head cauliflower, broken into florets
1 tablespoon olive oil, or as needed
1 pound ground beef
1 large onion, chopped
4 cups water
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon curry powder
½ teaspoon ground turmeric
2 cloves garlic, chopped
2 cups uncooked white rice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the cauliflower florets onto a baking sheet, and brush with olive oil. Bake in the preheated oven until beginning to brown, about 30 minutes. Set aside.
  • While cauliflower is baking, place ground beef and onion into a large pot over medium heat, and cook and stir until the meat is browned, about 10 minutes. Break the meat apart into crumbles as it cooks. Remove from heat.
  • In a saucepan, bring the water to a boil, and stir in the salt, black pepper, cumin, oregano, curry powder, and turmeric.
  • Mix the cooked cauliflower and garlic into the ground beef and onion in the large pot, and stir in the white rice. Pour the spiced water into the pot over the rice, and bring to a boil. Reduce heat to a simmer, and cover the pot; cook until the rice is tender and the water has absorbed, 15 to 20 minutes. Remove from heat, and allow to stand covered for 5 to 10 minutes to help dry out the rice.
  • To serve, place a large serving platter on top of the uncovered pot, and flip to turn out the contents onto the platter.

Updated in 2020, this is my favorite recipe for traditional pineapple upside down cake. For best success, read the recipe and recipe notes before beginning.

1/4 cup (60g) unsalted butter, melted
1/2 cup (100g) packed light or dark brown sugar
8-10 pineapple slices (see note)*
15-20 maraschino cherries (see note)*
1 and 1/2 cups (177g) cake flour (spoon & leveled)
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
6 Tablespoons (85g) unsalted butter, softened to room temperature
3/4 cup (150g) granulated sugar
2 large egg whites, at room temperature
1/3 cup (80g) sour cream, at room temperature
1 teaspoon pure vanilla extract
1/4 cup (60ml) pineapple juice, at room temperature (use leftover from can)
2 Tablespoons (30ml) milk, at room temperature

Steps:

  • Preheat oven to 350°F (177°C).
  • Pour 1/4 cup melted butter into an ungreased 9×2 inch pie dish or round cake pan. (Make sure the pan is 2 inches deep. I recommend this pie dish, which is 1.8 inches deep but I never have an overflow issue.) Sprinkle brown sugar evenly over butter. Blot any excess liquid off the fruit with a clean towel or paper towel. (The wetter the fruit, the more likely the cake could overflow or the topping could seep over the sides when inverted.) Arrange about 6-7 blotted pineapple slices and all the cherries on top of the brown sugar. I like to halve 3 pineapple rings and arrange them around the sides of the pan, too. See my photo and video above for a visual of the arranged topping. Place pan in the refrigerator for a few minutes as you prepare the cake batter. This helps solidify or "set" the topping's arrangement.
  • Whisk the cake flour, baking powder, baking soda, and salt together. Set aside.
  • Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on high speed until smooth and creamy, about 1 minute. Add the sugar and beat on high speed until creamed together, about 1 minute. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. On high speed, beat in the egg whites until combined, then beat in the sour cream and vanilla extract. Scrape down the sides and up the bottom of the bowl as needed. Pour the dry ingredients into the wet ingredients. Turn the mixer onto low speed and as the mixer runs, slowly pour in the pineapple juice and milk. Beat on low speed just until all of the ingredients are combined. Do not over-mix. You may need to whisk it all by hand to make sure there are no lumps at the bottom of the bowl. The batter will be slightly thick.
  • Remove topping from the refrigerator. Pour and spread cake batter evenly over topping.
  • Bake for 43-48 minutes, tenting foil on top of the cake halfway through bake time to prevent the top from over-browning before the center has a chance to fully cook. The cake is done when a toothpick inserted into the center of the cake comes out mostly clean- a couple moist crumbs are OK. Don't be alarmed if your cake takes longer or if the cake rises up and sticks to the foil. (We serve the cake upside down anyway!)
  • Remove cake from the oven and cool on a wire rack for just 20 minutes. Invert the slightly cooled cake onto a cake stand or serving plate. Some of the juices from the topping will seep over the sides- that's ok. You can slice and serve the cake warm, but the slices will be messy. I find it's best to cool the cake completely at room temperature before slicing and serving. Do not refrigerate the cake to speed up the cooling process because it could end up tasting overly dense.
  • Cover leftover slices and store for up to 3 days in the refrigerator or 3 months in the freezer. Thaw at room temperature. I don't recommend freezing the cake as a whole because the topping arrangement doesn't thaw very nicely. See make ahead instructions below.

1 box yellow cake mix, 2-layer size, or white cake

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Pour the melted butter or oil into a 9x13x2-inch baking pan or divide the butter between two (8-inch) round cake pans.
  • Sprinkle brown sugar evenly in the pan(s).
  • Drain the peaches, reserving the syrup.
  • Arrange the sliced peaches and some maraschino cherry halves, if using, over the brown sugar.
  • Add enough water to the reserved peach syrup to make 1 1/3 cups of liquid. Add this liquid to a medium bowl, along with the eggs and the cake mix.
  • Beat as directed on the cake mix package. Pour the batter over the fruit.
  • Bake in the preheated oven for 40 to 50 minutes or until the cake pulls away from the sides of the pan. Let stand in the pan for 5 minutes and then turn upside down onto a cake dish or large platter. Serve warm with whipped cream. Enjoy!
