PINEAPPLE CAKE WITH COCONUT FROSTING
A rich white cake full of pineapple flavor and a hint of coconut.

- Preheat the oven to 350°F. Grease and flour (2) 8-inch or 9-inch round pans. Place the pineapple chunks in a blender or food processor and puree until smooth, without any chunks. In a large mixing bowl, beat the eggs and the sugar until smooth. Stir in the coconut milk, melted butter, and vanilla. Add the flour, baking powder, and salt, stir to combine. Add 1 cup of the pureed pineapple and stir once more.
- Divide the batter between the prepared pans. Bake 35-38 minutes, until a toothpick inserted in the center of the cake comes out clean. Let cool in the pans for 15 minutes, before inverting the cakes over a wire rack. Let the cakes cool completely.
- Place the cream cheese in a large mixing bowl and beat with an electric mixer until smooth. Add half the powdered sugar and beat to combine. Add the remaining sugar and beat again. Add the coconut milk and the vanilla, beat to combine and then taste the frosting. Adjust the sugar as desired, and add a tiny splash of rum, if you would like.
- Place one layer of the cake on a plate, top with 1/3 of the frosting, smoothing it gently across the cake, almost to the edge. Gently place the second cake over the frosting layer. (I like to place the first cake upright and then flip the second cake over, so that the tops are facing in and the bottom is on top providing a nice flat layer.) Scoop the remaining frosting onto the top cake and gently spread it across the cake. Sprinkle with coconut, if desired, and chill in the refrigerator until ready to serve. Enjoy!

ROASTED PINEAPPLE
This Roasted Pineapple dish is one of the simplest, most delicious ways to eat pineapple. It's shockingly good. Since the fruit is cooked, it's safe from mischief causing microbes making it a perfect treat for pineapple lovers on chemo. We use a little melted butter to bake the pineapple, but if you want to avoid dairy or prefer to eat vegan, brush the wedges with the same amount of melted coconut oil instead.

- Preheat the oven 400 degrees. Line a baking sheet with parchment paper.
- Lay the pineapple on its side and slice off the top and the bottom. Stand the pineapple upright and trim off the rind. Try to get as much of the 'eyes' off as possible. Slice the pineapple in half, then into quarters. Lay a quarter on the cutting board and slice out the tough core. Repeat with all the quarters.
- Slice each wedge in half and place on the prepared baking sheet. Brush each wedge with half the melted butter or coconut oil and sprinkle evenly with 2 tablespoons of sugar. Roast for 15 minutes.
- Flip the pineapple wedges and brush with the remaining butter or oil and roast for another 15 minutes.
- Serve warm or at room temperature.

- Generously grease and flour* a 12-cup Bundt cake pan. Pour melted butter in the bottom of pan and crumble the brown sugar over it. Arrange the pineapple pieces upright (rounded side down) in the bottom of the Bundt pan (over the butter and brown sugar), pressing them down lightly. Place a cherry between each pineapple slice, pressing down lightly. Set aside. In a mixing bowl, whisk together the flour, cornstarch, baking powder, and salt; set aside. Preheat oven to 350 F. In a separate large mixing bowl, and using a hand mixer, cream the butter until fluffy. Slowly beat in the sugar while the mixer is running on low speed. After all the sugar has been blended, increase mixer speed to medium and beat until fluffy. Beat in the oil, scraping down the sides of the bowl with a rubber spatula. Add the vanilla. Beat in the eggs, one at a time, beating well after each addition. Using low speed, add the flour mixture alternately with the milk in three additions, beginning and ending with flour mixture, beating just until each addition is incorporated. Do not overmix. Pour the batter into the pan on top of the pineapple and cherries. Bake at 350 degrees for 30 minutes, then reduce oven temperature to 325 and continue baking about 20 additional minutes, or until center tests done with a wooden toothpick. Remove cake from the oven and cool in pan on a wire cooling rack for 10 minutes. Loosen edges of cake from the pan with a thin bladed paring knife then carefully invert cake onto a serving plate. Cool completely on the wire rack. Serve with or without whipped cream or whipped topping. *NOTE* I used a homemade cake pan release instead of greasing and flouring. Simply mix together equal parts of melted and slightly cooled vegetable shortening, vegetable oil, and all-purpose flour. Generously brush the inside of cake pan with the mixture. (I mixed 2 Tbls. each and had plenty to brush over the pan twice).

- Combine cake ingredients; cake mix, room temperature butter and the Mandarin oranges including the juice; beat with a mixer on medium speed.

- Line 2 baking sheets with parchment and position a rack on top of one. Set aside.
- Crumble the cake in a large bowl. Add the coconut flakes, frosting, pineapple juice and coconut extract and mix with your hands until fully combined and smooth.
- Using damp hands or gloves, scoop out 3 tablespoons of the mixture and form into a compact egg shape (about 2 inches tall by 1 1/2 inches wide). Transfer to the rack on the baking sheet, standing it upright. Repeat until you have 10 eggs total.
- Add 10 ounces of the candy melting wafers and 5 teaspoons of the coconut oil to a medium microwave-safe liquid measuring cup. Microwave in 30-second intervals, stirring in between each, until the melting wafers and coconut oil are melted and the mixture is smooth, about 3 minutes.
- Pour the mixture over the cake truffles to coat completely. As soon as the coating has just set, dip a small offset spatula in hot water, wipe clean and slide under each truffle to release. Transfer to the lined baking sheet. Set aside in the freezer while you proceed.
- Add 4 ounces candy melting wafers and 3/4 teaspoon coconut oil to a small microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until the melting wafers and coconut oil are melted and the mixture is smooth, about 2 minutes. Transfer to a small piping bag fitted with a small round tip.
- Lay the truffles on their sides with the bottoms facing you. Pipe the candy mixture in a diagonal crosshatch pattern on the top of each truffle. By the time you finish piping the last one, the first one should be dry. Flip over and pipe a crosshatch on the other side. Stand each truffle upright and put in the freezer.
- Cut the green licorice twists into batons about 1 3/4 inches long. Peel each string, leaving the base intact, so they look like fronds.
- Add the remaining 2 ounces candy melting wafers and 1/4 teaspoon coconut oil to a small microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until the melting wafers and coconut oil are melted and the mixture is smooth, about 1 minute. Dip the fronds into the melted candy and place on top of the pineapple truffles. Freeze until set, about 2 minutes.
