EASY LASAGNA I
A super easy and fast beef lasagna recipe. It is made with a prepared sauce, and requires no boiling of the noodles.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
- In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
- Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.
- Bake in preheated oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.

- In a saucepan, combine beef sauce, tomato paste and basil. Bring to a boil; reduce heat. Cover and simmer for 5 minutes. Combine cottage cheese and egg; mix well. , Spoon a third of the meat sauce into a greased 13x9-in. baking dish. Layer with 3 noodles, half of the cottage cheese mixture and a third of the mozzarella cheese. Repeat layers. Top with remaining meat sauce and mozzarella. , Cover and bake at 350° for 30 minutes. Uncover; sprinkle with Parmesan cheese. Bake 5-10 minutes longer or until bubbly and the cheese is melted. Let stand 10 minutes before serving.

I always loved my mom's lasagna growing up, and when I got her recipe I was shocked to see how easy it is to make! Yay for me, I like it easy. (My husband likes it with his mom's spaghetti sauce. It's a great recipe and it's called "Lynda's Spaghetti Sauce")

- Bring to a boil.
- In 11"x7" baking dish, layer hot sauce, uncooked noodles, cottage cheese, then mozzarella.
- Repeat layers, ending with sauce.
- Cover tightly with foil.
- Bake 1 hour at 375 degrees.
- Let stand 10 minutes before cutting.
- Garnish with Parmesan.

UNIQUE LASAGNA
I found this recipe in Conveniently Vegan by Debra Wasserman. I made it for Christmas Eve dinner. It's a wonderful vegan alternative that doesn't involve tofu. This dish involves using several different pots and pans but is well worth the effort. I made it the day before then baked it. It worked out well. I wrote the recipe exactly as it appears in the book. I used a little almond milk and earth balance in the potatoes to make them creamier and more spreadable. I also used fresh spinach instead of frozen. I also used Italian seasoning on the potato layer and on the top.

- Cook Noodles in 4 quarts of boiling water in a large pot for 10 minutes until tender. Drain.
- Meanwhile, cook potatoes in 4 c boiling water in a medium-size pot for 15 minutes. Drain and mash potatoes.
- Cook spinach in 1/2 c water in a small pot over medium heat. Drain off any excess liquid.
- Saute mushrooms in oil in a large frying pan over medium heat for 5 minutes.
- Preheat oven to 375. In a 13x9x2 pan place the following layers: 1/2 cooked noodles, 1/2 mashed potatoes, all of the cooked spinach, 1/2 pasta sauce, remaining cooked noodles, remaining mashed potatoes, all the saugeed mushrooms, and the ramaining pasta sauce.
- Bake 30 minutes and serve hot.
