1 ¾ cup (210 g) all-purpose flour
2 cups (400 g) granulated sugar
¾ cup (90 g) unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup (240 g) buttermilk, (room temperature)
2 large eggs, (at room temperature)
2 teaspoons vanilla extract
½ cup (112 g) vegetable oil
2 teaspoons baking soda
1 cup (237 g) freshly brewed coffee

Steps:

Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl and mix until combined.
In another bowl, combine the buttermilk, oil, eggs, and vanilla.
With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula.
Pour the batter into two 8-inch round prepared pans and bake for 30-40 minutes at 350°F, until a cake tester or toothpick comes out mostly clean (not wet).
Cool in the pans for about 10 minutes, then turn them out onto a cooling rack and cool completely.

I got this recipe from my aunt many years ago. It is the best, most unique tasting cake ever. All of my friends rave about it and request it.

Ingredients

1 cup butter
½ cup shortening
3 cups white sugar
5 eggs
3 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
½ cup milk
½ cup evaporated milk
1 teaspoon rum flavored extract
1 teaspoon coconut extract
1 cup white sugar
1 teaspoon rum flavored extract
1 teaspoon coconut extract
1 teaspoon almond extract
½ cup water

Steps:

Preheat oven to 325 degrees F (165 degrees C). Grease a 10 inch tube pan and line with parchment paper. Grease the parchment paper. Sift flour, salt and baking powder together and set aside.
In a large bowl, cream butter, shortening and 3 cups sugar until light and fluffy. Add eggs one at a time, beating well after each. Add 1 teaspoon rum extract and 1 teaspoon coconut extract. Add flour mixture alternately with milk and evaporated milk. Mix until smooth.
Pour batter into 10 inch tube pan. Bake at 325 degrees F (165 degrees C) for 1 hour and 15 minutes, or until a toothpick inserted into cake comes out clean. Cool.
Make the glaze: in a saucepan, combine 1 cup sugar, 1/2 cup water, 1 teaspoon rum extract, 1 teaspoon coconut extract and 1 teaspoon almond extract. Bring to a boil, stirring constantly. Use a toothpick to pierce all over the top of the cake. Pour the glaze over the cooled cake and allow it to soak in.

100 g whole wheat flour
100 g plain flour
60 g wheat bran, unprocessed
40 g sugar
5 g baking powder
1 1/2 teaspoons cardamom
2 teaspoons cinnamon
1 teaspoon ground nutmeg
1 1/2 cups water

Steps:

Blend all the dry ingredients together.
Add water until you get a nice batter (not too dry or too liquid).
Bake in oven for about 30-40 mins at 130-150 degrees celsius.
