UNSTICKY WHITE RICE
Is your white rice sticky? It doesn't need to be. The whole secret is in rinsing it many times in cold water to get as much starch out of it as you can before boiling it. Then you have nice fluffy rice that is all separate. It took me many years to figure that one out. It never fails.

- Put the rice in a sieve and rinse many times with cold water till the water looks clear that drips from the bottom.
- When it looks pretty clear, put it with the 2 1/4 cups water, and the salt, and cook it, covered, till done.
- NOTE: The milky water that you will see is the starch that comes off the rice and it is the starch that makes it sticky.

UNSTICKY RICE

- Heat water to boiling on the stovetop. Meanwhile, heat the oil over medium high heat in a non-stick pan. Add the rice and sauté until the rice begins to turn a solid white color. Your water should be to the boiling point (or near it) by the time you are done sautéing the rice. Add 2 cups boiling water to the rice. Cover the pan and decrease the heat to medium low. Simmer for 20 minutes. Don't forget to set the timer! Remove from heat. Makes 2 cups cooked rice.VARIATIONS: You can also sauté any variety of vegetables with the rice. A very traditional pilaf would have onion, bell pepper and celery sautéed with the rice, which would then be cooked in chicken broth instead of water. Vegetables that get soggy would be added toward the end of the cooking time (at about 15 minutes). Curry and green onion is another traditional pilaf.

- In a saucepan with a good fitting lid bring water, salt and optional ingredients if desired to a boil. The salt and butter are simply for flavor. The vinegar keeps your grains separated and gives you a prettier dish. No one will taste the vinegar at all!
- Add rice and stir.
- Cover and reduce heat to low. You will know that your temperature is correct if a little steam is visible leaking from the lid. A lot of steam means your heat is too high.
- Cook for 20 minutes.
- DO NOT LIFT LID!
- The steam that is trapped inside the pan is what allows the rice to cook properly.
- Remove from heat and fluff with fork.
- Serve!

- Begin rinsing the rice 1/2 hour before you are ready to start cooking it. Place the rice in a large fine sieve. Run under cold water, shaking the grains, until the water runs clear.
- Drain well and place in large bowl. Fill the bowl with cold water over the level of the rice. Let stand for 30 minutes.
- Pre-heat the oven to 350°F.
- Add the water to a Dutch oven and sprinkle with a little of the salt. Bring the water to a boil. Drain the rice and add the additional water to the pot.
- Stir in the rice all at once and stir one time. Bring back to a boil and cook about 7 minutes, or until rice is soft to the bite. Drain and return to pot.
- In a small bowl, dissolve the remaining salt in hot water. Add the oil to the salt water and mix well. Add this mixture to the rice, using a back and forth motion, until the rice is covered.
- Add the cumin seeds and cardamom.
- Using a wide, flat wooden spoon, mix by lifting a section of the rice and shaking back into the pot. Repeat until the whole mixture is covered with oil and the spices have been well mixed throughout the rice.
- Bring the rice into a slight mound in the middle of the pot. With the spoon handle, make 4 holes around the outer edge of the mound, and one in the center. The rice needs these holes for ventilation.
- Place the tight fitting lid on the pot and place in oven. Bake for 30 minutes. Turn off the oven and let the rice sit inside the cooling oven for 20-30 minutes.
- Uncover and mix as you did previously, by shaking sections of the rice back into the pot until the grains are separated.

- You will need a small pot with a lid. A capacity of 1 to 3 quarts is good.
- Bring the water to a strong boil at highest temperature.
- Add the rice to the boiling water. Swirl the rice once with a spoon so that it covers the bottom of the pot uniformly.
- Watch the rice boil until you see the bubbles form a pock-marked pattern with its vigorous boiling. This takes 1 to 2 minutes.
- Lower the heat to simmer. About 2.5 out of 10 on the dial is about right on my stove. Your stove may need to be set slightly higher or lower. You want the heat to be high enough so that steam is always being formed in the pot, but not so hot that the rice scorches on the bottom of the pot.
- When the boiling dies down a bit, cover the pot and set the timer to 20 minutes.
- Remove the lid of the pot, and your rice is done. For your first batch, test the rice with a fork and give it a taste test. It should be fluffy and tender.
- (The texture of fried rice benefits from a firmer rice kernel. Use 1 1/2 cups of water instead of 1 2/3 cups of water to achieve this texture. When it is done, leave the lid off the pot and allow the rice to cool. Then use the cooled rice in your fried rice recipe. The cooling is optional.).
