1 cup coarsely crushed corn flakes
1 Tbsp. flour
1 tsp. seasoned salt
1 egg white
1 Tbsp. water
6 pieces bone-in chicken, such as breasts, thighs and legs, skin removed

Steps:

  • Preheat oven to 400°F. Combine cereal, flour and seasoned salt in shallow dish or pie plate. Beat egg white with water in separate shallow bowl. Dip meaty side of each chicken piece in egg white mixture, then in cereal mixture.
  • Place chicken, coated sides up, on baking sheet; spray lightly with cooking spray.
  • Bake 40 min. or until chicken is golden brown and cooked through (180ºF).

2 teaspoons salt
½ teaspoon ground black pepper
½ teaspoon paprika

8 skinless chicken thighs
1 cup corn oil, or as needed

Steps:

  • Combine flour, salt, pepper, paprika, and garlic powder in a large resealable plastic bag; mix well.
  • Pat chicken thighs dry with paper towels. Add to the flour mixture in the plastic bag; shake until thoroughly coated.
  • Heat oil in a large, deep skillet to 350 degrees F (175 degrees C). Add chicken thighs and cover skillet with a spatter guard. Cook, turning occasionally, until chicken thighs are a deep golden brown, about 20 minutes. Drain on a plate lined with paper towels.

Recipe for oven-fried chicken thighs that taste just like pan-fried or even deep-fried, but without all the greasy mess and a boatload of extra calories and added cholesterol.

10 bone-in, skin-on chicken thighs ((about 3 lbs, trimmed))
1 Tbsp BAKING POWDER ((do NOT use baking soda, it's NOT the same))
2 tsp kosher salt ((plus more to taste))
2 tsp sweet paprika
1 tsp black pepper
3 Tbsp Buffalo wing sauce ((plus more to taste; see notes))

Steps:

  • Preheat oven to 450F
  • Dry chicken thighs with paper towels really well. Try getting them as dry as possible. Sprinkle on salt, paprika, pepper and baking powder and gently rub with your hands all over, ensuring even coverage. (See note).
  • Lay the chicken thighs on the coking rack, leaving a little space between the pieces. You may want to spray the cooling rack with PAM or rub it with some oil to minimize sticking.Note: you can skip using a cooling rack, but that will result in the bottoms of the chicken thighs becoming a little greasy. In that case, place the thighs on paper towels after baking to remove the grease.
  • Transfer the thighs to a large baking sheet lined with aluminum foil and/or parchment paper. Either is optional, or course, but makes cleaning much easier.
  • Place the baking sheet in the oven. Switch the oven to 425F convection. This is very important. You must use convection to get the same crispiness.
  • Bake for 30 minutes for moderate crispiness and supreme juiciness.Bake for 35 - 40 minutes for ultimate crispiness and fall-off-the bone tenderness, with perhaps a tiny bit reduced juiciness.
  • Remove the thighs from the oven and let rest for 5 minutes. This will ensure that the skin on the thighs retains much of its crispiness after tossing in Buffalo wing sauce.
  • Toss the thighs in Buffalo wing sauce, or any other sauce, or a combination of hot wing and BBQ sauce and serve. Alternatively, serve with a dipping sauce on the side.

1 tablespoon hot sauce, such as Louisiana Hot Sauce
4 boneless, skinless chicken breasts, cut in half
Kosher salt and black pepper
1 1/2 cups multi-grain panko breadcrumbs
3 tablespoons grated Parmesan
1 lemon, quartered, plus 1 tablespoon lemon zest
1 teaspoon red pepper flakes

Steps:

  • Combine the buttermilk and hot sauce in a shallow bowl. Season the chicken with salt and black pepper and submerge in the buttermilk mixture.
  • Combine the breadcrumbs, Parmesan, lemon zest, red pepper flakes and a pinch each of salt and black pepper in a shallow dish. Remove the chicken from the buttermilk mixture, letting the excess drip off, and dredge in the breadcrumb mixture until evenly coated. Lay the pieces flat on a nonstick baking sheet and refrigerate, uncovered, for 30 minutes.
  • Preheat the oven to 400 degrees F. Bake the chicken until just cooked through, 20 to 25 minutes. Divide the chicken among 4 plates and squeeze the lemon over the chicken.

1 teaspoon hot sauce
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons kosher salt
One 3 1/2- to 4-pound whole chicken, cut into 10 pieces
2 cups panko breadcrumbs
1 teaspoon paprika
1/2 teaspoon cayenne
Freshly ground black pepper
Nonstick cooking spray

Steps:

  • In a large bowl, stir together the buttermilk, hot sauce and 1 teaspoon each of the garlic powder, onion powder and salt. Add the chicken and toss to coat. Refrigerate for at least 1 hour and up to overnight.
  • Preheat the oven to 425 degrees F.
  • Put the breadcrumbs, paprika, cayenne and the remaining teaspoon garlic powder, onion powder and salt in a large resealable plastic bag; shake to combine. Remove the chicken from the brine and add it to the bag. Seal the bag and shake vigorously to coat the chicken.
  • Line a baking sheet with a rack and spray well with nonstick spray. Arrange the chicken on the rack, skin-side up, and spray the chicken very generously.
  • Bake until the chicken is golden brown and cooked through, about 40 minutes.

2 cups buttermilk
1 tablespoon hot pepper sauce
4 skinless, boneless chicken breast halves, cut into bite-size pieces
2 ½ cups panko bread crumbs
6 tablespoons grated Parmesan cheese
1 tablespoon onion powder
2 teaspoons garlic powder
1 teaspoon ground black pepper
1 teaspoon cayenne pepper

Steps:

  • Stir buttermilk and hot sauce together in a bowl; add chicken and stir to coat. Marinate chicken in refrigerator at least 1 hour.
  • Lightly grease a baking sheet.
  • Mix panko bread crumbs, Parmesan cheese, onion powder, garlic powder, cayenne pepper, and paprika in large shallow bowl.
  • Remove chicken from marinade, shaking pieces to remove excess moisture. Discard the remaining marinade.
  • Gently press chicken pieces into the panko mixture to coat. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Arrange breaded chicken onto prepared baking sheet.
  • Refrigerate breaded chicken at least 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Lightly coat chicken pieces with cooking spray.
  • Bake chicken in preheated oven until browning on top, 15 to 20 minutes. Flip pieces and continue baking until the chicken is cooked through and the coating is crisp, 15 to 20 minutes more.

These crispy fried chicken thighs have a golden and crunchy breading and a juicy flavorful center. This easy chicken recipe will become a family favorite!

1 pint Buttermilk
1 teaspoon salt
2 teaspoon dried garlic
1 teaspoon dried onion
1/2 teaspoon black pepper
1/2 cayenne pepper
1 teaspoon paprika
3 pounds bone-in, skin-on chicken thighs
2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon paprika
Corn oil for frying

Steps:

  • Rinse and pat the chicken thighs dry with a paper towel.
  • In a large bowl add the buttermilk, salt, dried garlic, dried onion, black pepper, cayenne pepper, and paprika. Then give it a good whisk.
  • Now place the chicken thighs into the buttermilk marinade and submerged them for about 30 minutes and up to 4 hours (the longer, the better).
  • Meanwhile make the flour dredge by combing all-purpose flour, salt, pepper, and paprika in a large bowl.
  • Now dredge the chicken thighs into the flour mixture and place them on a baking sheet to rest for about 30 minutes. This will give an adequate amount of time for the flour coating to adhere to the chicken thighs.
  • Now bring a few inches of corn oil in a heavy-bottomed pot to medium heat (350 degrees F). Now fry the chicken thighs until golden brown on both sides. Then place them on a wire rack with a baking sheet beneath.
  • Now finish the chicken thighs in the oven at 380 degrees for 40 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit. I highly recommend checking for doneness with a meat thermometer.

6 skinless chicken drumsticks
6 skinless chicken breast halves
3 1/2 cups ice water
1 cup plain nonfat yogurt
vegetable oil cooking spray
1 cup dried Italian breadcrumbs
1 cup all-purpose flour
1 tablespoon Old Bay Seasoning
1/2 teaspoon garlic powder
1/2 teaspoon thyme
1/2 teaspoon basil
1/2 teaspoon oregano
1/8 teaspoon black pepper

Steps:

  • Preheat oven to 400°F.
  • Remove skin from chicken pieces.
  • Place all chicken pieces in a large bowl with the ice water.
  • Put yogurt in a medium bowl; set aside.
  • Spray a baking sheet with vegetable oil.
  • Combine all breading ingredients in a large, tight-sealing bag.
  • Shake to mix.
  • Remove two pieces of the chicken from the ice water.
  • Roll each piece in yogurt.
  • Put chicken in plastic bag with the breading mix.

  • Repeat with remaining chicken pieces.
  • Spray chicken lightly with vegetable oil.

6 chicken thighs, with bone in, skin removed
1/2 cup flour (I used wheat, but you can use what you like)
2 tablespoons chili powder
3/4 cup fat free ranch dressing (or use light)
3/4 cup Italian seasoned breadcrumbs
1/2 cup corn flakes, crushed
1/4 cup parmesan cheese, grated
1 tablespoon garlic powder

Steps:

  • Preheat the oven to 375.
  • Remove the skin from your chicken thighs.
  • You will need 3 bowls or dishes.
  • In the first bowl add and mix the flour and chili powder. Dredge the chicken in the flour and chili powder mixture.
  • Then in the second bowl dip the chicken in the ranch dressing.
  • Add together the bread crumbs, corn flakes, parm cheese and garlic powder in the third bowl.
  • Dip each chicken in bread crumb mixture.
  • Place chicken on foil lined baking sheet.
  • Cook for 40-45 minutes.
  • These are so good and crispy!
