HOLIDAY FRUITCAKE
This is my own fruitcake recipe and it's a family favorite. The mixture of fruits and nuts helps make it a tasty treat. -Allene Spence, Delbarton, West Virginia

Steps:
- Preheat oven to 300°. Combine fruit and nuts. In another bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder and salt; add to creamed mixture and mix well. Pour over fruit and nuts; stir to coat. , Transfer to a greased and floured 10-in. tube pan. Bake until a toothpick inserted in center comes out clean, about 2 hours. Cool 10 minutes; remove from pan to a wire rack to cool completely. Wrap tightly and store in a cool place. Bring to room temperature before serving; slice with a serrated knife.

- Line a 9x5-in. loaf pan with waxed paper; coat the paper with cooking spray; set aside. In a saucepan, combine milk and orange juice concentrate. Add marshmallows; cook and stir until marshmallows are melted and mixture is smooth. Remove from the heat. Stir in remaining ingredients; mix well. Pat into prepared pan. Cover and refrigerate for at least 8 hours.

Steps:
- Crush the graham crackers into fine crumbs.
- Granmama's recipe calls for "puffed" raisins. To puff them, soak in hot water for 30 minutes.
- Chop the nuts; drain and cut cherries in half (if they are whole).
- Melt marshmallows in milk.
- Mix all ingredients together.
- Pack into regular sized loaf pan.
- Refrigerated overnight and cut with a hot knife.
- Coconut is an optional ingredient.
- Cook time is refrigeration time.

1950'S UNCOOKED FRUIT CAKE'
This is an old recipe and some adaptations might have to be made to match modern packaging. The finished product may be packed into loaf pans or rolled into logs in waxed paper to make for easier serving. Graham Cracker may also be used.

- Warm the opened can of Sweetened Condensed Milk in a saucepan of boiling water to make it easier to pour. Add the milk to the Melted Butter and Marshmallows stirring to combine well. Combine the wet mixture with the remaining ingredients. Pack into a buttered dish or pan. Let set overnight. Keep in refrigerator. If too dry add more condensed milk.

- Melt marshmallows in top of a double boiler with butter and 3 T of reserved cherry juice. Stir as it melts. In large mixing bowl, put pecans, dates, raisins, cherries, orange peel and Graham Cracker crumbs. Pour melted marshmallow mixture over and mix with hands until it sticks together. Place in container and firmly press together. Cover and keep in refrigerator.

- Process all cake ingredients together in a food processor into a sticky uniform mixture (it should have a bit of a crumb to it — careful not to over-process into a paste).
- Line a small bread loaf (or a dish of a similar size — the one I used here is roughly 4″ x 6″) with parchment paper. Transfer the prepared cake mixture into the pan and press down with the back of a spoon so that it molds to the shape of the pan. - When ready to serve, remove from pan, dust with coconut milk, drizzle with caramel syrup, and garnish to your liking. Thaw out on the counter slightly (10 mins or so), slice and serve. Store leftovers in the freezer.
