UNCLE BILL'S FRENCH MUSHROOM SOUP

Uncle Bill's French Mushroom Soup image

The original recipe appeared on Mushrooms Canada website. I made some changes to enhance the soup. This is easy to make and has a very pleasant mushroom flavor.

Categories     Onions

Time 42m

Yield 8 serving(s)

Number Of Ingredients 14

10 ounces fresh button mushrooms, thinly sliced
6 ounces fresh cremini mushrooms, thinly sliced
1/4 cup butter
1/3 cup all-purpose flour
4 cups chicken broth
3 cups water
3 tablespoons chicken soup base or 3 chicken bouillon cubes
1/2 teaspoon dried thyme leaves
1 large bay leaf
1/4 cup scallion, finely chopped
2 large egg yolks
1/2 cup whipping cream, 35%
1/2 teaspoon white pepper
4 tablespoons minced fresh parsley (to garnish)

Steps:

  • Rinse both mushrooms in cold water and immediately pat dry with paper towels.
  • Cut mushrooms into quarters and then slice thinly, 1/8 inch thick.
  • In a large heavy bottom soup pot, melt butter on medium heat.
  • Add mushrooms and saute for 5 to 6 minutes or until liquid from the mushrooms has mostly evaporated.
  • Sprinkle flour over mushrooms and cook for 1 minute, stirring often.
  • Gradually stir in chicken broth, water and chicken soup base and bring to boil, about 5 minutes, stirring often so the bottom does not burn.
  • Add thyme, bay leaf and green onions.
  • Reduce heat, cover and simmer for 20 minutes.
  • Remove bay leaf and discard.
  • In a mixing bowl, whisk together egg yolks and whipping cream.
  • Slowly add 1 cup of hot broth mixture from the soup pot to the egg/cream mixture, whisking constantly until incorporated. This prevents the egg yolks from cooking.
  • Return mixture to the soup pot, adding slowly and whisking all the time while adding.
  • Heat over low heat until hot, about 5 minutes.
  • Add white pepper to taste.
  • Serve soup sprinkled with minced parsley.

THE BEST FRENCH ONION SOUP

The Best French Onion Soup image

This bistro classic is deceptively easy to make. It just takes a little time and a few good ingredients. We found that yellow onions, also known as Spanish onions, work best for this recipe. They have a nice balance of sweetness and bitterness and caramelize perfectly. Just don't take them too dark -- a nice golden brown is perfect. Good beef broth also makes a big difference. If you can't make your own, look for a high-quality prepared variety.

Time 1h55m

Yield 8 servings

Number Of Ingredients 9

6 tablespoons unsalted butter
8 medium yellow onions, thinly sliced (see Cook's Note)
3 bay leaves
3 to 4 sprigs fresh thyme
Kosher salt and freshly ground black pepper
2 cups dry white wine
8 cups low-sodium beef broth
8 slices French-style baguette (about the size of the top of the soup crocks)
4 cups coarsely shredded Gruyere (about 2 pounds)

Steps:

  • Melt the butter in a very large Dutch oven or pot over medium heat. Add the onions, bay leaves, thyme, 1 teaspoon salt, and a few grinds black pepper. Cook, stirring occasionally, until the onions are very soft and light golden-brown, about 1 hour. (The onions will begin to stick to the bottom of the pan and turn brown after about 30 minutes; just keep scraping them up and stirring them into the rest of the onions. If they are browning to quickly, lower the heat.)
  • Add the wine to the pot, bring to a simmer and cook until it has almost completely evaporated, about 4 minutes. Add the beef broth and 1 cup of water, bring to a simmer and cook until the flavors come together and the soup is rich, about 45 minutes. Remove the bay leaves. Season with 1/2 teaspoon salt and a few grinds of black pepper. Keep the soup warm on a low burner or cool completely and refrigerate to reheat later. (The soup can be refrigerated for up to 2 days or frozen for up to 1 month.)
  • Preheat the broiler. Place four soup crocks on a rimmed baking sheet and fill them about 3/4 of the way with hot soup. Float a slice of baguette on top of each and cover with 1/2 cup Gruyere. Broil until the Gruyere is golden brown (don't be alarmed if some soup bubbles out), 2 to 3 minutes.

Time 7m

Yield 4 serving(s)

Number Of Ingredients 8

4 tablespoons dry onion soup mix (Liptons)
3 cups water
2 teaspoons instant beef bouillon
1 lb finely sliced deli roast beef or 1 lb of your own cooked beef
4 large italian buns or 4 large portuguese buns
2 tablespoons butter
2 tablespoons horseradish, freshly processed (or more)
salt and pepper

Steps:

  • Process dry onion soup mix in a coffee grinder until fine.
  • In a one quart microwave safe casserole dish or glass measure, add water, instant beef bouillon and dry onion soup mix.
  • Microwave on HIGH (full power) for 4 to 5 minutes until mixture has fully dissolved, stirring at least once.
  • Remove, cover and set aside to keep hot.
  • If you are using your own cooked roast beef, use an adjustable mandoline set on very thin, slice the amount of meat as required. You may also use a very sharp knife to slice the meat very thin.
  • If you desire the meat warm, place the thinly sliced meat on a micro-safe plate, cover with a paper towel and microwave on MEDIUM-HIGH for 1 to 2 minutes or until meat is just warm.
  • Cut buns partialy through lengthwise, leaving a hinge.
  • Butter each piece and spread some horseradish over each half.
  • Layer warmed sliced beef into buns; about 1/4 pound for each bun.
  • Salt and pepper to taste.
  • Close sandwich bun and place on individual plates and cut sandwich in half.
  • Pour beef broth mixture into individual small bowls.
  • Dip sandwich into beef broth mixture and enjoy.
