Steps:
- Spread uncooked rice evenly in pan. Set asidespice envelope. Put olives over rice, then mushrooms, then onions, then green peppers, then tomatoes with juices, then chicken if desired, then cheese cubes. Pour melted margerine over all. Spread spice mixture over all. Cook for 1 hour. Glass pan: 325 degrees and metal 350 degrees (9 by 13 pan).

Steps:
- Combine all of the spices in a medium saucepan and mix thoroughly.
- Add the both types of rice, the chicken stock and butter (if using).
- Bring mixture to a boil and stir to combine.
- Cover saucepan with a lid, turn down heat to a simmer and simmer gently for 10-15 minutes until all the liquid is absorbed.
E Z COMPANY CHICKEN CASSEROLE WITH UNCLE BEN'S
When I had my last child in '94, a friend made a chicken casserole using Uncle Ben's Long Grain Wild Rice with Herb Seasonings. Although I didnt get her recipe, I created one similar and so we enjoy thise easy recipe at least once a month.

Steps:
- 1. In a 11 X 8 casserole dish, spray with Pam. Sprinkle the Wild Rice evenly in the dish. Mix together the can of cream of chicken soup, water, and herb seasonings packet in medium size bowl. Spoon 3/4ths of soup mixture evenly over wild rice. Place the 4 chicken breasts in the casserole on top of the rice and soup mixture. Spoon the rest of the soup mixture on top of the chicken breasts.. Next, sprinkle pepper, powdered onion, powdered garlic, and paprika on each chicken breast. Cover with aluminum foil and bake on 350 for 1 hour to 1 hr and 10 minutes. Remove cover and let set 5 minutes before serving.
BROCCOLI RICE, CHEESE CASSEROLE
The best and SOOOO easy! Use uncle bens prepared rice to save time. I also use a broccoli/carrot/cauliflower mix and it tastes great! You can also use low fat Cheez whiz!(from Kraft foods cookbook)

Steps:
- Stir onion in 1 tbsp butter and cook in skillet until soft.
- Add rice, soup, broccoli and cheez whiz;mix lightly.
- Spoon into 1 1/2 quart casserole.
- Toss together remaining 1 tablespoons.
- butter, melted, and bread cubes; sprinkle over casserole.
- Bake at 350F for 30-35 minutes or until thoroughly heated.
