Pork Chops with Apples and Onions image

4 bone-in pork loin chops, 1- inch thick
Kosher salt
Extra-virgin olive oil
2 onions, thinly sliced
1 pinch crushed red pepper
2 Granny Smith apples, peeled, cored, and sliced
Pinch cinnamon
2 sprigs fresh rosemary, leaves finely chopped
2 cups apple cider

Steps:

  • Preheat the oven to 375 degrees F.
  • Season the pork chops generously with salt. Coat a large saute pan with olive oil and bring it to a high heat. Sear the pork on both sides and on the fat edge, working in batches if the chops don't all fit in the pan at the same time. Be sure not to crowd the pan. Remove the pork from the pan and place on a cookie sheet. Finish the pork in the oven for about 10 to 12 minutes. Remove from the oven and let rest for 10 minutes before serving.
  • Ditch the excess fat from the saute pan. Give a drizzle of fresh olive oil and add the onions and crushed red pepper and season with salt. Cook until the onions become soft and aromatic. Add the apples, cinnamon and rosemary and toss to coat with the oil. Add the cider and cook until the cider has reduced by two-thirds and the onion-apple mixture is very soft and saucy. Serve over the pork chops.

This incredibly easy weeknight slow cooker recipe combines smoky, juicy pork with sweet apples and onions to create a melt-in-your-mouth delicious pulled pork that you will be making again and again.

3 lb boneless pork shoulder
2 Tbsp smoked paprika
2 Tbsp light brown sugar
2 Tbsp garlic powder
2 Tbsp cumin
1 Tbsp salt
1 Tbsp ground black pepper
2 medium apples (sliced)
1 yellow onion (sliced)
12 oz beer

Steps:

  • In a small bowl, mix together spices: smoked paprika through pepper. Coat the pork shoulder with the dry rub and refrigerate for 12-24 hours.
  • Place apple and onion slices in the bottom of a slow cooker and top with the pork shoulder. Add beer and cook on Low for 8 hours or High for 4 hours.
  • When cooking time is complete, remove pork from the slow cooker and let rest. When pork is cool enough to handle, begin shredded the meat and disposing of any excess fat.
  • Place shredded, lean pork meat back in to the slow cooker and mix with the apples, onions and cooking juices.
  • Serve on a whole grain bun with apple slices.

6 bone-in pork chops (loin or shoulder), cut 3/4 inch thick
Coarse salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil or vegetable oil
2 tablespoons unsalted butter
1 large white onion, sliced
2 to 3 apples, cored and sliced (about 3 cups)
1 cup beer, white wine, cider, or chicken broth

Steps:

  • Trim the chops of excess fat. Sprinkle generously with salt and pepper on both sides. Heat a 14-inch cast-iron skillet (if you have a smaller one, you'll need to work in batches) over high heat, and then swirl in the olive oil. Lay in the pork chops and don't move them for a few minutes, to assure a good golden sear forms. Turn and brown well on the second side for a total of about 10 minutes. Transfer the chops to a warm plate.
  • Swirl the butter into the pan. Add the onion and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in the beer or other liquid. Return chops to the pan.
  • Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce. Serve the chops over rice or mashed potatoes with a large spoonful of the apple-onion mixture over the top.

6 apples with peel, cored and cut into 8 wedges
1 large red onion, roughly chopped
¼ teaspoon ground cinnamon, or to taste
7 pounds pork shoulder roast
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
1 (24 ounce) jar cinnamon-flavored applesauce
¼ teaspoon ground cinnamon, or to taste

Steps:

  • Place the apples and onion into the bottom of a slow cooker, and sprinkle with 1/4 teaspoon cinnamon.
  • Rub the pork roast with salt and pepper, and place it on the layer of apples and onions in the slow cooker. Pour the applesauce over the roast, and dust the top with 1/4 teaspoon cinnamon.

1/2 teaspoon Flake Salt
1/4 teaspoon Coarse Ground Black Pepper
1 teaspoon Ground Cinnamon
4 Granny Smith apples (sliced in 1/4 - 1/2 inch thick slices)
2 sweet onions (sliced)
1/4 cup honey

Steps:

  • Using a small paring knife cut about a dozen apple length slits about three inches deep into the pork.
  • Rub the pork loin with the salt, black pepper and cinnamon.
  • Reserve just enough apple slices to place into the pork.
  • Put the remaining apples and the onion slices into the bottom of the slow cooker.
  • Place the reserved apple slices into the pork, one slice per opening.
  • Place the pork loin over the apples and onions.
  • Cover the pork in honey.
  • Cook on low for 5 hours.
  • To serve carve the pork into slices, serve with the apples and onions and a couple spoonfuls of the liquid (once you've rendered off the fat).

This is a recipe that is cooked in the crockpot and smells wonderful while cooking. A bit different than your usual pot roast. A big hit with my crowd.

1 boston butt
1 large yellow onion (cut into wedges)
2 (6 ounce) jars drained whole mushrooms
2 (10 1/2 ounce) cans Campbell's Golden Mushroom soup
paul prudhomme's blackened steak seasoning

Steps:

  • Spread one can of your soup on the bottom of crockpot.
  • Rinse off your roast and pat dry.
  • Rub Blackened Steak Seasoning into the meat covering all sides and place into the crockpot. (Fat side up).
  • Top with onion, mushrooms and the remaining can of soup.
  • Cook on low heat for 8 to 10 hours.
  • When cook time is complete, drain off the juices and make a gravy on the stove top.
  • Serve over steamed rice. ( I like jasmine rice).
  • Gravy: Put 2 c of juices in a pot and let it come to a boil over med hi heat. In a small cup, add a 1/4 c cold water and 2 Tbs cornstarch until mixed well. Add to boiling pot and stir with whisk until thick. Remove from heat and serve over meat.

2 (1 1/2 pound) pork tenderloins
2 teaspoons vegetable oil, divided
1 teaspoon sea salt
2 tablespoons vegetable oil, divided, or more as needed
3 Granny Smith apples - peeled, cored, and sliced into eighths
2 medium sweet onions, sliced vertically
1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves, divided
¼ teaspoon ground black pepper, or to taste
1 cup chicken stock
1 tablespoon butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Trim all silver skin from tenderloins; pat dry using paper towels. Rub 1 teaspoon vegetable oil over the surface of each tenderloin and rub with sea salt.
  • Heat 1 tablespoon vegetable oil in a large, oven-proof skillet over medium heat until it shimmers, about 1 minute. Place tenderloins into the skillet and cook, rotating to brown all sides, about 10 minutes. Transfer pork to a large plate.
  • Add remaining tablespoon oil to any drippings in the skillet. Cook apples and onions in the hot oil, stirring occasionally, until onions begin to turn translucent, about 5 minutes, adding a bit more oil if skillet gets dry.
  • Meanwhile, spread Dijon mustard evenly over browned tenderloins using a pastry brush. Sprinkle 2 teaspoons thyme leaves over pork. Sprinkle remaining thyme over apple mixture and add black pepper; stir gently to combine. Nestle tenderloins into the skillet with apple mixture.
  • Roast, uncovered, in the preheated oven until an instant-read thermometer inserted into the center of the tenderloins reads at least 145 degrees F (63 degrees C), about 15 minutes.
  • Remove skillet from the oven and place pork onto a plate. Cover with aluminum foil and let rest.
  • Meanwhile, pour chicken stock into a saucepan and cook over medium-high heat until reduced by 1/2, 8 to 10 minutes. Add to the skillet containing apple mixture.
  • Heat over medium-high heat until boiling, about 5 minutes; stir in butter until melted. Slice pork and serve over apple mixture.
