BLENDER PIE
This is a great pie to impress company with, without taking all day to do it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie plate.
- Place lemon-lime beverage, powdered milk, vanilla, baking mix, butter or margarine, sugar, coconut, and eggs in a blender. Process for 3 minutes. Pour mixture into greased pie plate and allow to sit for 5 minutes.
- Bake in preheated oven for 40 minutes. Makes its own crust.

HOW TO MAKE THE PERFECT PIE CRUST
Making your own Perfect Pie Crust doesn't have to be intimidating. Follow this simple recipe and it will turn out light and flaky every time!

- Preheat oven to 425 degrees. In a large plastic bowl, sift together all dry ingredients. Add 1/2 cup of shortening and cut it in with a pastry blender or with your hands. Work all of the fat into the flour mixture until fine crumbles form.
- Add the rest of the shortening and cut it again. Make sure it is evenly and fully blended in. It should form larger crumbles this time.
- In a small bowl, whisk egg, ice water, and vinegar.
- Add the egg mixture into the flour mixture. Use your hands to fold the ingredients together. DO NOT OVER MIX. Mix just until the dough comes together.
- Divide the dough into halves and form a ball with each half. Push the dough down to compress the cracks. Cover the half you aren't working with with plastic wrap so it doesn't dry out. Flour a large surface and a rolling pin. Slowly roll out the dough. Smooth out any cracks. Roll the dough until it is 2 inches larger in diameter than the pie plate. It should be about 1/4 inch thick.
- Use the rolling pin to roll up the pie dough and transfer it to the pie dish. Don't stretch the dough. Gently mold the crust into the pie plate. Trim edges with a butter knife. Press the dough so that it extends slightly past the edges of the plate because it will shrink a little while baking.
- Add your top crust or decorations as desired. (See note below about top crust and decorations) Bake for 35-40 minutes or until crust is golden brown and filling is bubbly. If pre-baking the crust, poke holes in the crust with a fork and bake for 10-12 minutes.

IMPOSSIBLE BLENDER PIE
This is my grandma's favorite pie, she requests that I make it often. It is a custard type pie. During baking, the flour sinks to the bottom to make a crust! What could be easier? :)

- Pour into greased 9- or 10-inc pie pan.
- Bake at 350 degrees for 40 minutes or until knife comes out clean.
MAGIC CRUST CUSTARD PIE
This custard pie is similar to chess pie, but prepared in a wonderfully unique way! It's not a very sweet dessert. The texture reminds us of flan without the caramel. If you want something sweeter, we'd suggest swapping the milk for heavy cream and the margarine for butter. Also, cinnamon would be delicious sprinkled on top too....

- Add flour, granulated sugar (if using) and the salt to a food processor fitted with blade attachment. Pulse until evenly incorporated. Add the butter and shortening cubes, a few pieces at a time with the motor running, until all fats are incorporated and pea-sized clumps begin to form.
- Slowly drizzle in the water through the feed tube, pulsing all the while. Do this until the pie crust has just about formed into a ball.
- Transfer the dough to a floured work surface and cut the dough ball in half using a knife or a pastry cutter. Form into two flattened round disks, wrap in plastic wrap and place in the refrigerator until chilled through, at least 2 hours.
