UMAMI BURGER
Steps:
- In a bowl, combine ground beef, Soy Sauce, sugar, seasoned salt and black pepper. Form into 6 patties, cook on skillet or grill to desired doneness. Add cheese to the cooked burger and serve with desired condiments.
UMAMI CHEESEBURGER
East meets West in this spin on my basic burger recipe. It's all about the soy ketchup!

Steps:
- In a small bowl, combine all ketchup ingredients together. Cover and refrigerate.
- In a separate small bowl, mix vinegar and sugar until sugar is dissolved. Add sliced onion and set aside to pickle.
- In a large bowl, combine the beef, salt, pepper, cheddar, and minced onion, using your hands.
- Mix well. Mold 4 patties using your hands; do not press patties too tightly together, as you want moist, juicy burgers.
- Add the tablespoon of canola oil to a nonstick skillet over medium-high heat. Cook 4 patties 3 to 4 minutes each side. While burgers are cooking, toast the burger buns in a toaster or under the broiler about 30 seconds to 1 minute, until golden.
- STOP! WHILE BURGERS COOK, CLEAN BOWLS.
- Divide spinach among 4 bun bottoms, top each with a burger patty, pickled onion and 1 tablespoon of soy ketchup and the bun top.

- In large skillet, heat butter over medium heat. Add mushrooms and cook 5 to 6 minutes or until dark golden brown, stirring frequently.
- Transfer mushrooms to bowl of food processor fitted with knife blade attachment. Add cheese, soy sauce, anchovy paste and black pepper. Process 30 seconds or until mixture forms a fine paste.
- Preheat griddle or outdoor grill for direct cooking over medium-high heat. Transfer mushroom paste to large bowl; add beef. Using hands, mix until well combined. Form mixture into six patties, being careful not to overwork the meat.
- Place burgers on hot griddle. Cook 8 to 10 minutes or until internal temperature reaches 135 degrees F for medium rare doneness, turning once.

- In a small saucepan, cook the port over moderate heat until reduced to 2 tablespoons, about 15 minutes.
- Heat a cast-iron griddle until very hot. Form the meat into four 4-by-1-inch patties without packing too tightly. Season generously with salt and pepper. Arrange the patties on the griddle, cover with a roasting pan and cook over moderately high heat for 4 minutes, until very crusty. Flip the patties and cook, covered, for 2 minutes longer; top with the Stilton and cook uncovered for 1 minute. Transfer the patties to a plate and sprinkle with the umami dust, let rest for 2 minutes and set on the buns. Drizzle with the reduced port, top with the buns and serve.
