3 1/2 cups oats
3/4 cup raisins (optional)
2/3 cup sunflower seeds
1/2 cup toasted sesame seeds
1/2 cup wheat germ
1/2 cup oat bran
3 tablespoons flax seeds
1 tablespoon cinnamon
1 teaspoon salt
1 cup organic coconut
1 cup organic chopped almonds
1 1/2 cups organic creamy peanut butter
1 cup honey
5 tablespoons organic butter, melted
1 -2 cup chocolate chips, 2 for sure (Sunspire)

Steps:

  • In a large bowl, combine first eleven ingredients.
  • Stir in peanut butter, honey and melted butter.
  • Press mixture firmly into foil-lined 9x13 inch pan.
  • Bake in preheated 350 F oven for 15 minutes.
  • Remove from oven; sprinkle chocolate chips over bars.
  • Return to oven until chocolate is softened (about 2 minutes).
  • Spread chocolate evenly over bars. Cool slightly.
  • Refrigerate until firm (about 2 hours)
  • Cut into bars; wrap individually; store in refrigerator.

This was slightly adapted from an Alton Brown (Good Eats) recipe. We have made it several times with many variations and have loved it every single time. I Strongly recommend that you weigh your ingredients instead of using the volume measurements. It makes a huge difference in the finished product.

Number Of Ingredients 12

4 ounces soy protein powder, approximately 1 cup
2 1/4 ounces oat bran, approximately 1/2 cup
2 3/4 ounces whole wheat flour, approximately 1/2 cup
3/4 ounce wheat germ, approximately 1/4 cup
1/2 teaspoon kosher salt
12 ounces assorted dried fruits, approximately 2 cups
1 (12 1/3 ounce) package soft silken tofu
1/2 cup unfiltered apple juice
4 ounces dark brown sugar, approximately 1/2 cup packed
2 large eggs, beaten
2/3 cup natural-style peanut butter
canola oil, for pan

Steps:

  • Line the bottom of a 13 by 9-inch glass baking dish with parchment paper and lightly coat with canola oil. Set aside. Preheat the oven to 350 degrees F.
  • In a large mixing bowl, combine the protein powder, oat bran, wheat flour, wheat germ, and salt. Set aside.
  • Coarsely chop the dried fruit and place in a small bowl and set aside.
  • In a third mixing bowl, whisk the tofu until smooth. Add the apple juice, brown sugar, eggs, and peanut butter, 1 at a time, and whisk to combine after each addition. Add this to the protein powder mixture and stir well to combine. Fold in the dried fruit.
  • Spread evenly in the prepared baking dish and bake in the oven for 35 minutes or until the internal temperature reaches 205 degrees F.
  • Remove from the oven and cool completely before cutting into squares. Cut into squares and store in an airtight container for up to a week.

1 cup whey protein powder
1/2 cup oat bran
1/2 cup whole wheat flour
1/4 cup wheat germ
1/2 teaspoon salt
12 1/3 ounces silken tofu
1/2 cup apple juice
1/2 cup brown sugar
2 eggs, beaten
2/3 cup natural-style peanut butter
2 cups dried fruit, chopped (recommend mixed berries and apricots)
1/2 cup walnuts, chopped

Steps:

  • Combine first 5 ingredients in a large bowl.
  • Whisk tofu until smooth in a small bowl.
  • Add juice, sugar, eggs and peanut butter one at a time, mixing well.
  • Pour tofu mix over dry ingredients and mix until just combined.
  • Fold in fruit and nuts.
  • Line a 9x13 pan with parchment paper and spray with canola oil non-stick spray.
  • Spread batter in pan.
  • Bake at 350F for approximately 35 minute.
  • Cool completely before cutting.

3 ½ cups rolled oats
¾ cup sweetened dried cranberries (such as Craisins®)
⅔ cup sunflower seeds
½ cup white chocolate chips
½ cup toasted sesame seeds
½ cup oat bran
3 tablespoons flax seeds
1 tablespoon ground cinnamon
1 teaspoon salt
1 ½ cups creamy natural peanut butter
1 cup honey
5 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine oats, sweetened dried cranberries, sunflower seeds, white chocolate chips, sesame seeds, oat bran, flax seeds, cinnamon, and salt in a large bowl. Stir in peanut butter, honey, and oil. Press mixture firmly into a 9x13-inch baking pan.
  • Bake in the preheated oven until golden, 12 to 15 minutes. Remove from the oven and let cool for 5 minutes. Transfer to the refrigerator and chill for 10 minutes to set.
  • Slice chilled bars into 2x3-inch squares. Wrap in plastic wrap and store in the refrigerator.

A delicious, high fiber power bar made of whole foods, with soy protein, and nuts, sweetened only with dates, and a little 70% dark chocolate on top.

Number Of Ingredients 10

10 ounces silken low-fat tofu, drained well (almost the whole package)
15 large medjool dates, pitted
1/4 cup coconut oil
3 cups rolled oats
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup ground flax seeds
1/2 cup walnuts or 1/2 cup almonds
1/4 cup raisins (optional) or 1/4 cup chopped dried fruit (optional)
6 ounces 70% dark chocolate

Steps:

  • Preheat oven to 350 degrees.
  • Puree the tofu, dates and coconut oil in a blender.
  • Transfer this paste to a bowl.
  • Add oats and nuts and seeds and dried fruits as you desire.
  • Spray coat a 9x13 inch pan.
  • Spread the mixture evenly into the pan.
  • Cook for 30 minutes, or until firm and browned.
  • Melt the chocolate in a microwaveable bowl.
  • Spread melted chocolate over the top of the bars.
  • Allow to cool for at least 1 hour, or put in the refrigerator for 20 minutes.
  • Cut into small 1x3 or 2x4 inch pieces, they are very filling!
  • These keep well for a week in the fridge, or for 3 months in the freezer. I freeze 3/4 of my batch and eat them straight out of the freezer, they're not too hard!
