EASY OREO TRUFFLES
These truffles are very easy and delicious. You can't go wrong with OREO, cream cheese and chocolate!

Steps:
- Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
- Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
- Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

- Melt chocolate with oil and the water. Stir in vanilla and sea salt. Transfer to an 8-inch square baking dish, and refrigerate until mixture is set but still pliable, about 2 hours.
- With a 1-inch ice-cream scoop, make 28 balls, transferring each one to a parchment-lined baking sheet. Coat hands in cocoa, and roll balls to make smooth. Refrigerate on sheet 10 minutes. (Truffles can be refrigerated in an airtight container up to 2 weeks; let stand at room temperature 30 minutes before coating.) To serve, roll in cocoa or pat with nuts or coconut.

WHITE CHOCOLATE TRUFFLES
Deliciously creamy white chocolate ganache truffles rolled in coconut.

Steps:
- Place chocolate, butter and cream in a heatproof bowl. Stir to coat.
- Heat in the microwave, stirring every 30 seconds, until smooth and creamy. Leave to cool slightly. Cover with plastic wrap and place in the fridge for at least 2 hours to set.
- Once the ganache has become firm, use a cookie scoop to spoon out roughly one level tablespoon of ganache per truffle. Roll smooth using your hands.
- Drop the truffles in the coconut and roll around, pressing the coconut onto the truffle using your hands, before setting on a plate. Continue with remaining truffles. Store in the fridge.

- Set out 1 pkg Philadelphia Cream cheese.
- In a blender or food processor, blend 1 pks Oreos until a fine powder is formed throughout TIP: Do this is small groups, 5 or 6 oreos at a time. If you do it all at once, it's impossible to get a consistent powder.
- Remove any remaining cookie pieces.
- Knead 1 pkg philadelphia cream cheese into mix until mixture is consistent throughout.
- Roll into 2 in balls and place on cookie sheet.
- Refrigerate 30 minute (Or freeze 10 min).
- Melt 1 bar Baker's semi-sweet chocolate.
- Using two spoons, coat each ball individually.
- Place on cookie sheet and refrigerate 30 minute.

- Line two baking sheets with parchment or wax paper and set aside. One will be for the rolled truffles before dipping, and the second will be for the truffles after they are dipped in chocolate.
- In a food processor, pulse Oreos into a fine crumb. Add cream cheese and pulse a few times until it comes together in a large ball. Roll truffle mixture into balls and place on one of the prepared baking sheets. Place baking sheet in the refrigerator for 10-15 minutes until firm. At this point you can also crush 3 extra cookies with the filling removed to sprinkle on top after the truffles are dipped.
- In a small saucepan, add melting wafers and melt on low heat. Once melted, turn off heat and leave the pot on the burner while you dip the truffles. Remove the baking sheet from the refrigerator and start dipping your truffles into the chocolate. Carefully place them 1" apart on the second prepared baking sheet. Sprinkle crushed Oreo cookies on top, if desired. Repeat process until all truffles are coated in chocolate and allow to set up on the counter for 15-20 minutes. If you are serving them the same day, you can leave them at room temperature. If they are being made ahead, store in the refrigerator until ready to use. Be sure to take them out 30 minutes ahead of time so the truffles will soften up.

- Line an 8 inch square tin with baking or parchment paper. Set aside 100 grams (about 10 Oreo cookies) for decorating the top of your chocolate bar. Using a food processor, finely crush the remaining Oreo cookies (250 grams / 25 Oreo cookies). Add your cream cheese and whiz again. Pop the Oreo mixture into the fridge for 5-10 minutes.
