Potato bread farls are pan fried to make one of the essential components of an Ulster fry. They taste great on their own with a little salt, or with a fried egg on top.

4 prepared potato bread farls
1 tablespoon olive oil, or as needed
1 pinch salt

Steps:

  • Heat oil in a skillet over medium heat. Gently fry potato farls for 2 to 3 minutes on each side or until golden brown. Season with salt and serve immediately.

In the North of Ireland, locals treat themselves to this enormous breakfast on the weekends. The fried breads make it unique. Soda bread and potato farls are cooked in reserved bacon fat making them golden and crispy. Served alongside Irish bacon, sausage, black pudding, tomato and egg - you won't need to eat again for the rest of the day!

2 thick slices Irish bacon
2 sausages
1 soda bread farl, sliced in half horizontally
2 potato bread farls
1 tablespoon vegetable oil, or as needed
2 slices black pudding
1 tomato, halved
2 eggs

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a large non-stick skillet over medium heat, cook the bacon and sausages, until they are browned. Reserving the fat in the pan, transfer to a heat resistant dish. Keep warm in the oven.
  • Fry both sides of the potato and soda farls in the reserved fat for a few minutes, or until they are golden and crispy. Meanwhile, heat oil in smaller skillet over medium heat and cook black pudding slices and tomato halves. Transfer everything to the dish in the oven to keep warm.
  • Crack eggs into the pan with any residual bacon grease, adding more oil to the skillet if necessary. Fry until egg whites are set but yolks are still runny, or to your liking. Divide everything onto 2 separate plates and serve immediately.

2 sausages
2 slices bacon
2 slices blood sausage (black pudding or white pudding)
1/2 farl soda bread
potato cake
2 large eggs
2 slices of fried bread
sunflower oil (for frying)

Steps:

  • The secret of a good fry is to cook the food in the right order, cooking that which takes the longest first.
  • Fry the sausages in a little oil until cooked, remove from the pan and keep warm.
  • Fry the bacon until crisp, drain and keep warm.
  • Fry the pudding for a few minutes to warm through, remove from the pan and keep warm.
  • Slice the farl and potato cake and lightly brown in the remaining hot oil.
  • Drain and keep warm.
  • Wipe the pan, add a little fresh oil and when hot crack in the eggs and cook until the white begins to set, spooning the oil over the yolk for an attractive milky appearance.
  • Arrange the fried ingredients on a hot plate and serve immediately with strong tea and wheaten bread.

  • Turn the oven on at its lowest setting to warm the plates. Heat a little of the oil in a large frying pan over a low heat. Then prick the sausages with a fork and cook gently, turning occasionally, until they are just coloured. Add the bacon to the pan and fry until it becomes crispy but not burnt. Remove the sausages and bacon to a warm dish in the oven and cover with kitchen paper.
  • Slice the tomato in half and place in the pan. Cut the soda farl in half and fry in the residue of the bacon fat. Add the potato bread and continue cooking for just long enough for the potato bread to brown on the outside and stay soft in the middle and the soda farl to absorb the delicious bacon flavor. Remove to the oven to keep warm. Slice the black pudding. Fry quickly and place in the oven.
  • Crack the eggs into the pan and add a teaspoon of water, then cover the pan. The water will create steam and cook the top of the egg. Before you know it, the eggs will be ready by the time you have plated the rest of the Ulster Fry onto a clean warm plate. Serve.
