UKRAINIAN BORSCHT



Ukrainian Borscht image

Heartier than the chilled version, this borscht makes for a satisfying dish, thanks to an addition of short ribs.

Yield Makes 3 quarts

Number Of Ingredients 16

1/4 cup plus 2 tablespoons extra-virgin olive oil
2 pounds short ribs
Coarse salt and freshly ground pepper
2 medium onions, diced
1 cup dry white wine
4 cups homemade or store-bought low-sodium chicken stock
5 garlic cloves, minced
1 celery root, cut into 1/2-inch cubes
2 medium carrots, cut into 1/4-inch slices
1/2 pound cabbage, shredded
2 pounds beets, scrubbed well, trimmed and coarsely shredded with a box grater
5 cups water
1 tablespoon tomato paste
3 tablespoons fresh lemon juice
3 tablespoons red-wine vinegar
2 tablespoons chopped parsley, for garnish

Steps:

  • Preheat oven to 300 degrees. Heat 1/4 cup oil in a Dutch oven over medium-high heat. Season ribs with salt and pepper. Working in batches, brown ribs, 3 to 4 minutes per side; set aside.
  • Add 1 onion, and reduce heat to medium. Cook, stirring, until softened, 5 to 6 minutes. Return ribs to Dutch oven, and add wine; simmer for 1 minute. Add chicken stock; bring to a simmer, and season with salt and pepper. Cover; transfer to oven, and roast until ribs are tender, 3 hours.
  • Shred ribs, discarding fat and bones. Strain stock through a sieve, and skim off fat. (You should have 2 cups.)
  • Heat remaining 2 tablespoons oil in Dutch oven over medium heat. Add remaining onion and the garlic; cook until translucent, about 4 minutes. Add celery root and carrots; cook for 4 minutes. Add reserved stock, the cabbage, beets, water, and tomato paste. Cook for 30 minutes. Add meat; cook until vegetables are tender, about 20 minutes more. Stir in lemon juice and vinegar; garnish with parsley.

Our family's go-to recipe for Borscht (Red Beet Soup). It's best to have all of the ingredients prepped and ready to go which makes this soon super easy and care free. Serve with a dollop of sour cream or real mayo.

3 medium beets (peeled and grated)
4 Tbsp olive oil (divided)
8 cups chicken broth (+ 2 cups water)
3 medium yukon potatoes (peeled and sliced into bite-sized pieces)
2 carrots (peeled and thinly sliced)
2 celery ribs (trimmed and finely chopped)
1 small red bell pepper (finely chopped, optional)
1 medium onion (finely chopped)
4 Tbsp ketchup or 3 Tbsp tomato sauce
1 can white cannelini beans with their juice
2 bay leaves
2-3 Tbsp white vinegar (or to taste)
1 tsp sea salt (or to taste)
1/4 tsp black pepper (freshly ground)
1 large garlic clove (pressed)
3 Tbsp chopped dill

Steps:

  • Peel, grate and/or slice all vegetables (keeping sliced potatoes in cold water to prevent browning until ready to use then drain).
  • Heat a large soup pot (5 1/2 Qt or larger) over medium/high heat and add 2 Tbsp olive oil. Add grated beets and sauté 10 minutes, stirring occasionally until beets are softened.
  • Add 8 cups broth and 2 cups water. Add sliced potatoes and sliced carrots then cook for 10-15 minutes or until easily pierced with a fork.
  • While potatoes are cooking, place a large skillet over medium/high heat and add 2 Tbsp oil. Add chopped onion, celery and bell pepper. Saute stirring occasionally until softened and lightly golden (7-8 minutes). Add 4 Tbsp Ketchup and stir fry 30 seconds then transfer to the soup pot to continue cooking with the potatoes.
  • When potatoes and carrots reach desired softness, add 1 can of beans with their juice, 2 bay leaves, 2-3 Tbsp white vinegar, 1 tsp salt, 1/4 tsp black pepper, 1 pressed garlic clove, and 3 Tbsp chopped dill. Simmer for an additional 2-3 minutes and add more salt and vinegar to taste.

1 tablespoon salt
3 peppercorns
1 1/2-2 quarts water
1 piece bay leaf
2 -3 beets, sliced thinly
1 -2 carrot, sliced thinly
2 stalks celery, chopped
1 medium onion, chopped
1 cup cabbage, shredded
1/2 teaspoon sugar
1 cup tomato juice
1 tablespoon vinegar
1/2 cup cream

Steps:

  • Cut up the spareribs; cover with 1 1/2 to 2 quarts water.
  • Add salt and spices.
  • Cook on low heat until meat is tender and falls off bone.
  • Lift out meat and strain stock.
  • Pre-boil the shredded cabbage in stock until softened.
  • Add all vegetables to the soup stock and cook until tender.
  • Add sugar, tomato juice and vinegar.
  • Just before serving add cream.

2 pounds beef flanken or short ribs
3 quarts of water
2 teaspoons coarse sea salt
1 medium carrot, scraped
1 medium celery root, peeled, 1/4 cut out for broth, remaining cut in 1/2-inch cubes
1 medium onion, unpeeled, stuck with several cloves
8 whole allspice berries
3 medium-large beets, without tops
2 tablespoons butter or vegetable oil
2 large onions, coarsely chopped
1 medium parsnip, peeled, cut into 1/2-inch cubes
2 medium turnips, cut in 1/2-inch cubes, or 2 cups chopped cabbage
1 large carrot, cut in 1/2-inch cubes
2 medium potatoes, cut in 1/2-inch cubes
1/2 teaspoon freshly ground black pepper
1 well-rounded tablespoon tomato paste
8-10 large garlic cloves, crushed
Juice of 1/2 lemon, or more to taste
3/4-1 cup sour cream or yogurt
3 tablespoons finely chopped dill
3 tablespoons finely chopped parsley

Steps:

  • In a 5-6 quart pot, bring meat and water to boil over high heat. Reduce to simmer and skim of foam. When foam stops rising, add salt, carrot, 1/4 celery root, whole onion and allspice; simmer gently, partially covered for 1 1/2 to 2 hours, or until meat falls of the bone. Preheat oven to 400°F. Scub beets, wrap in foil and bake for an hour, or until just tender. Poke through foil with skewer to check for doneness. Peel beets; shred on coarse side of grater. When meat is very tender, remove, strip off bones, and cut into small cubes. Place in bowl; cover with foil. Strain broth. Rinse out pot. Place pot over medium heat, warm butter, and saute onion 2-3 minutes. Add cubed celery root, parsips, turnips and carrot. Saute 5 minutes. Add strained broth, potatoes and shredded beets. Bring to a boil. Reduce to simmer, uncovered, for 10 minutes, or until vegetables are tender. Just before serving, while soup is simmering gently, stir in garlic and lemon juice. Remove from heat immediately. Serve pipping hot in flat bowls with dollop of sour cream and generous sprinkling of parsley and dill.

  • Rinse 4-5 pork ribs in cold water, place into a large soup pot (6 qt) or dutch oven and cover with water (1-2” above ribs). Bring to a boil over medium-high heat then drain water with the foam crud as soon as it boils. Rinse ribs to remove any foam crud left on them and place ribs back into the pot.
  • Add 10-12 cups cold water, 2 dried bay leaves and 1 tsp kosher salt. Cover with a lid. Bring to a boil, reduce heat and keep at light boil for 1 hour until meat falls off the bones.
  • Peel, grate and/or chop all vegetables, keeping cubed potatoes in cold water until ready to use. Rinse canned beans in cold water and keep in cylinder until ready to use.
  • In a small skillet over medium heat, add 3 tbsp grapeseed oil and saute 1 finely chopped medium yellow onion for 4-5 mins until softened and translucent. Add julienned 2 medium carrots and continue to saute for another 4-5 mins or until softened (adding more oil if it seems too dry). Turn off heat, set aside.
