This is a lovely, cool, refreshing Greek tzatziki dip that I first tasted and fell in love with in the Greek Islands. It is lovely with hot toasted pita bread and veggies or lamb kebabs! The key is strain the liquid from the cucumber very well so the dip stays creamy and not watery and to always use thick, full-fat Greek yogurt. Low-fat versions won't cut it. Enjoy!

4 tablespoons olive oil
2 tablespoons red wine vinegar
1 clove garlic, minced, or more to taste
1 large cucumber
salt to taste
1 (17.6 ounce) container full fat plain Greek yogurt (such as FAGE Total®)

Steps:

  • Stir together olive oil, vinegar, and garlic in a bowl and let sit while you prepare the cucumber.
  • Peel cucumber and cut in half lengthways; scrape out all the seeds. Grate cucumber with a cheese grater into a sieve set over a bowl. Sprinkle with salt. Strain out as much liquid as possible by pressing down in the sieve with the palm of your hand. Alternately you can wring cucumber out in a clean tea towel. Add cucumber and yogurt to the garlic mixture. Mix until well combined and season with salt to taste.

This is the cool and creamy sauce that usually is served as a condiment on Greek Gyro sandwiches. The recipe calls for the thicker, Greek Yogurt, also called, "Greek Cheese". If you can't find this type of yogurt, you can use plain, regular yogurt from the grocery store. But in order to get the sauce to the desired thicker consistency, you need to suspend the yogurt in a cheesecloth for a couple of hours to drain some of the water off. If you don't mind it moderately runny, you can just make it as is and it is still delicious, just a little more messy. 3 cups Greek yogurt (also called Yogurt Cheese, see below for alternative)
3 tablespoons lemon juice (or juice of one lemon)
1 garlic clove, minced
1 large English cucumber, diced (the long, skinny ones)
1 tablespoon salt (for salting cucumbers)
1 tablespoon fresh dill (or both, depending on preference) or 1 tablespoon of fresh mint, chopped (or both, depending on preference)
salt & freshly ground black pepper

Steps:

  • Peel cucumbers and dice. Put them in a colander and sprinkle with the tablespoon of salt (draws water out). Cover with a plate and sit something heavy on top. Let sit for 30 minute Drain well and wipe dry with a paper towel.
  • In food processor or blender, add cucumbers, garlic, lemon juice, dill and/or mint, and a few grinds of black pepper. Process until well blended, then stir into yogurt. Taste before adding any extra salt, then salt if needed. Place in refrigerator for at least two hours before serving so flavors can blend.
  • This will keep for a few days in the refrigerator, but you will need to drain off any water and stir each time you use it.
  • ** If you can't find the thicker Greek Yogurt Cheese, you can use regular, plain yogurt that is either full fat or low fat. To thicken, spoon yogurt into cheese cloth that has been quadrupled. Draw the corners of the cloth up and tie together. Suspend above a bowl for 2 hours so that water can drip out. The consistency of the yogurt should be like that of sour cream.
  • You can skip this draining process, if you want, but you will have a moderately messier, runnier result.

1/2 tsp salt (or to taste)
16 oz Cold plain Greek yogurt ((2 cups, either full fat or fat-free will work))
1 1/2 Tbsp freshly squeezed lemon juice (Juice of 1/2 lemon; please squeeze a real lemon)
3 to 4 garlic cloves (peeled and grated)
1/3 cup chopped dill
3 Tbsp extra virgin olive oil
1/4 tsp salt (or to taste)
1/8 tsp black pepper (or to taste)

Steps:

  • Peel and finely dice the cucumber, or you can grate on the large holes of a box grater if preferred. Transfer to a bowl lined with a cheesecloth* and sprinkle cucumbers with 1/2 tsp salt and give them a light stir. Set aside for the cucumbers to release their juice while you prep the remaining ingredients.
  • In a large mixing bowl, combine plain Greek yogurt, lemon juice, grated garlic cloves, chopped dill, extra virgin olive oil, salt and pepper, or season to taste.
  • Use the cheesecloth to squeeze out as much juice as you can from your chopped cucumber. You'll be surprised how much juice comes out. Discard the juice and add squeezed cucumber to your mixing bowl.
  • Stir everything to combine and season to taste with more salt and pepper if desired. Cover and refrigerate for at least 1 hour, or until ready to serve. I love serving drizzled with a little more extra virgin olive oil.

1 hothouse cucumber, unpeeled and seeded
1 tablespoon plus 1/2 teaspoon kosher salt
1/2 cup sour cream
1 tablespoon Champagne vinegar or white wine vinegar
2 tablespoons freshly squeezed lemon juice (1 lemon)
1 tablespoon good olive oil
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced fresh dill
Pinch freshly ground black pepper

Steps:

  • Place the yogurt in a cheesecloth or paper towel-lined sieve and set it over a bowl. Grate the cucumber and toss it with 1 tablespoon of kosher salt; place it in another sieve, and set it over another bowl. Place both bowls in the refrigerator for 3 to 4 hours so the yogurt and cucumber can drain.
  • Transfer the thickened yogurt to a large bowl. Squeeze as much liquid from the cucumber as you can and add the cucumber to the yogurt. Mix in the sour cream, vinegar, lemon juice, olive oil, garlic, dill, 1/2 teaspoon salt, and pepper. You can serve it immediately, but I prefer to allow the tzatziki to sit in the refrigerator for a few hours for the flavors to blend. Serve chilled or at room temperature.

1 pint sour cream (or Greek-style super thick yoghurt)
1 English cucumber, peeled, grated on a box grater, salted lightly for 5 minutes and squeezed between the hands to remov (the long, thin, almost seedless kind)
3 garlic cloves, mashed to a paste
1/3 cup olive oil
1 tablespoon red wine vinegar
1 tablespoon minced fresh dill (optional)

  • Just mix everything up together until it is all blended and the oil has emulsified into the yoghurt/sour cream. Taste for seasoning, and add salt if you think necessary. Put in a resealable container.
  • Allow to 'sit' in the refrigerator for at least 2-3 hours before using to allow the flavors to come out.
  • This wonderful meze (we do not think of it as a sauce here- it is a thick 'salata') is used to counterpoint rich, bbq'd meats (like souvlaki/shish kebab), but can be used in more diverse ways.
  • Place a small plate full on your dinner table for people to scoop up small amounts onto their bread (preferably crisp-baked pita).
  • Fry up some zucchini or eggplant slices (dredge in flour and fried in olive oil) and serve with a dollop of tzatziki on top.
  • Use as a salad dressing.
  • A dip for crudites.
  • Note: If I have time, I often lightly salt the grated cucumber and put in a colander to drain, then squeeze out water as per usual. This eliminates even more water.

1 tsp kosher salt (divided)
4 to 5 garlic cloves,

Steps:

  • Use a box grater to manually grate the cucumbers or you can use a small food processor to finely chop the cucumbers as I do in this recipe. Toss the grated cucumbers with 1/2 tsp kosher salt. Spoon the grated cucumber into a cheese cloth or a double thickness napkin and squeeze dry. (There will be a lot of liquid).
  • In one large mixing bowl, place the garlic with remaining 1/2 tsp salt, white vinegar, and extra virgin olive oil. Mix to combine.
  • Add the grated cucumber to the bowl with the garlic mixture. Stir in the yogurt, and a pinch of white or black pepper, and the fresh herbs (if using. I did not use fresh herbs in the video). Stir to combine well.
  • Cover and refrigerate for a bit (anywhere from 30 minutes to a couple hours before serving). This will help thicken the sauce and give it the best texture, while allowing the flavors to meld.
  • When ready to serve, stir the tzatziki sauce to refresh and transfer to serving bowl, drizzle with more extra virgin olive oil, if you like. Serve with your favorite veggies, pita chips or wedges (be sure to read the post for more ideas on how to use this sauce)!

500g strained Greek yogurt (18 ounces)
1-2 tbsps of red wine vinegar

Steps:

  • To prepare this authentic Greek tzatziki sauce recipe, remove the skin and the seeds of the cucumber and grate it into a large bowl. Season with salt and pepper and leave aside for 10 minutes.
  • Afterwards, wrap the grated cucumber in a towel and squeeze, in order to get rid of the excess water.
  • Assemble the tzatziki sauce. In a bowl, add the cucumber, the minced garlic and olive oil, the yogurt, 1-2 tbsps of red wine vinegar, a pinch of salt and blend, until the ingredients are combined. Called Cacik in Turkey, Tarator in the Balkans, Tzatziki in Greece, each version of this salad is a variation on a theme: yogurt, cucumbers, garlic, fresh herbs. The yogurt is thick, and pungent with mashed garlic, the cucumbers either finely chopped or grated, then salted and allowed to wilt. Walnuts enrich the Balkan version, which is also considered a soup, as is Cacik. India has its version too, raita, the cooling mixture that accompanies hot curries. Whatever the cuisine, it's one of my favorite combinations, one I never forgo if I see it on a menu.

Tzatziki is a creamy and refreshing Greek cucumber yogurt sauce, made with a few ingredients and a super delicious condiment for just about anything. Here's how you can whip up this easy Greek sauce right at home!

1 English cucumber, (about 1 lb)
1 cup Greek yogurt, (10 oz/285 grams)
2 tbsp extra virgin olive oil, (plus more to drizzle while serving)
2 tbsp chopped fresh dill
1 garlic clove, (grated)
1 tbsp white wine vinegar, (substitute with lemon juice)
1/2 tsp sea salt
1/4 tsp freshly cracked black pepper

Steps:

  • Peel the cucumber and chop it roughly into two parts. If you use a regular cucumber, cut it lengthwise into half and scoop out the seeds. I left the seeds since I used an English cucumber. Grate each part using a box grater. Place the shredded cucumber in a fine-mesh sieve lined with cheesecloth, sprinkle 1/4 tsp salt and leave it aside for 10-15 minutes.
  • Meanwhile, add the Greek yogurt in a mixing bowl, also add olive oil, minced garlic, vinegar or lemon juice, salt, and pepper. Give everything a good mix using a whisk or spoon. Refrigerate if required while the cucumber shreds are draining.
  • After 15 minutes, bring the edges of the cheesecloth together and squeeze out as much of the water as possible out of the cucumber. Will yield about 7.5 oz approx or 1 cup packed shredded, drained cucumber.
  • Transfer the drained, shredded cucumber to the yogurt mixture. Also, add the chopped dill, and mix everything well once again. Taste and adjust with more salt if required.
  • Serve immediately or cover the bowl with a cling wrap, and refrigerate for 1 hour for flavors to mingle. Transfer the tzatziki to a serving bowl, drizzle some more extra virgin olive oil, garnish with dill leaves. Serve with pita bread or pita chips or carrot sticks, sliced bell peppers. You may refrigerate tzatziki for up to 2 days. If it is stored longer, it might turn watery and lose the thick texture. Remember to cover the bowl while storing in the refrigerator.

1/2 teaspoon salt
1 1/4 cups Greek yogurt ((nonfat works great))
2 tablespoon extra virgin olive oil
1 tablespoon lemon juice
1 teaspoon red wine vinegar
1 tablespoon fresh chopped dill
2-3 garlic cloves (minced)
1/4 teaspoon dried oregano
Salt and pepper to taste

Steps:

  • Slice cucumber in half lengthwise and scrape out the seeds using a teaspoon (see picture in post). Chop a few times and add to a food processor and pulse until finely chopped.
  • Add diced cucumber to a fine mesh sieve and sprinkle with ½ teaspoon salt. Stir and let sit 15 minutes. (Alternatively, if you don't have a food processor you either finely chop cucumber or finely grate).
  • After 15 minutes, use the back of a measuring cup or spatula to push cucumbers down against sieve to release excess water. Repeat several times.
  • Add all Tzatziki ingredients to a medium bowl and stir to combine. Season with salt and pepper to taste (probably won't need salt). Taste and add additional dill, or lemon juice if desired. Best if chilled at least one hour.

Sea salt (or table salt, to taste and optionally black pepper)

Steps:

  • Peel cucumber if desired (it adds a faint texture and a will lightly tint the dip, but this is optional to peel). Slice cucumber in half throught the length and use a spoon to remove seeds.
  • Chop cucumber into chunks, then add to a food processor.**** Pulse until cucumber is almost finely chopped.
  • Remove blade from food processor, then press cucumber against the sides of the processor bowl to remove some of the excess liquid, reserve liquid (proceed to step 1 in notes if you aren't using a very thick Greek yogurt).
  • Add yogurt, cucumber, dill, garlic, olive oil and lemon juice to a medium mixing bowl. Season with salt, and pepper if using, to taste.
  • Stir mixture until well blended. If you find it's a little thick for your liking you can pour in some of the reserved cucumber juice from the food processor.
  • If serving over warm food (like salmon, chicken, steak, gyro or cooked veggies) let rest at room temperature about 30 minutes. Store in refrigerator.

2 cucumbers - peeled, seeded and diced
2 tablespoons olive oil
½ lemon, juiced
salt and pepper to taste
1 tablespoon chopped fresh dill
3 cloves garlic, peeled

Steps:

  • In a food processor or blender, combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic. Process until well-combined. Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor.

1 English cucumber, peeled and grated (3/4 cup)
1 teaspoon coarse salt
1 cup plain whole-milk yogurt
1/2 small garlic clove, minced (1/2 teaspoon)
1 teaspoon fresh lemon juice
2 tablespoons finely chopped fresh dill

Steps:

  • Toss cucumber with salt in a colander, and let drain for 20 minutes. Press lightly to extract excess water, then transfer cucumber to a medium bowl. Stir in yogurt, garlic, lemon juice, and dill. Cover, and refrigerate for 1 hour (or up to 1 day).
