BUTTERED SAVOY CABBAGE

Once cabbage is wilted and tossed with a bit of butter and seasoning, you'll want to make it as a side dish more often.

1 savoy cabbage (2 pounds), halved, cored, and cut crosswise into 1-inch strips, thick ribs removed
1 tablespoon butter, cut into small pieces
Coarse salt and freshly ground pepper

Steps:

  • Place cabbage in a large skillet with 1 cup water (skillet will be very full). Bring to a boil, and reduce heat to medium-low. Cover skillet; simmer until cabbage is very tender, tossing occasionally, 12 to 15 minutes.
  • Pour out any water remaining in skillet. Add butter; season with salt and pepper. Toss gently to combine.

I love savoy cabbage and we serve it as a side to almost anything. This is one of my favorite ways to make it, quick and easy with a little butter and cream.

1 head savoy cabbage, sliced
3 tablespoons butter
¼ cup heavy whipping cream, or to taste
salt and freshly ground black pepper to taste
⅛ teaspoon ground nutmeg, or to taste

Steps:

  • Place savoy cabbage in a pot, cover with cold water, and bring to a boil. Cook for 1 minute, remove from heat, and drain. Rinse under cold water. Squeeze savoy cabbage as dry as possible with your hands.
  • Melt butter in a pot and add savoy cabbage. Add cream and season with salt, pepper, and nutmeg. Cook until cabbage is soft and creamy, 2 to 4 minutes.

2 1/4 lb savoy cabbage
3 clove garlic
2 onions, finaly sliced
3 Tbsp olive oil
1/2 c unsalted butter
1/2 tsp dried rosemary
1/4 tsp dried sage
2 c vegetable broth
1 pinch fennel seeds, crushed
1/4 tsp caraway seeds
1 c dry white wine, heated
1 small bunch parsley, minced
salt and pepper to taste

Steps:

  • 1. Free the cabbage leaves from the head; rinse them, drain, and coarsely shred them. Peel and slice the onions. Mince the garlic and mix with rosemary and sage. Mince the parsely separately and set aside.
  • 2. In a large pot, heat the butter and oil; add the garlic mixture and the onions. Cook, stirring, until the onions are transparent. Add the cabbage leaves and continue cooking, stirring occasinally, for 10 more minutes.
  • 3. Sprinkle the wine and vegetable broth into the pot, add the fennel, caraway, and salt and pepper to taste.
  • 4. Mix well, cover the pot, reduce the heat to low, and simmer the cabbage for about an hour. When done, transfer the cabbage to a heated bowl, garnish it with the parsley, and serve at once.

SAVOY CABBAGE CASSEROLE

This tasty and juicy savoy cabbage casserole fits perfectly into the cold season. A delicious and easy-to-make oven dish.

600 g of potatoes
300 g savoy cabbage
100 g grated hard cheese
1 onion
1 clove of garlic
1 egg yolk
4 tbsp sunflower oil
2 tbsp wheat flour
250 ml vegetable broth
200 ml white wine
400 ml of milk
smoked salt
black pepper
nutmeg
lemon zest

Steps:

  • Peel the potatoes and cut into 2mm thick slices and then cook in water. Clean the savoy cabbage well and free from the stalks, then blanch for about 3-5 minutes in hot water.
  • Finely chop the onion and garlic and sauté in the oil. Add the spices. Add the flour, then add the broth, the wine and the milk and bring to a boil while stirring constantly.
  • Stir 2/3 of the grated cheese, remove from heat and stir until the cheese has dissolved. Then, if the sauce is not too hot, stir in the egg yolk. Season with salt and lemon.
  • Layer the savoy cabbage and potato slices in a oven dish, cover each layer with a bit of sauce and repeat this process until the ingredients are used up. End with sauce and spread the rest of the cheese on top.
  • Preheat the oven to 180°C.
  • Place the dish in the oven and bake for approx. 30-40 minutes until golden brown.

1 lb savoy cabbage ((4 cups) finely shredded)
2 cups corn (canned, cooked or frozen (thawed))
1 cup peas (fresh or frozen (thawed))
1 cup plain regular or Greek yogurt (2+% fat)
2 tbsp water or milk (if using Greek yogurt)
1 tbsp white, white wine or apple cider vinegar
1/2 cup fresh dill (finely chopped)
1 small garlic clove (grated)
1/2 tsp onion powder
3/4 tsp salt
1/2 tsp Ground black pepper

Steps:

  • In a small bowl, add yogurt, water (if using Greek yogurt), vinegar, dill, garlic, onion powder, salt and pepper. Stir well and set aside.
  • In a large bowl, add savoy cabbage, corn and peas.
  • Pour dressing over vegetables, gently toss with tongs until combined.
  • Best served cold.
