6 tablespoons butter, softened, divided
8 slices sourdough bread
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
4 ounces Brie cheese, rind removed and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, mix together mayonnaise, Manchego cheese, onion powder and remaining 3 tablespoons butter. In another bowl, combine cheddar, Monterey Jack and Gruyere. , To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until bread is golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

¼ cup finely chopped Granny Smith apple
1 tablespoon finely chopped pecans
1 tablespoon creamy salad dressing (such as Miracle Whip®)
1 tablespoon sour cream
8 slices Colby cheese
8 slices sourdough bread
4 thick slices ham
¼ cup margarine

Steps:

  • Stir together the apple, pecans, salad dressing, and sour cream; set aside. Place a slice of Colby cheese onto 4 of the bread slices, the add the ham, followed by the remaining slice of cheese and bread. Spread the margarine on the outside of the sandwiches.
  • Place the sandwiches into a large skillet and cook over medium-high heat until the bread is golden brown on both sides and the cheese has melted, about 3 minutes per side. Spread the apple mixture into the middle of each sandwich before serving.

Number Of Ingredients 13

4 slices thick-cut sourdough bread
1 ball (1 pound) fresh mozzarella, cut into 1/4-inch slices
2 plum tomatoes, cut into thick slices
1 cup fresh Basil Pesto, recipe follows
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
1/2 cup pine nuts
2 cups fresh basil leaves
1 cup fresh Italian parsley leaves
1/2 cup Parmesan or Romano
2 garlic cloves
1/4 teaspoon salt
1/2 cup extra-virgin olive oil

Steps:

  • Assemble sandwich by smearing insides of bread slices with pesto. Arrange a layer of sliced tomato and season with a few turns of fresh pepper. Layer the mozzarella slices over the top and then place another piece of bread on top to make the sandwich. Drizzle olive oil over skillet's surface and place sandwiches on the hot skillet or panini press. If using a skillet, place another heavy skillet over the top to form a "press". Turn after 2 to 3 minutes and replace weight. The sandwich is ready when golden brown and mozzarella has melted around the edges.
  • Toast pine nuts in a skillet over medium heat until fragrant, about 5 minutes. Combine pesto ingredients in a food processor and pulse until well combined but still rough-textured. If you have a panini press, turn it on to warm up; otherwise, set a cast iron skillet over medium heat.

My son Tyler and I would make the best simple sandwiches together. Our two favorites are fried egg, over medium, over toast and also a grilled cheese sandwich. One day while making a grilled cheese sandwich, for some reason I wanted to jazz it up a bit so I sprinkled what I had sitting on the counter on it and that was shredded parmesan cheese. Maybe others have done this, but it was an Experiment for me and boy was I pleasantly surprised! It is fantastic! I can't eat it without the parm now! If you haven't tried it, you are missing out! We always have our grilled cheese with tomato soup, YUM

4 - slices of bread ( i love shepherds bread)
6 - slices cheddar cheese (however cheesy you like and also shepherds bread has larger slices)
4 tablespoon(s) shredded parmesan cheese (has to be shredded)
- butter or margarine

Steps:

  • Preheat large frying pan on med/high heat. Butter one side of all 4 slices of bread. On two of the slices of bread without butter, lay the cheddar cheese slices, evenly as you can. Add the second top of sliced bread with buttered sides out, on top of the cheese slices and bread. Both outside peices of bread should have the butter on it.
  • Start to fry the first buttered side of each sandwich. Do not cook completely on this first one. Halfway through cooking it, flip to the other side of buttered sandwich.
  • Now sprinkle 1 Tbls of the cheese on to the cooked side of each sandwich. Cook the just flipped one halfway as well and flip back over and recook the first cooked side now with the cheese on it. Cook until it looks crispy and toasted then do the same to the other side.
  • You didn't know grilled cheese could be so detailed hegh? Just try it, you will see why I am making such a fuss about it! This ones for you Tiller!

Dijon mustard
Eight 1/2-inch thick slices country-style white bread
12 ounces farmhouse Cheddar, sliced
12 slices bacon, cooked to desired doneness
1 green apple, thinly sliced
3 tablespoons unsalted butter

Steps:

  • Heat a griddle or large skillet over medium-low heat. Alternatively, you can use a panini press if you have one.
  • Generously spread the Dijon on 4 slices of bread. Top each slice with some of the Cheddar, 3 pieces of bacon, some apple and additional Cheddar. Place a slice of the remaining bread on top of each sandwich and spread with the butter. Place a sandwich on the skillet buttered-side down and butter the remaining side. Cook until the cheese is slightly melted and the bread is browned. Flip the sandwich and continue to cook until the cheese is thoroughly melted and the sandwich is golden brown. Repeat with the remaining sandwiches.

1/4 cup parmigiano-reggiano (grated)
1/2 cup gruyere (grated)
1/4 cup Bechamel Sauce
2 slices bread
1/2 teaspoon dijon mustard
3 slices smoked turkey
3 slices pear

Steps:

  • Preheat oven to 400°F.
  • Melt half of the Gruyère and all of the parmigiano-reggiano into the Bechamel sauce.
  • Toast the bread.
  • Spread the mustard on one slice of bread.
  • Place the turkey slices, the pear slices and about half of the remaining Gruyère cheese. Top with the other toasted bread slice.
  • Spoon the Bechamel sauce onto the top of the sandwich.
  • Sprinkle with the remaining Gruyère cheese.
  • Place on a broiling pan and bake in the oven for 5 minutes.
  • Turn on the broiler and broil for an additional 5 minutes. (Until the cheese topping is bubbly and lightly browned.)
