BEEF AND TOMATO STIR-FRY

Steps:
- Cut beef across the grain into thin strips; cut strips into 2 inch lengths.
- In bowl, combine cornstarch, sherry and soy sauce; mix until smooth.
- Add Beef and toss to coat.
- In wok or nonstick frypan, heat oil over high heat.
- Add beef and stir fry for 2 minutes; add onion and stir fry for 1 minute or until beef is browned.
- Add garlic and tomatoes; stir fry until tomatoes are heated through, 1 to 2 minutes.
- Stir in green onions and serve immediately.

TURKEY OR CHICKEN, SUMMER SQUASH AND TOMATO STIR-FRY
Steps:
- Combine 2 tablespoons olive oil, lemon juice, thyme, 1/4 teaspoon salt, pepper, and red pepper in a large bowl. Add the chicken or turkey and toss. Marinate 15 minutes.
- Drain the meat and pat very dry. Heat a wok or large skillet over high heat. Add the remaining 2 tablespoons oil to the pan. Add the chicken and stir-fry until opaque and firm, about 4 minutes. Use a slotted spoon to transfer to a large bowl. Add the onion and pepper to the pan and stir-fry, until softened, 1 to 2 minutes. Add to the chicken. Add the squash to the pan, and stir-fry until tender-crisp, about 2 minutes. Add to the chicken. Add the tomatoes and garlic to the pan and stir-fry until glazed and slightly charred, about 2 minutes longer. Return the chicken and vegetables to the pan. Season with salt and pepper. Heat until warmed through, about 2 minutes. Add the basil and toss to combine. Serve with rice.
HEALTHY ITALIAN STYLE ZUCCHINI AND TOMATO STIR FRY
Delicious way to eat your veggies! I Love the flavors in this and my kids gobbled it up. We like to eat it over brown rice, but I think it would be nice on its own as well. Recipe created by hubby Jason.

Steps:
- Heat canola oil in pan with zuccini on medium high until they begin to brown.
- Move zuccini one side of the pan, add more oil, and cook garlic for about 3-5 minutes or until they begin to brown.
- Add all remaining ingredients (except optional walnuts and brown rice!) and simmer for about 15-20 minutes.
- Take off the stove and stir in the walnuts if using them.
- Serve and enjoy by itself or over cooked brown rice.

Steps:
- Fold together the marinade ingredients and dump into a plastic bag with sliced chicken; marinate chicken for at least five minutes.
- In the meantime, add all secret sauce ingredients to a blender or food processor, and pulse a few times until well-blended. It will foam a little bit.
- Heat oil over high heat in a large skillet or wok. Stir-fry the meat for 2-3 minutes or until it turns color. Don't overcook, as it will be back in the pan again. Transfer to a platter.
- Add a little more peanut oil to the wok if it needs it. Stir fry water chestnuts and green onions (reserving some for garnish) for two minutes; add secret sauce and bring to a boil, then cook for two minutes. Return meat, add cherries and stir thoroughly to heat through.
- Remove from heat; garnish with reserved green onion and serve hot over rice.

- Heat the olive oil over medium heat in a large sauté pan. Add the red onions and cook, stirring frequently, until very soft and pale purple in color, 7-8 minutes. Do not brown.
- Add the zucchini, tomatoes, garlic, salt and pepper and cook, stirring frequently, for 3-5 minutes, or until the zucchini are cooked but still crisp and the tomatoes have started to collapse, creating a little sauce. Stir in the fresh basil, then taste and adjust seasoning if necessary. Transfer to a serving dish and garnish with more fresh basil if desired.
