- Preheat oven to 400°. Scrub russet and sweet potatoes; pierce several times with a fork. Place in foil-lined 15x10x1-in. pans; bake until tender, 60-70 minutes. Reduce oven setting to 350°., When cool enough to handle, cut a third off the top of each russet potato (discard top or save for another use). Scoop out pulp, leaving 1/2-in.-thick shells. In a bowl, mash pulp, adding 1/3 cup sour cream, milk, cheese, 2 tablespoons chives and 3/4 teaspoon salt. , Cut a thin slice off the top of each sweet potato; discard slice. Scoop out pulp, leaving 1/2-in. thick shells. Mash pulp with remaining sour cream, chives and salt., Spoon russet potato mixture into half of each russet and sweet potato skin. Spoon sweet potato mixture into other half. Return to pans. Bake until heated through, 15-20 minutes.

ULTIMATE TWICE BAKED POTATOES
I made these up years ago and have been making them ever since. They are always a big hit. These potatoes make a wonderful side dish for any meal and are terrific heated up the next day for lunch.

- Preheat oven to 350 degrees F (175 degrees C).
- Bake potatoes in preheated oven for 1 hour.
- Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
- Bake for another 15 minutes.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place potatoes and sweet potatoes in a large baking dish. Mix in onion. Add 1 to 1 1/4 cups vegetable both.

- Preheat oven to 300 degrees. Butter a medium gratin dish. Line bottom with a layer of Yukon Gold potatoes. Sprinkle with a little thyme and nutmeg. Season lightly with salt and pepper, and pour over a little cream. Add a layer of sweet potato slices, and repeat with the thyme, nutmeg, salt, pepper and cream. - Slice potatoes into 3/4 inch pieces. Slice onion thinly and split into rings.
- Combine potatoes and onions and microwave on high for 10 minutes, stirring once during cooking.
- Remove from microwave, stir through sour cream , ham, and 1/4 cup cheese.
- Place in greased baking dish and sprinkle remaining cheese over the top.
- Bake at 350°F for 45 minutes.
- This dish can be prepared ahead and refrigerated until ready for the oven. Quantities can be adjusted with potatoes and cheese as desired.
ONE POTATO TWO POTATO ONION BAKE
Oven baked potatoes with caramelized onion. This recipe can be made with simply one potato, two, or as many as will fit in your oven proof bakers. The recipe posted is for one to four whole potatoes. These also will re-heat nicely if there are leftovers. Baking time will vary depending on the size of potatoes. I always use a huge onion when making this so there is a lot of onion sauce.

- Preheat oven to 400°F.
- Use oven proof baking dish with lid large enough to leave some room around each potato. Disposable aluminum pans work well too if you cover with foil for first part of cooking.
- Peel potatoes and take thin slice off each one so they will sit flat. Cut each potato from top to bottom into 1/4 (or slightly thicker)slices.
- Cut up onion into medium sized dice.
- Place potato/es in baking dish, sprinkle diced onion all around base of them, pour broth over and season with salt and pepper to taste. Lay a long strip of butter over each potato and generously sprinkle paprika over them.
- Cover and bake for approximately 35 to 40 minutes depending on size of potatoes Remove lid and let potatoes brown and crisp up. The onions will caramelize in the reduced broth as they do.
- I'd love to hear your ideas on this recipe as far as other additions such as chopped jalapeno peppers or chopped fresh tomato!
