No-bake Two minute Pie, ok then, the kids can do this ! No oven with this hot summer sun is coming up ! I may be in my 80's but not old that old, the great-great-grand kids can show me a thing or two.

Steps:
- 1. In a large bowl, combine crushed pineapple with its syrup, dry pudding mix, and sour cream; mix until well combined. Spoon into pie crust and decorate top with pineapple slices and cherries; sprinkle with coconut.
- 2. Cover and chill at least 2 hours before serving.
- Note: Do not make the vanilla pudding according to package directions. Just add the dry pudding mix right in with the other ingredients.
TWO MINUTE CHILI PIE
This is a super quick meat pie for busy moms. It even lets you sneak some green beans into your kids. Cheddar may be substituted with Colby, Jack, or any other favorite hard cheese.

FRITO CHILI PIE
Frito Chili Pie is an easy weeknight meal, made in just 20 minutes! This recipe is a twist on the Sonic favorite that layers warm chili, on top of salty Fritos, with a delicious layer of melted cheese on top. Enjoy it on a plate, or in a bag of Fritos to make walking tacos.

Steps:
- Add the olive oil to a large skillet over medium-high heat.
- Add the diced onions and cook for 3-4 minutes.
- Add the garlic clove and cook for 1 minute.
- Add the ground beef and cook until the beef is browned.
- Drain any grease from the skillet.
- Add the entire can of chili beans (do not drain them!) and the chili seasoning.
- Combine all of the ingredients, reduce the heat on the stove to medium and cook for 5-7 minutes.
- Divide the Fritos corn chips between four separate plates.
- Spoon the chili over the chips.
- Top with cheddar cheese while the chili mixture is still hot so that the cheese will melt in.
- Add the optional toppings of your choice, like diced onions, shredded lettuce or hot sauce.

- In a large skillet, cook the beef, onion and garlic over medium heat until no longer pink; drain. Add seasonings and tomatoes. Simmer, uncovered, for 20 minutes. Add green pepper. Spoon 2 cups into an ungreased 2-1/2-qt. shallow baking dish; top with half of the beans. Repeat layers. , For topping, combine dry ingredients in a large bowl. Stir in cheese. Combine buttermilk, egg and oil; stir into dry ingredients just until moistened. Spread over filling. , Bake at 450° for 15 minutes or until topping is lightly browned and filling is bubbly.

SIMPLE MEXICAN CHILI PIE WITH GARLIC
For Garlic lover's. Not for the weak of heart. This dish can be served with a crisp, green salad. You can adjust the garlic amount to your taste preferences.

Steps:
- Heat two tablespoons Oil in a large pan. Cook the Onion until it starts to soften, then add the 3 crushed cloves of Garlic and cook for two more minutes.
- Stir in the Ground Beef and cook until browned.
- Add the spices, cook for an additional minute.
- Reduce heat to simmer. Stir in the Stock, Tomatoes, green Pepper, Tomato Paste and Oregano and simmer for 25 minutes, stirring occasionally.
- Add the beans and season with salt and pepper to taste.
- Preheat oven to 375.
- Transfer the chili to a large gratin or casserole dish.
- Heat the remaining three Tablespoons of oil, add the 6 thinly sliced cloves of Garlic and cook slowly to soften.
- Remove from the heat, brush the bread slices, front and back with the oil/garlic mixture.
- Arrange the treated bread slices on top of the chili.
- Scatter the remaining oil/garlic slices and the grated cheese over the top of the bread.
- Bake uncovered for 20 minutes.
