Apple Crisp for Two image

When all you need is a small dessert for two, whip up this homey apple crisp. Apples and the smell of cinnamon means fall baking at its best!

1/4 cup Gold Medal™ all-purpose flour
1/3 cup old-fashioned oats
2 tablespoons packed brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter, melted
2 medium apples, peeled, cored, diced (1 1/2 cup)
1 tablespoon packed brown sugar
1 tablespoon Gold Medal™ all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 tablespoon dried cranberries

Steps:

  • Heat oven to 350°F. Spray 2 (10-oz) ovenproof ramekins with cooking spray.
  • In medium bowl, mix all Topping ingredients except butter. With fork, mix in melted butter until crumbly; reserve.
  • In another medium bowl, mix Filling ingredients. Divide filling evenly between ramekins. Top each with half of the topping, mounding the topping (it will settle during baking).
  • Bake 25 to 30 minutes or until apples are tender and topping is brown. Serve warm.

This lovely apple dessert was in the Taste of Home magazine issue from December 2012/January 2013. The recipe originated with Char Morse from Michigan. She fixed this dish for the nearby Muskegon Rescue Mission, a homeless shelter, to help teach her children about homeless children.

3/4 c butter, softened
1 1/2 c packed brown sugar
2 tsp ground cinnamon
1/2 tsp salt
2 c all-purpose flour
2 c old-fashioned oats
********FILLING********
1 c sugar
3/4 c all-purpose flour
1/4 c packed brown sugar
1 tsp ground cinnamon
1/8 tsp ground nutmeg
3 large honeycrisp or golden delicious apples, peeled and sliced (about 6 cups)
3 tsp vanilla exract
1 Tbsp butter
optional toppings: vanilla ice cream, caramel sundae syrup and salted pecans

Steps:

  • 1. Preheat oven to 350°F. In a large bowl, beat the butter, brown sugar, cinnamon and salt, until crumbly. Add flour and oats; mix well. Press 3 cups oat mixture onto the bottom of a greased 9x13x2 inch baking dish.
  • 2. In another bowl, mix the first five filling ingredients. Add apples and vanilla; toss to combine. Spoon over oat layer. Dot with butter; sprinkle with remaining oat mixture.
  • 3. Bake, uncovered, for 45-50 minutes, or until golden brown and apples are tender. If desired, serve with toppings.

  • Combine oats, sugar, flour, cinnamon, salt, and butter in a mixing bowl. Mix with a pastry blender or fork till crumbly. Add chopped nuts if desired.
  • Press about a third of the mixture in the bottom of the prepared pan. Spread apples over crust and sprinkle with the 1/4 cup cinnamon sugar mixture.
  • Sprinkle remaining crumb mixture evenly over the top of the apples. Bake at 350° for 40-50 minutes or till apples are tender.
