SHRIMP COCKTAIL PLATTER
Enjoy this distinctive platter heaped with shrimp and served with a tangy cocktail sauce - a delicious seafood appetizer!

Steps:
- Rinse shrimp; pat dry. Line a 4-cup bowl with enough plastic wrap so that it hangs over edge of bowl. Arrange a layer of shrimp in a spiral pattern in bottom of bowl. Add additional layers, filling all spaces and pressing down, until bowl is full.
- Fold the plastic wrap over shrimp. Place two 1-pound cans on top of shrimp and refrigerate 1 hour.
- Meanwhile, in small bowl combine cocktail sauce, lime juice and chile powder; mix well. Cover and refrigerate until serving.
- Unwrap bowl. Pull plastic wrap away from top of bowl. To unmold, place a large platter upside down over bowl, then turn platter and bowl over; remove plastic wrap. Garnish the shrimp spiral with watercress and lemon slices. Serve with sauce.

- In a saucepan, heat soup and cream cheese over medium heat until cheese is melted, stirring frequently. Remove from the heat; set aside to cool., In a small microwave-safe bowl, sprinkle gelatin over water; let stand for 1 minute. Microwave on high for 40 seconds; stir. Let stand for 2 minutes or until gelatin is completely dissolved. Stir the gelatin mixture, celery, mayonnaise, lemon juice and onions into soup mixture. Fold in shrimp., Pour into a 5-cup ring mold coated with cooking spray. Cover and refrigerate for 8 hours or until set. , Invert onto a serving plate. Fill center with lettuce and shrimp if desired. Serve with crackers.

Steps:
- Oil or spray a 4 1/2 or 5 cup ring mold.
- Arrange shrimp in prepared mold; chill while preparing gelatin.
- Combine gelatin, sugar and salt; mix well.
- Add water; stir until gelatin dissolves.
- Add 1 1/4 cups cold water, vinegar, and lemon juice.
- Chill one cup of gelatin mixture until it begins to thicken; pour over shrimp.
- Chill.
- Add mayonnaise or salad dressing to remaining gelatin mixture; beat until smooth.
- Chill until mixture begins to thicken.
- Fold in vegetables; pour over shrimp layer carefully.
- Chill until firm.

- In a small bowl, combine soy sauce, cooking wine, and brown sugar or honey. Stir until well blended. Set aside.
- In a wok or wide skillet over high heat, heat oil. Add green onions, ginger, and garlic. Cook, stirring constantly, for about 30 seconds or until softened and aromatic.
- Add shrimp and cook, stirring frequently, for about 1 to 2 minutes or until color starts to change. Remove from pan and keep warm.

- Thaw the shrimp according to the directions on the package, then rinse with cold water and dry well with paper towels. Place shrimp on a large rimmed baking sheet, drizzle with 1 1/2 Tbsp olive oil and sprinkle on 1/2 tsp salt and 1/2 tsp black pepper. Stir to combine then arrange shrimp in a single layer.
- Bake at 450˚F for 8-10 min or until shrimp turn pink and are just cooked through.* As soon as they come out of the oven, test a shrimp for doneness then transfer all shrimp to a serving platter. If they stay on the hot baking sheet, they can get overcooked.
- Combine all the ingredients for the cocktail sauce and add horseradish and spicy sauce as you like (add more if you like cocktail sauce with a spicy touch and less if you prefer a mild sauce). Cover and refrigerate sauce and shrimp for at least an hour or overnight. Serve chilled.
