- Preheat the oven to 450 degrees F (230 degrees C).
- Cut potato into thick wedges. Mix olive oil, paprika, garlic powder, chili powder and onion powder together. Coat potatoes with oil-spice mixture and place on a baking sheet.
- Bake in the preheated oven, turning once or twice, until golden brown and crispy, about 45 minutes.

DOUBLE-FRIED FRENCH FRIES
Steps:
- Peel potatoes on the sides, leaving the ends with the skin on. Cut the potatoes into 1/3-inch slices and then slice into 1/3-inch sticks.
- Fill a large bowl with water and soak potatoes, submerged, for at least 30 minutes up to 24 hours. This will help remove the excess starch from the potatoes and keep them from oxidizing.
- Heat a heavy stock pot fitted with a deep-fry thermometer with oil to 325 degrees F.
- Remove potatoes from the water, and pat dry to remove excess water. Add 2 handfuls of potatoes to hot oil. There should be at least 1-inch of oil above the potatoes. Par cook until potatoes are light brown, 5 to 7 minutes. Remove potatoes, gently shaking off excess oil and let drain on rack. Repeat until all of the potatoes are par cooked.
- Raise heat of oil to 350 degrees F.
- Cook potatoes again, 2 handfuls at a time, until golden brown, about 2 minutes. Remove from oil, shake off excess oil, and season lightly in a bowl with salt and pepper. Repeat until all potatoes are cooked.

- Bring large pot of salted water to boil. Line large baking sheet with several layers of paper towels. Cut 1 potato lengthwise into 1/4-inch-thick slices. Stack 2 to 3 potato slices at a time and cut lengthwise into 1/4-inch-wide sticks. Cook potato sticks in boiling water just until beginning to soften, 3 to 4 minutes. Using slotted spoon or tongs, transfer potato sticks to paper-towel-lined baking sheet to drain. Repeat cutting, blanching, and draining remaining potatoes. Pat potato sticks dry with additional paper towels. DO AHEAD: Can be made 4 hours ahead. Let stand uncovered at room temperature.
- Pour enough canola oil into heavy large pot to reach depth of 4 inches. Attach deep-fry thermometer to side of pot; heat oil to 350°F. "EVERYTHING BAGEL" FRENCH FRIES

- In a heavy bottomed pot, heat the oil to 325 degrees F.
- Meanwhile, peel the potatoes and cut them into 1/2-inch-by-1/2-inch sticks. Rinse the starch off the fries by running them under cold water. Pour the fries onto a paper towel-lined baking sheet and pat dry.
- Drop the fries into the oil in small batches. (You want 1 to 2 inches of oil above the potatoes, so don't overcrowd.) Parcook the potatoes until they're light golden brown and almost cooked through, 5 to 7 minutes. Remove to a baking sheet lined with paper towels or a baking sheet with a roasting rack on top for draining. Repeat until all the potatoes are cooked.
- Rinse the blanched fries under cold water one more time, pouring them back onto a paper towel-lined baking sheet to dry. (If making the fries ahead of time, you can freeze the fries in a single layer on a parchment-lined baking sheet for 1 hour. The frozen fries can also be stored in a resealable plastic bag in the freezer up to 1 month.)
- Increase the temperature of the oil to 360 degrees F. When the oil is up to temp, carefully drop in 2 small handfuls of fries at a time to finish cooking them, allowing them to crisp up. This will take another 2 minutes and they will finish turning golden brown. Remove the fries from the oil to a medium bowl, seasoning well with salt and everything bagel spice immediately after they come out of the oil. Repeat with the remaining potatoes and serve immediately.

The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

- Spread potatoes on lightly greased jelly roll pan and bake at 375° for 15 minutes.
- Drizzle melted butter over (use more if needed to coat all of the potatoes).

PERFECT FRENCH FRIES

- IMPORTANT: Please be careful when frying with hot oil. Keep the pot on the backburner so little kiddos won't get hurt.In a nutshell, here it is: Soak potatoes, dry potatoes, fry potatoes, drain potatoes, then fry again! Peel and rinse the potatoes, then cut them into sticks by cutting the potato in four or five vertical pieces, then cutting each piece into sticks. Place them in a large bowl and cover with cold water, then allow them to soak for two or three hours. (You can also stick them in the fridge and let them soak for several hours or overnight.)When you're ready to make the fries, drain off the water and lay them on two baking sheet lined with paper towels. Blot them with paper towels to dry them. Heat a few inches of oil in a heavy pot to 300 degrees. In 3 or 4 batches, cook the potatoes for about 4 to 5 minutes per batch, or until the potatoes are soft. They should not be brown at all at this point! You just want to start the cooking process. CRISPY BAKED GARLIC MATCHSTICK FRIES

- Preheat oven to 450 degrees (232 C).
- Chop potatoes into matchsticks by halving, halving once more, then cutting into wedges and then strips.
- Line two baking sheets with foil or parchment paper (ensure the type you're using is safe up to 450 F / 232 C) and generously spray with nonstick spray.
- Add fries plus a generous drizzle of oil and sea salt, pepper, and garlic powder. Toss to coat.
- Arrange fries a single layer making sure they aren't touching too much. This will help them crisp up and cook evenly.
- Bake for 25-35 minutes, tossing/flipping at least once to ensure even baking.
- In the last 10 minutes of cooking, heat a small saucepan over medium heat and add 1-2 Tbsp olive oil (amount as original recipe is written // adjust if altering batch size) and the minced garlic. Sauté, stirring frequently, until just slightly brown to wake up the flavor.
- Remove from heat and set aside.
- When the fries are finished, remove from oven, sprinkle again with sea salt, and spoon the warm garlic on top. Toss to coat and serve immediately as is or with Whiskey BBQ Ketchup.
- You can also add more flavor by tossing the fries once more with the rosemary.

- Add 1 cup of kosher salt to a food processor. Put on the food processor lid, and drape a large, dampened kitchen towel over the top of the machine (this will keep salt dust from getting everywhere.)
