KAT'S TVP CHICKEN
Use TVP or veggie chicken, where you would normally use chicken. Can be used as wings, nuggets, drumsticks, in casseroles, pies etc.

Steps:
- In a saucepan, bring water, bouillon, sugar and seasonings to a boil. Add TVP and turn heat off. Let stand for 15 - 20 minutes. Drain any excess liquid.
- Saute soaked, drained TVP in a little oil until lightly browned. The TVP "Chicken" is now ready to be used in any dish in place of cooked chicken. Refrigerate unused portions. Can be frozen.
- Suggestions: Pot pies, gravies, soups, stews, pita bread sandwiches, a la kings, patties (mix with breadcrumbs), stir-fries, etc.
- NOTE: Large chunks of TVP do better simmered in the liquid, not just soaked. Simmer over low heat for 15 - 20 minutes. Liquid should be absorbed, and chunks should be tender. If chunks are not yet tender, add more water and bouillon.
- If you want to shape them, I would not drain, I just a little flour and shape.

BASIC TVP CRUMBLE RECIPE
TVP is such a simple and quick way to add a great deal of protein to your dish and get the meaty texture you desire for certain recipes. I've listed it out into a basic recipe with varying sections to flavor it in different ways.

Steps:
- Add water (and any of your selected spicing sets from above) to your sauce pan and set stove to high until boiling.
- Turn off stove, add the dried tvp crumbles, cover and let sit for 5 mn.
- Stir with a fork to fully combine any spices you added. Taste. Depending on what flavor you're going for, feel free to add any extra spicing from your chosen list. There is also the option of adding a tbsp of water or oil to moisten if you find it too dry.
- That's it! So incredibly easy!!!!

Steps:
- Pour the hot vegetable stock into a large bowl, and add the dried TVP chunks. You can add a little more water if needed, to ensure they're fully covered in liquid. Soak for at least 15 minutes, until soft - you may need to give them a stir every few minutes to ensure all the chunks are soaking properly, as they tend to float to the surface of the liquid.
- Drain the liquid from the TVP chunks, collecting a small amount of it in a bowl.
- Place the soaked TVP chunks in a food processor, and pulse a few times to chop the TVP into a mince-like texture.
- Transfer the TVP to another mixing bowl, and add the remaining ingredients (not including the oil). Add about a tablespoon of the soaking liquid, and mix thoroughly.
- Heat a dash of oil in a frying pan. Take a handful of the TVP mixture, and form it into a burger shape. I found I needed to squeeze it together quite firmly. Place in the pan, and repeat with some more of the mixture - I cooked 3 burgers at a time, making 6 in total. Cook the burgers for a few minutes each side, over a medium heat, until crispy and golden brown.
- Serve in buns with salad and sauce.

TVP "CHICKEN"
Textured vegetable protein can be flavored to taste like beef or chicken. This recipe would be 4 points for the entire recipe for Weight Watchers. I would consider this recipe core.

- Cook the TVP for about 10 minutes in vegetable broth on very low heat. Once they're ready, let them cool down a bit and then use your hands and squeeze out as much water as you can. They're kind of like little sponges. Set aside.
- Cook the fettuccine according to the instructions on the package. Cook the broccoli for about 3-4 minutes.
- Then make the vegan Alfredo sauce: Heat some oil in a large pan (you'll need this one later on to combine the sauce and the pasta) and sauté the onion and the garlic for about 3 minutes. Put in a blender with the rest of the ingredients and process until smooth.

- Bring vegetable broth to a boil. (Chicken-flavored veggie broth is ideal, such as the Imagine Foods No-Chicken Broth.) Pour over tvp, cover, and allow to sit for 10 minutes until fully absorbed.
- Add spices, nutritional yeast, Worcestershire sauce, and combine. Taste and adjust salt (you will need more or less depending on saltiness of your broth). Stir in 1/4 cup flour. Depending on the type of flour you use, you may need more to make a firm dough that holds together when pressed in your palm.
- Prepare a breading station: place remaining flour, breadcrumbs, and plant milk in separate shallow dishes. Season flour with a pinch of salt and pepper.

- Heat enough water in a big pot and toss the TVP slices in there once it's boiling. When the TVP slices are soft, drain them, press gently the water out of them. Leave this step out, if you use instead of the TVP slices other fake meats that don't need some cooking.
- In a small bowl mix all the ingredients for the egg-replacement (the mixture should be egg-like, add more or less water if you need to).
- Soften the rice wrappers by placing one by one in a shallow plate filled with water - they'll be soft in a few seconds to half a minute.
