1 teaspoon salt
1 lb purple potatoes or 1 lb russet potato
1/4 cup milk
2 tablespoons butter
1/16 teaspoon salt and pepper (to taste)

Steps:

  • fill a large saucepan two-thirds full of water. add the salt.
  • using a vegetable peeler, peel the potatoes. put a peeled potato on the cutting board. cut the potato in half lengthwise. holding a potato half cut side down, slice it lengthwise into 1-inch slices. now hold the slices and cut them in the opposite direction to make 1-inch pieces. be sure to keep your fingers clear of the knife blade. add the potato to the pan. repeat with the remaining potatoes.
  • put the pan on the stove and switch on the heat to high. bring the water to a boil and boil the potatoes, uncovered, until tender, about 10 minuites.( you can check by scooping out a potato cube with a slotted spoon, and poking the cube with a fork. it should go in easily) turn off the heat.
  • put a colander into the sink. remove the pan from the stove and pour the water and potatoes into the colander. be very careful; the steam from the boiling water can burn you.
  • return the potatoes to the pan. mash them with a potato masher. add the milk and butter. continue to mash until the butter and milk are mixed inches potatoes can be smooth or lumpy as you like. season with salt and pepper.

10 lbs fresh pork neck bones (rinsed)
3 quarts water
4 beef bouillon cubes or 4 chicken bouillon cubes
2 tablespoons seasoning salt
1 tablespoon black pepper
2 teaspoons crushed red pepper flakes
5 -6 potatoes (peeled and quartered)

Steps:

  • put everything in a large stock pot and simmer on low until meat is tender (about 2 hrs) add potatoes for the last 45mins or until you can easily pierce with a fork. serve with hot sauce and cornbread! oh I also call em naked bones because its hard to find meat on em! lol.

1 tablespoon chopped chives
1 tablespoon horseradish

Steps:

  • Boil potatoes until soft.
  • Drain water and put potatoes back in pan to evaporate excess water.
  • Mash potatoes, mixing in salt, sour cream, chives, and horseradish.
  • Serve immediately.

This recipe is a favorite of a local doctor that was printed in our town newspaper back in 1989. If made in extra small pieces, it makes a great appetizer or hors d'oeuvre. Larger sized pieces of potato make the perfect side dish tor most any entree.

1/2 cup flour
1/2 cup parmesan cheese, grated
1/2 teaspoon salt
1/4 teaspoon pepper
2 -3 lbs potatoes
1/2 cup butter

Steps:

  • Cut potatoes into wedges or slices, depending on size desired. You may leave skins on or peel them.
  • Mix flour and Parmesan cheese, salt and pepper in a plastic bag.
  • Add potato pieces to bag and shake to cover all surfaces.
  • Melt butter in a 9 x 13 baking pan.
  • Place potatoes in baking pan.
  • Bake at 350* for 60 minutes. Turn once at 30 minutes.

5 pork chops
4 large potatoes, peeled and sliced
1 yellow onion, sliced
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
1 tablespoon Worcestershire sauce
1 tablespoon French's mustard or 1 tablespoon grainy mustard
salt and pepper
1 (5 ounce) can evaporated milk

Steps:

  • In a bowl combine soups, Worcestershire, milk, mustard and salt and pepper.
  • In a baking dish layer pork chops, taters and onions.
  • Pour milk mixture over layers.
  • Place aluminum foil on top and bake at 350°F for one hour.
  • Remove foil and continue to bake for 30 minutes.

My son was looking at the Star Wars trailers for Revenge of the Sith tonight. So I thought I'd do a search for Star Wars Recipes and this is what I found on The Herald News site. Purple potatoes are the most fun to cook with as they turn a very light purple when cooked.

1 teaspoon salt
1 lb purple potatoes or 1 lb russet potato, peeled

Steps:

  • Bow hold the slices and cut across them in the opposite direction to make one-inch pieces.
