TUSKEN RAIDER TATERS - STAR WARS
My son was looking at the Star Wars trailers for Revenge of the Sith tonight. So I thought I'd do a search for Star Wars Recipes and this is what I found on The Herald News site. Purple potatoes are the most fun to cook with as they turn a very light purple when cooked.

Steps:
- Fill a large saucepan two-thirds full with water.
- Add the salt.
- Cut the potato in half length-wise.
- Holding a potato half cut-side down, slice it lengthwise into one-inch slices.
- Bow hold the slices and cut across them in the opposite direction to make one-inch pieces.
- Add the potato to the pan.
- Repeat with the remaining potatoes.
- Bring the water to a boil and boil the potatoes, uncovered, until tender, about 10 minutes.
- Drain potatoes into the colander.
- Return the potatoes to the pan.
- Mash with a potato masher.
- Add the milk and butter.
- Continue to mash until the butter and milk are mixed.
- Potatoes can be as smooth or as lumpy as you like.
- Season to taste with salt and pepper.

You can make an entire pot of smashed taters in the time it takes to bake a single potato! I like to use baby Yukon Golds because the skins are very thin and easy to mash. Make this to your taste-sometimes I add in garlic and chives or sub shallots for the green onions. Steps:
- Cut potatoes into wedges or slices, depending on size desired. You may leave skins on or peel them.
- Mix flour and Parmesan cheese, salt and pepper in a plastic bag.
- Add potato pieces to bag and shake to cover all surfaces.
- Melt butter in a 9 x 13 baking pan.
- Place potatoes in baking pan.
- Bake at 350* for 60 minutes. Turn once at 30 minutes.

- fill a large saucepan two-thirds full of water. add the salt.
- using a vegetable peeler, peel the potatoes. put a peeled potato on the cutting board. cut the potato in half lengthwise. holding a potato half cut side down, slice it lengthwise into 1-inch slices. now hold the slices and cut them in the opposite direction to make 1-inch pieces. be sure to keep your fingers clear of the knife blade. add the potato to the pan. repeat with the remaining potatoes.
- put the pan on the stove and switch on the heat to high. bring the water to a boil and boil the potatoes, uncovered, until tender, about 10 minuites.( you can check by scooping out a potato cube with a slotted spoon, and poking the cube with a fork. it should go in easily) turn off the heat.
- put a colander into the sink. remove the pan from the stove and pour the water and potatoes into the colander. be very careful; the steam from the boiling water can burn you.
- return the potatoes to the pan. mash them with a potato masher. add the milk and butter. continue to mash until the butter and milk are mixed inches potatoes can be smooth or lumpy as you like. season with salt and pepper.
