3 garlic cloves, minced
3 cans (15 ounces each) cannellini beans, rinsed and drained, divided
1/4 teaspoon pepper
1 carton (32 ounces) vegetable or reduced-sodium chicken broth
4 cups chopped fresh spinach (about 3 ounces)
1/4 cup thinly sliced fresh basil
Shredded Parmesan cheese, optional

Steps:

  • In a large saucepan, heat oil over medium heat. Add garlic; cook and stir until tender, 30-45 seconds. Stir in 2 cans of beans, pepper and broth., Puree mixture using an immersion blender. Or puree in a blender and return to pan. Stir in remaining can of beans; bring to a boil. Reduce heat; simmer, covered, 15 minutes, stirring occasionally., Stir in spinach and basil; cook, uncovered, until spinach is wilted, 2-4 minutes. If desired, serve with cheese.

1 pound dried cannellini beans
2 ounces thinly sliced prosciutto
1 yellow onion, quartered lengthwise
1 celery stalk, quartered crosswise
1 carrot, quartered crosswise
2 cloves garlic, peeled and lightly crushed
1 bay leaf
1 quart chicken stock
Finely ground sea salt, preferably gray salt
2 tablespoons extra-virgin olive oil
1/2 cup freshly grated Parmesan, optional
6 slices country-style bread, each 3/4-inch thick
Extra-virgin olive oil
Finely ground sea salt, preferably gray salt
1/4 cup extra-virgin olive oil
1 tablespoon minced garlic
1/4 to 1/2 teaspoon red pepper flakes
1/4 cup lightly packed fresh basil leaves
Sea salt and freshly ground black pepper

Steps:

  • Cook the beans: Rinse the beans, place in a saucepan, and add cold water to cover by 2 inches. Bring to a boil, cover, and remove from the heat. Let stand for about 20 minutes, then drain.
  • Return the beans to the saucepan along with the prosciutto, onion, celery, carrot, garlic, and bay leaf. Pour in the chicken stock and then add water as needed to cover the beans by 2 inches. Slowly bring to a simmer over medium-low heat. (If you heat them too fast, the skins may break.) Adjust the heat to maintain a bare simmer and cook, uncovered, until the beans are almost tender, 20 minutes or longer, depending on the age of the beans. Add salt, to taste, and continue cooking until the beans are tender but not mushy, about 20 minutes longer. Remove from the heat and let the beans cool in the liquid.
  • Meanwhile, make the bruschetta: Preheat a stove-top grill pan. Place the bread slices in a single layer on the grill pan and toast until each side is crisp and has grill marks, about 6 minutes. (You can also toast the bread in a 500 degrees F oven on a baking sheet.) Remove from the pan and lightly brush the bread slices on both sides with olive oil, then season lightly with salt. Let cool.
  • Strain the cooled beans and other solids through a sieve, reserving the liquid. In a food processor, puree the beans and solids in batches with 3 1/2 cups of the cooking liquid and 2 tablespoons olive oil. Using a rubber spatula, push the solids through a fine mesh sieve into a clean large saucepan (you should have about 6 cups of soup in the saucepan). Season, to taste, with salt and pepper, then bring to a simmer over medium heat, stirring occasionally.
  • Meanwhile, in a small skillet over high heat, warm the 1/4 cup olive oil. Turn on the fan above your stove. Add the garlic to the skillet and cook, stirring occasionally, until it begins to turn brown. Add the red pepper flakes and cook for a few seconds, then add the basil. Cook until basil wilts.
  • To serve, ladle the hot soup into warmed bowls. Top the soup with the basil mixture. Serve bruschetta with each bowl, adding Parmesan, if desired.

1 garlic clove, finely minced
1 shallot, finely diced
3 -4 cups fat free chicken broth or 3 -4 cups vegetable stock

1 (14 1/2 ounce) can white beans (cannellini or other)
1/2 cup whole wheat pasta shells or 1/2 cup shell pasta
1 teaspoon rosemary
3 cups Baby Spinach, cleaned and trimmed

1 dash crushed red pepper flakes

Steps:

  • In a large sauce pan, sautee the shallots & garlic in the olive oil.
  • Add broth, tomatoes, beans and rosemary to pot. Season with black and red pepper. Bring to boil.
  • Add pasta and cook 12 minutes. If the soup seems too thick for your liking add a bit more broth.
  • Add spinach and cook until wilted.

1 tablespoon olive oil
1 1/2 lbs chicken sausage (fully or partially cooked), sliced into 1/2" rounds
3/4 cup yellow onion, chopped small
3 carrots, diced
1 tablespoon garlic, minced
1 1/2 teaspoon salt
1 teaspoon pepper
1/2 teaspoon oregano
1/2 teaspoon smoked paprika
1/2 cup ground pecorino cheese
4 cups chicken stock, low sodium - divided
2 15ounce cans cannelloni beans, undrained
1/2 cup marinara (or tomato) sauce (or 2 plum tomatoes chopped)
4 cups loosely packed fresh spinach, roughly chopped or 4 cups kale, stems and center ribs discarded and leaves coarsely chopped

Steps:

  • Heat a large heavy bottomed saucepan over medium heat.
  • Add in the oil.
  • Once the oil shimmers add in the sausage.
  • Cook 5-6 minutes on one side, flip and continue cooking an additional 5 minutes or until the sausage browns.
  • Remove the sausage from the pot and set aside.
  • To the pot with the oil add in the onion and carrots cooking for 7 minutes or until the onions are starting to turn translucent and soft.
  • Add in the garlic and cook for 1 minute stirring.
  • Add in 1/2 cup of the stock, 1 teaspoon salt and pepper stirring.
  • Bring to a steady boil and cook for about 10 minutes or until the carrots are fork tender.
  • Add in the beans with its juice, the sausage, the rest of the stock, oregano, paprika and marinara sauce giving it a gentle stir.
  • Reduce the heat to medium low and simmer 15 minutes.
  • In batches add in the spinach and simmer 5 more minutes. If using kale, add now but cook for 12-15 minutes or until tender.
  • Remove from the heat and add in the cheese.
  • Taste for seasoning.

2 large Shallots (- peeled & small dice (about 1 1/2 cup))
3 medium Carrot (- peeled & small dice (about 3/4 cup))
3 medium Celery (- small dice (about 3/4 cup))
4 small cloves Garlic (- peeled & minced (SEE NOTES))
¼ tsp crushed Red Pepper Flakes (- more or less, to taste)
¾ tsp Kosher Salt (, plus more to taste)
heaping 1/4 tsp Ground Black Pepper (, plus more to taste)
½ cup White Wine
4 Cups Reduced sodium Chicken Stock (- (can substitute vegetable stock))
2 (14.5 oz) cans Cannellini Beans or Great Northern Beans (- UNDRAINED (SEE NOTES) )
2 sprigs fresh Rosemary
1 Bay leaf
1 Parmesan Cheese Rind
¼ - ½ Cup Heavy Cream (- (you can substitute Half and Half))
1 TBS fresh Parsley leaves (- chopped, or more for serving)
½ Cup Parmigiano Reggiano (, plus more for serving)

Steps:

  • Cook bacon: Place a large stock pot over medium heat and add bacon. Cook until bacon is crisp and cooked through. Use a slotted spoon to remove bacon to a paper towel lined plate, leaving bacon drippings in pan. Set aside.
  • Remove bacon - leave fat: You want about 1 tablespoon of bacon drippings in the pot, if you do not have enough fat, add extra virgin olive oil to pan until you have about 1 tablespoon of liquid (just eyeball this).
  • Saute vegetables: Increase heat to medium high. Add shallots, carrot, and celery to pot. Cook, stirring frequently until softened, about 3 minutes. Add garlic and crushed red pepper flakes, salt and pepper; cook until aromatic, 30 seconds - 1 minute.
  • Deglaze the pan: Add white wine to deglaze pan, scraping up brown bits from the bottom of the pan. Cook until wine is reduced to 2 tablespoon, about 3-4 minutes.
  • Add liquid, beans + herbs: Add the chicken stock, beans with their liquid, rosemary sprigs, bay leaf and parmesan rind (if using).
  • Boil, then simmer: Increase heat to high and bring soup to a boil. Immediately reduce heat to a gentle simmer. Cover and simmer for 15-18 minutes.
  • Add bacon, cream, parsley + parmesan: Use tongs to remove the rosemary sprigs and bay leaf. (I leave in the parmesan rind, but you can remove and discard it.) Add in the bacon, 1/4 cup of cream, chopped parsley leaves and grated parmesan. Taste and adjust for seasoning. Taste the soup, add more cream for a richer taste and texture.
  • Optional To Thicken Soup: (You can serve the soup as is for a brothy consistency, or you can thicken the soup with one of the two methods below.) For an ultra creamy, bisque-like texture, puree the entire soup. 1. Use an Immersion blender to blend some of the soup until desired consistency is reached. Or, use a potato masher to mash some of the beans. Blend about 1-2 cups of the soup for a slightly creamy yet rustic texture.2. Stand Mixer: Remove 1-2 cups of the soup to a stand mixer. Puree the soup and then add the mixture back to the pot. , add back in removed beans.
  • To serve: Ladle soup into serving bowls. Garnish with more grated parmesan cheese and fresh herbs. Drizzle with a bit of good-quality extra virgin olive oil for a flavorful finish. Serve and enjoy!

4 ounces pancetta (or bacon if you can't find pancetta)
1 onion (finely diced)
3 cloves garlic (minced)
1 teaspoon dried thyme
1 teaspoon dried basil
½ teaspoon dried rosemary
2 tablespoons tomato paste
3 cups chicken stock
28 ounce canned tomatoes
2 cups shredded (cooked chicken)
28 ounce canned white cannellini beans (drained and rinsed)
4 ciabatta rolls (or 1 ciabatta baguette,sliced)
olive oil
5 ounces fresh baby spinach (cleaned)
1 teaspoon salt
freshly ground black pepper
block of Parmesan cheese

Steps:

  • Place pancetta in a large stockpot and cook until some of the fat has been rendered out - about 6 to 8 minutes. Remove the pancetta with a slotted spoon and set it aside.
  • Add the onion to the stockpot and cook until the onion starts to soften - about 6 minutes. Add the garlic, thyme, basil, rosemary and tomato paste, stir to blend well, and cook for another minute or two. Add the chicken stock, tomatoes, shredded chicken and beans to the pot and stir well.
  • Simmer the soup for 30 minutes. While the soup is simmering, pre-heat a skillet over medium heat. Add olive oil and toast the cut side of the ciabatta rolls or slices in the skillet until nicely browned.
  • Remove the soup from heat and stir in the spinach. Season to taste with salt and pepper. Serve the soup with some of the cooked pancetta sprinkled on top, some shards of Parmesan cheese (made by peeling the cheese with a potato peeler) and the toasted ciabatta bread.
