I had some fresh basil on hand and needed to find a use for it. Peering into my pantry, I saw a bag of cornmeal and figured that cornbread with a Tuscan twist would be delicious. During peak tomato season, I substitute the canned tomatoes with fresh-just remove the skins, seed and finely dice.-Michelle Anderson, Eagle, Idaho

Yield 8 servings (1-1/4 cups butter).

Number Of Ingredients 20

2 ounces sliced pancetta or bacon strips, finely chopped
1 to 2 tablespoons olive oil, as needed
1-1/2 cups white cornmeal
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, room temperature
1 cup buttermilk
1/4 cup minced fresh basil
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
BUTTER:
1 cup butter, softened
2 tablespoons olive oil
1/3 cup shredded Asiago cheese
2 tablespoons thinly sliced green onion
1-1/2 teaspoons minced fresh basil
1/2 teaspoon minced fresh oregano
1 garlic clove, minced, optional

Steps:

  • Preheat oven to 400°. In a 10-in. cast-iron or other ovenproof skillet, cook pancetta over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Reserve drippings in skillet. If necessary, add enough oil to measure 2 tablespoons drippings., In a large bowl, whisk cornmeal, flour, baking powder and salt. In another bowl, whisk eggs, buttermilk, basil and garlic until blended; stir in tomatoes. Add to flour mixture; stir just until moistened. Fold in olives and pancetta., Place skillet with drippings in oven; heat 2 minutes. Tilt pan to coat bottom and sides with drippings. Add batter to hot pan. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool in pan on a wire rack., Meanwhile, in a small bowl, beat butter until light and fluffy. Beat in oil until blended; stir in cheese, green onion, basil, oregano and, if desired, garlic. Serve 1/2 cup butter mixture with warm cornbread (save remaining butter for another use).

1 cup all-purpose flour
1 cup polenta
2 tablespoons sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
2 large eggs
1 cup buttermilk
About 1/4 cup (1/8 lb.) cooled melted butter or margarine

Steps:

  • In a bowl, mix flour, polenta, sugar, baking powder, and salt. In another bowl, beat eggs to blend with buttermilk and 1/4 cup butter; pour into flour mixture. Stir batter until evenly moistened.
  • Scrape batter into a buttered 8-inch square pan and spread level.
  • Bake in a 400° oven until cornbread is browned, springs back when lightly pressed in the center, and begins to pull from pan sides, 20 to 25 minutes. Use hot or cool.

1 1/2 cups cornmeal
1/2 cup flour
2 tablespoons sugar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons olive oil
1 3/4 cups half-and-half or 1 3/4 cups light cream
2 eggs, lightly beaten
3/4 cup pancetta, small dice (cooked crisp and drained) or 9 slices bacon, chopped (cooked crisp and drained)
1 (8 ounce) jar sun-dried tomatoes, chopped (packed in oil)
1 tablespoon shallot, chopped
1 tablespoon fresh rosemary, chopped
butter, softened (optional)

Steps:

  • Preheat oven to 375°F In a medium bowl combine cornmeal, flour, sugar, baking soda, and salt; set aside. Add 1 tablespoon oil to a 10 inch cast iron skillet or 9-inch round cake pan and place in oven for 5 minutes. Remove from oven and swirl oil around to coat bottom and sides.
  • Meanwhile, in a large bowl combine half-and-half, eggs, and remaining oil. Crumble in bacon, then stir in tomatoes, shallot, and rosemary. Add dry cornmeal mixture and stir just until moistened. Pour batter into skillet or cake pan. Bake 30 to 35 minutes or until a wooden toothpick comes out clean.
  • Cut into wedges and serve with softened butter.

Steps:

  • Add ingredients to your bread machine in the order recommended by your manufacturer (for mine, it is the order as given above) but, DO NOT add in the eggs in any order in which they come directly in contact with the warm water, or they will cook (that is why I add them in between the flour and the polenta).
  • Use the regular white bread setting.

In a small skillet, saute the shallot in the butter or reserved tomato oil until softened. Remove from heat and set aside.

In a small bowl, mix the eggs, sour cream, corn with its liquid, sautéed shallots and butter or oil, chopped sun-dried tomatoes, and cheese with a wooden spoon. Add to the dry ingredients and stir just until all the ingredients are moistened and thoroughly blended. Take care not to over mix; the batter will be thin. If you are using skillet to bake the cornbread, place the greased skillet in the oven for 5 minutes to preheat.
  • Pour batter into prepared baking dish or into the hot 10-inch skillet. Bake in the center of the oven for about 30 to 35 minutes, until the cornbread is golden around the edges and a cake tester inserted into the center comes out clean. Let stand for 15 minutes before cutting into thick wedges to serve.
