1 (15-ounce) can low-sodium canellini beans, drained and rinsed
1 tablespoon olive oil
1/2 large onion, diced (about 1 cup)
2 carrots, diced (about 1/2 cup)
2 stalks celery, diced, (about 1/2 cup)
1 small zucchini, diced (about 1 1/2 cups)
1 clove garlic, minced
1 tablespoon chopped fresh thyme leaves (or 1 teaspoon dried)
2 teaspoons chopped fresh sage leaves (or 1/2 teaspoon dried)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
32 ounces low-sodium chicken broth or vegetable broth
1 (14.5-ounce) can no salt added diced tomatoes
2 cups chopped baby spinach leaves
1/3 cup freshly grated Parmesan, optional

Steps:

  • In a small bowl mash half of the beans with a masher or the back of a spoon, and set aside.
  • Heat the oil in a large soup pot over medium-high heat. Add the onion, carrots, celery, zucchini, garlic, thyme, sage, 1/2 teaspoon of salt and 1/4 teaspoon of pepper, and cook stirring occasionally until the vegetables are tender, about 5 minutes.
  • Add the broth and tomatoes with the juice and bring to a boil. Add the mashed and whole beans and the spinach leaves and cook until the spinach is wilted, about 3 minutes more.
  • Serve topped with Parmesan, if desired.

1 tablespoon olive oil
6 medium sweet onions, thinly sliced (about 6 cups)
1/2 teaspoon minced fresh rosemary
1/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
6 cups beef broth
1/2 cup white wine or additional beef broth
1 tablespoon balsamic vinegar
1 cup grape tomatoes, quartered
1/2 cup fresh basil leaves, thinly sliced
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
5 slices day-old French bread (1-1/2 inches thick), toasted
5 slices part-skim mozzarella cheese

Steps:

  • In a Dutch oven over medium heat, melt butter with the oil. Add the onions, rosemary, 1/8 teaspoon salt and 1/8 teaspoon pepper. Cook for 30 minutes or until lightly browned, stirring occasionally. Add the broth, wine and vinegar; heat through., Meanwhile, in a small bowl, combine the tomatoes, basil, Parmesan cheese, garlic powder and remaining salt and pepper. Spoon tomato mixture over bread slices; top with mozzarella. Place on a baking sheet., Broil 3-4 in. from the heat for 2-3 minutes or until cheese is melted. Ladle soup into bowls; top with toast. Serve immediately.

I use this terrific, nourishing soup as a filling weeknight supper. Use any combination of onions you like, making it great all year long: yellow onions, red onions, leeks, shallots, cipolline, even green onions. And when it is cold outside, I caramelize the onions longer for deeper flavor.

8 cups thinly sliced onions

I've wanted to make carabaccia ever since I found out it was the ancient ancestor of French onion soup. They say that when made with vegetable broth, it was the favorite soup of vegetarian Leonardo da Vinci. Now you can add these interesting facts to your dinner party conversation repertoire. As for the cinnamon, the safe play is to not add any and live happily ever after. But in tiny amounts it lends a mysterious, warming background note.

4 pounds red onions
2 tablespoons olive oil
1 tablespoon kosher salt
3 leaves sage
freshly ground black pepper to taste
ground cinnamon
¼ cup finely ground almonds
3 tablespoons red wine vinegar, or to taste
5 cups beef broth, or more as needed
3 thick slices Italian bread, halved
2 tablespoons olive oil, or to taste, divided
3 leaves sage, or to taste, sliced into thin strips
3 tablespoons grated Parmesan cheese, or to taste, divided

Steps:

  • Trim ends off onions; halve and peel. Cut onions into thin slices lengthwise along the grain.
  • Heat olive oil in a very large skillet over medium-high heat. Add onions and kosher salt. Cook and stir until starting to turn translucent, 5 to 7 minutes. Reduce heat to medium and continue to cook, stirring occasionally, until very soft and sweet, about 1 hour.
  • Add sage leaves, pepper, cinnamon, and almonds to the onions. Cook and stir until fragrant, 3 to 5 minutes. Transfer mixture to a soup pot. Pour in red wine vinegar and broth. Bring to a simmer over high heat. Reduce heat to medium-low and simmer until flavors blend, about 30 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a small baking sheet with aluminum foil.
  • Place Italian bread on the baking sheet. Drizzle some olive oil over the bread; sprinkle sliced sage and some Parmesan cheese on top.
  • Toast in the preheated oven until browned, about 15 minutes.
  • Ladle soup into serving bowls and top each with a piece of toast. Drizzle remaining olive oil over the toast and sprinkle remaining Parmesan cheese on top. Dunk toast into the soup and let soak for a few minutes before serving.

Tuscan White Onion Soup with Crostini image

1/2 pound butter
4 large Spanish onions, sliced
8 cloves garlic, shaved
8 shallots, sliced
1 fresh thyme sprig
1 teaspoon cardamom
1 quart fresh chicken stock
Sea salt and fresh pepper, to taste
Balsamic Reduction, for garnish
Crostini, for garnish, recipe follows
Shaved Parmigiano-Reggiano cheese, for garnish
Unsweetened whipped cream, for garnish
1 bottle balsamic vinegar
1 baguette, cut in half and sliced lengthwise into 1/4-inch thick slices
Extra-virgin olive oil
Cracked black peppercorn and sea salt to taste
Parmigiano Reggiano cheese, grated

Steps:

  • Melt butter and sweat onions, garlic, shallots until translucent. Add thyme and cardamom. Cover with chicken stock and bring to a boil. Season with salt and pepper. Simmer until tender. Blend really well in a blender. Strain through a chinoise. Adjust seasoning and texture.
  • For the Balsamic Reduction: In a saucepot over medium-high heat, reduce 1 bottle balsamic vinegar until it's the consistency of syrup.
  • For the Crostini: Preheat the oven to 300 degrees. Line a baking sheet with parchment paper and brush with extra-virgin olive oil. Season the pan with salt and pepper. Place the bread slices on the baking sheet and season the bread with extra-virgin olive oil, salt and pepper to taste. Sprinkle the bread with grated Parmesan cheese. Transfer the slices to the oven and bake until golden, about 5 minutes.
  • To serve, heat soup in a separate pot, whisk in whipped cream. Ladle into bowl. Garnish with Balsamic Reduction, shaved Parmesan cheese and Crostini.

1 tablespoon olive oil
6 garlic cloves, crushed plus
6 additional garlic cloves, to be used later
2 leeks, thoroughly washed and sliced
1 kg yellow onions (Americans) or 1 kg brown onion (Australians)
2 (400 ml) cans tomatoes, drained and diced
6 cups chicken stock (or vegetable)
3 tablespoons chopped Italian parsley (flat leaf)
salt
fresh ground black pepper, to taste
2 -3 tablespoons balsamic vinegar
butter (optional)
3 slices day-old sourdough bread, cubed, to form croutons
pecorino cheese, grated

Steps:

  • Heat the oil in a non-stick pot and sauté the garlic, leek and onions for about 30 minutes until golden brown, regularly stirring and scraping the bottom of the pot, turning down the heat after about 10 minutes. (You may need more oil if you are not using a non-stick pot).
  • Add the tomatoes, stock, parsley, seasonings and balsamic vinegar. Mix well and bring to the boil. Then simmer for about 20 minutes.
  • Preheat the oven to 180°C.
  • While the soup is cooking, heat a little oil, butter and the remaining 6 cloves of garlic in a heavy-bottomed pan (that can go into the oven).
  • Add a couple of handfuls of the day-old bread, cubed and toss until well coated. Then cook in the oven until golden.
  • Transfer the croutons to a bowl and toss with a good handful of pecorino whilst still hot.
  • To serve, ladle the soup into individual bowls and top with the croutons and an extra sprinkling of cheese.

1/4 cup diced pancetta or prosciutto (about 3 ounces)
2 cups chopped celery (3 large ribs)
1 tablespoon chopped garlic (3 cloves)
1 cup roughly cut carrots (about 1 large carrot)
1/3 cup extra virgin olive oil, more for brushing toast
1 tablespoon minced rosemary
1 tablespoon minced sage
1 cup white wine
6 large red onions (3 1/2 pounds) sliced
1 1/2 teaspoons coarse salt, more to taste
1 pinch crushed red pepper
1 tablespoon balsamic vinegar
1 1/2 quarts vegetable stock, chicken stock or water
1 teaspoon garam masala or equal parts ground cinnamon, clove and mace
1 1/2 cups shelled fresh or frozen and defrosted green peas
black pepper to taste
2 tablespoons white wine vinegar
6 large eggs
6 slices Tuscan bread
1/2 cup grated Parmigiano-Reggiano or pecorino cheese

Steps:

  • Purée pancetta, celery, garlic and carrots in a food processor until mixture is a coarse paste.
  • In an eight-quart pan, heat 1/3 cup olive oil, rosemary and sage over medium-high heat for two minutes. Add paste, turn heat to medium-low, and cook, stirring frequently, for five minutes. Add white wine, and simmer 10 minutes more.
  • Add onions, salt and red pepper, and sauté over low heat, stirring frequently, until onions are very soft and some have turned golden brown, about 20 minutes.
  • Add balsamic vinegar and stock, and simmer 25 minutes over low heat. Add spice mixture and peas, and cook 5 minutes more. Season with salt and black pepper to taste.
  • While soup simmers, bring 2 cups water and the white wine vinegar to a boil in a small saucepan. Reduce heat until no bubbles break surface of water. Crack two eggs into water, and cook 4 minutes. Gently spoon eggs out of water, and reserve in a shallow dish with water in it. Bring water back to a boil, and repeat process until all the eggs are poached.
  • Lightly toast bread. Brush each slice with olive oil, and sprinkle with two teaspoons Parmigiano-Reggiano. Toast again or broil until cheese has melted, about two minutes.
  • Lay a slice of toast in each of six deep soup bowls, and top with a poached egg. Ladle soup over egg, sprinkle with remaining cheese, and serve.

1/2 cup pancetta, diced
1 tablespoon olive oil
4 large white onions, thinly sliced
3 cloves garlic, minced
3 3/4 cups reduced-sodium chicken broth
1 teaspoon dried parsley flakes
salt & fresh ground pepper
4 slices ciabatta or 4 slices other Italian bread
3 tablespoons soft butter
3/4 cup coarsely grated swiss cheese

Steps:

  • Saute pancetta in a large sauce pan over medium heat until it starts to brown, remove with a slotted spoon and reserve.
  • Add the oil and onions and cook over high heat 4 minutes.
  • Stir in garlic, reduce heat to low, cover and cook until onions are soft and golden brown.
  • Add chicken broth, parsley, salt and pepper bring to a boil, reduce heat and simmer uncovered for 15 minutes.
  • While soup is cooking, heat broiler and toast bread on both sides.
  • Butter one side of the toast, sprinkle with cheese and cut into bite size pieces.
  • To serve, add pancetta, ladle into 4 soup bowls and top with the toasted cheese croutons.
