Bruschetta Dip in an Italian Bread Bowl image

Provided by Food Network Kitchen

Categories     appetizer

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 14

3 tablespoons extra-virgin olive oil, plus more for drizzling
1 small onion, finely chopped
1 small bulb fennel, trimmed, cored and finely chopped
1 small Japanese eggplant, finely chopped
2 cloves garlic, finely chopped
Pinch of red pepper flakes
Kosher salt and freshly ground pepper
1 pint grape or cherry tomatoes, halved
1/2 cup pitted kalamata olives, halved
1 tablespoon red wine vinegar
1 round or oval loaf Italian peasant bread (about 8 inches)
1/2 cup fresh basil, roughly chopped
1/4 cup grated ricotta salata cheese, plus more for topping
Crackers and/or crudités, for serving

Steps:

  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onion, fennel and eggplant and cook, stirring occasionally, until tender, 10 to 12 minutes. Stir in the garlic, red pepper flakes, 1 teaspoon salt and a few grinds of pepper. Add 1/4 cup water and cook, stirring, until the water is absorbed, about 2 minutes.
  • Stir in the tomatoes and cook, stirring occasionally, until slightly softened, 3 to 5 minutes. Remove from the heat and stir in the olives and vinegar. Let cool about 20 minutes, stirring occasionally.
  • Meanwhile, preheat the oven to 400 degrees F. Using a small serrated knife, hollow out the bread loaf, leaving a 1/2-inch-thick shell. Slice the cut-out bread into pieces and arrange on a baking sheet; drizzle with olive oil and season with salt and pepper. Bake until slightly toasted, 5 to 8 minutes.
  • Stir the basil and cheese into the vegetable mixture; season with salt and pepper. Fill the loaf with the dip and top with more cheese. Drizzle with olive oil and serve with the toasted bread and crackers and/or crudites.

  • Start by chopping the tomatoes into even sized pieces and place in a medium sized bowl. With your hands (don't use a knife), rip the basil leaves into small pieces. Gently stir together the tomatoes and basil and then form a dome with the mixture.
  • Drizzle about 2 tablespoons olive oil over the dome and then sprinkle the salt on top. Do not stir in the olive oil or salt. Set aside, uncovered, at room temperature for 45 minutes to an hour to marinate (or as long as you have!)
  • Slice the bread and then brush 2-3 tablespoons of oil on the tops of the slices. Toast the bread slices on a charcoal grill (oiled side down) until golden-brown and lightly marked with grill lines OR: Set your oven rack about 6 inches from the heat source and preheat the oven's broiler to high. Place bread (oiled side up) on baking sheet and broil for 1-2 minutes (watch carefully) and then remove from the oven.
  • Slice a raw garlic clove in half. Gently rub the grilled slices of bread (both sides) with the cut end of a raw garlic clove.

  • Finely dice the tomatoes and combine them with the oil, salt, pepper, and ribboned (or finely chopped) basil. For a super easy bruschetta - use a mandoline or sharp knife to evenly slice the tomatoes instead of removing the seeds and dicing them.
  • Slice the bread of your choice to around ½-inch in thickness. Then lightly brush each slice with olive oil.
  • Using a garlic clove, rub it over the toasted bread slices (both sides) until well coated. While the bread is warm, the garlic practically melts into it. Feel free to adjust the amount you use to personal preference (I use 1 clove per toast almost).Alternatively, you can skip this step and add minced garlic to the tomato bruschetta mixture in step 1 (allowing it to marinate).
  • If you have tomato slices, arrange them over the bread and drizzle with a bit of olive oil, salt, pepper, and some freshly chopped basil. For the diced tomato, spoon over some of the topping on each bread slice and then, optionally, top with a little additional olive oil or a drizzle of balsamic vinegar or glaze. Serve immediately and enjoy!

  • Put all of the white bean dip ingredients minus the olive oil into a food processor. Turn the food processor on and whip up all the ingredients. Halfway through, add the olive oil slowly from the top opening. Continue whipping until all the ingredients are pulverized and incorporated. Taste test. Does it need another squirt of lemon? More salt? Do your thing and add it in. Store in the fridge until ready to use.
  • Combine all of the bruschetta ingredients. Mix well and store in the fridge until ready to use. This dip is best served cold, so putting the white bean dip and the bruschetta into the fridge for an hour is perfect. However you can serve at room temperature.
  • Turn the oven to broil. Arrange the bread on a baking pan. Drizzle with olive oil and sprinkle with salt. Broil until golden and remove from oven. Rub the cut piece of garlic onto the bread. Arrange on a platter.
  • Add the white bean dip to a bowl. Pour the bruschetta along the outside of the dip in a circle. Serve with the bread. Enjoy!
