- Stir tomatoes, basil, 3 tablespoons olive oil, red onion, garlic, red wine vinegar, and pepper together in a bowl; let tomato mixture stand at room temperature for 15 minutes, then place in the refrigerator to marinate for 45 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Brush one side of each slice of bread with remaining olive oil. Place bread slices, oiled-side-up, onto a baking sheet.
- Broil until golden brown, about 2 minutes; remove from oven. Spoon tomato mixture evenly over the top of toasted bread slices; drizzle balsamic vinegar evenly over tomato mixture. Serve immediately.

BRUSCHETTA DIP IN AN ITALIAN BREAD BOWL

- Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onion, fennel and eggplant and cook, stirring occasionally, until tender, 10 to 12 minutes. Stir in the garlic, red pepper flakes, 1 teaspoon salt and a few grinds of pepper. Add 1/4 cup water and cook, stirring, until the water is absorbed, about 2 minutes.
- Stir in the tomatoes and cook, stirring occasionally, until slightly softened, 3 to 5 minutes. Remove from the heat and stir in the olives and vinegar. Let cool about 20 minutes, stirring occasionally.
- Meanwhile, preheat the oven to 400 degrees F. Using a small serrated knife, hollow out the bread loaf, leaving a 1/2-inch-thick shell. Slice the cut-out bread into pieces and arrange on a baking sheet; drizzle with olive oil and season with salt and pepper. Bake until slightly toasted, 5 to 8 minutes.
- Stir the basil and cheese into the vegetable mixture; season with salt and pepper. Fill the loaf with the dip and top with more cheese. Drizzle with olive oil and serve with the toasted bread and crackers and/or crudites.

- Combine the diced tomato with fresh basil, dried oregano, a pinch of salt, 1 to 1 1/2 tablespoons olive oil, oregano, a pinch of salt, and a splash (1 teaspoon) of balsamic vinegar. Chill.
- Slice the baguette into 1/4 to 1/2 inch slices. Cut off the end of the garlic clove and rub the garlic onto each side of each piece of bread. Drizzle both sides of the sliced bread with a little olive oil (or use a brush to brush it on).
- Toast on a grill or in a hot skillet until browned on both sides.

I created this on a whim and served it at my annual 2007 Christmas hors d'oeuvres party for my friends. I was planning to make traditional bruschetta but was worried it would get cold or soggy before all my guests arrived. It's simple and a convenient way to serve bruschetta in a party setting.

- Preheat oven to 350°F.
- Combine tomatoes, garlic, basil, oregano, onion, olives, oil and 1 tbs. parmesan cheese in a small casserole dish. With back of spoon, smooth down top of mixture until flat.
- Sprinkle 1/2 cup parmesan cheese evenly over top.
- Bake at 350 F for 10-12 minutes or until heated through.
- While this is baking, slice bread and arrange as desired. If desired, lightly toast the bread before arranging.
- Turn off oven heat and preheat broiler to medium heat. Place tomato mixture 2-3 inches under broiler for 1-2 minutes or until cheese is lightly browned.
- Serve immediately, allow guests to spoon the mixture onto pre-sliced bread.

- Put all of the white bean dip ingredients minus the olive oil into a food processor. Turn the food processor on and whip up all the ingredients. Halfway through, add the olive oil slowly from the top opening. Continue whipping until all the ingredients are pulverized and incorporated. Taste test. Does it need another squirt of lemon? More salt? Do your thing and add it in. Store in the fridge until ready to use.
- Combine all of the bruschetta ingredients. Mix well and store in the fridge until ready to use. This dip is best served cold, so putting the white bean dip and the bruschetta into the fridge for an hour is perfect. However you can serve at room temperature.
- Turn the oven to broil. Arrange the bread on a baking pan. Drizzle with olive oil and sprinkle with salt. Broil until golden and remove from oven. Rub the cut piece of garlic onto the bread. Arrange on a platter.
- Add the white bean dip to a bowl. Pour the bruschetta along the outside of the dip in a circle. Serve with the bread. Enjoy!
