BEEF TENDERLOIN WITH SCALLION SALSA VERDE

Number Of Ingredients 10

One 3-pound center cut tenderloin roast, brought to room temperature 30 minutes before cooking
1 1/2 teaspoons kosher salt
1 1/2 teaspoons coarse ground black pepper
2 tablespoons olive oil
Flake salt, to finish
4 small bunches scallions or ramps, trimmed
1 1/2 teaspoons kosher salt
2 teaspoons plus 1/3 cup olive oil
2 tablespoons whole-grain mustard
2 1/2 tablespoons apple cider vinegar

Steps:

  • For the tenderloin: Preheat the oven to 400 degrees F.
  • Dry the tenderloin well with paper towels and sprinkle evenly with the salt and pepper. Heat a large ovenproof skillet over medium-high heat. Add the oil to the hot skillet followed by the tenderloin. Cook, turning every 4 minutes, until the tenderloin is an even, deep golden brown, about 12 minutes. Place the skillet in the oven until an instant-read thermometer reads 120 degrees F, or about 30 minutes for medium-rare . Remove to a platter to rest for 10 minutes before slicing.
  • For the sauce: Meanwhile, preheat a grill for cooking at medium-high heat.
  • Sprinkle the scallions with 1 teaspoon salt and 2 teaspoons olive oil. Place on the hot grill and cook until wilted and slightly charred, about 3 minutes per side. (Place a pan lid on top of the scallions if they are not browning enough.) Remove the charred scallions to a cutting board and roughly chop. Add the charred scallions to a bowl along with the mustard, vinegar, remaining 1/3 cup olive oil and remaining 1/2 teaspoon salt. Stir to combine.
  • Sprinkle the tenderloin with flake salt and serve with the scallion sauce.

ROASTED BEEF TENDERLOIN WITH PEPERONATA



Roasted Beef Tenderloin with Peperonata image

One 2 1/2- to 3-pound beef tenderloin, trimmed and tied
2 teaspoons kosher salt
2 tablespoons olive oil
2 sprigs fresh rosemary
3 cloves garlic, smashed and peeled
1/2 teaspoon anchovy paste
1 small red onion, halved and thinly sliced
1 red pepper, thinly sliced
1 yellow pepper, thinly sliced
3/4 teaspoon kosher salt
1/4 cup chopped kalamata olives
2 tablespoons white balsamic vinegar
1 tablespoon capers, drained
1 teaspoon chopped fresh oregano
Coarse or flaky salt to finish, optional

Steps:

  • For the tenderloin: Preheat the oven to 400 degrees F. Remove the meat from the refrigerator 30 minutes before cooking.
  • Heat a large skillet over medium-high heat. Dry the meat well and sprinkle with the salt. Add the oil to the pan along with the rosemary sprigs. Add the meat and sear until deep golden brown all around, 3 to 4 minutes per side. Remove the meat to a rimmed baking sheet fitted with a baking rack. Roast until an instant-read thermometer inserted in the thickest part reads 125 degrees F, 35 to 50 minutes. Allow the meat to rest for 15 minutes before slicing.
  • For the peperonata: Meanwhile, place the skillet that you seared the meat in over medium heat. Add the garlic and anchovy paste and cook, stirring with a wooden spoon, to bring out the flavors, for 1 minute. Add the onion and cook for 2 minutes. Add the peppers and salt and cook, stirring occasionally, until the onions are caramelized and the peppers are soft and beginning to brown, about 6 minutes. Stir in the olives, vinegar, capers and oregano. Remove from the heat.
  • Spoon the peperonata onto a platter. Slice the tenderloin and shingle it around the platter. Sprinkle the meat with the coarse salt if using and drizzle with any juices.

ITALIAN WELLINGTON

2 tablespoons vegetable oil
One 3- to 3 1/2-pound center-cut beef tenderloin, trimmed
1 teaspoon salt
1 sheet frozen puff pastry, such as Pepperidge Farm, thawed
All-purpose flour, for dusting
Eight 1/6-inch-thick slices prosciutto di Parma
2/3 cup jarred sun-dried tomato pesto
1 egg
1/2 teaspoon flaky sea salt

Steps:

  • Place a large skillet over medium-high heat and add the oil.
  • Tie the tenderloin in 3 or 4 different spots using butcher's twine to keep it tight and together. Season all over with the salt. Add to the hot pan and sear until evenly dark brown on all sides, 8 to 10 minutes total. Remove to a plate and let cool to room. Temperature. Chill in the refrigerator for 30 minutes.
  • Preheat the oven to 425 degrees F.
  • Place the puff pastry sheet horizontally on a lightly floured board and roll out to a 14-by-10-inch rectangle. Lay the prosciutto slices vertically on the puff pastry, overlapping slightly and leaving a rim exposed pastry around the edges. Spoon the tomato pesto down the center of the prosciutto and gently spread to cover the center of the pastry sheet. Lay the tenderloin in the center of the puff pastry. Brush the edges of the pastry with egg wash, then roll it up around the meat. Seal the edges and tuck them under the meat. Place the wrapped tenderloin on a nonstick baking sheet and brush all over with egg wash. Sprinkle with the flaky sea salt and poke a few small holes in the top of the pastry.
  • Bake for 40 to 45 minutes, until an instant-read thermometer inserted in the thickest part of the tenderloin reads 125 degrees F. Remove from the oven and let rest for 10 minutes. Slice into thick slices and serve.

1 head garlic (1/4 pound; about 2 1/2 inches in diameter), left intact
1 teaspoon olive oil
3/4 teaspoon salt
2 cups heavy cream
1/4 cup drained bottled horseradish
1/8 teaspoon white pepper
For tenderloin
1 (3-pound) center-cut beef tenderloin roast, tied
1/2 cup cracked black pepper
2 teaspoons granulated beef bouillon
2 teaspoons salt
3/4 teaspoon cornstarch
3/4 teaspoon dried oregano, crumbled
3/4 teaspoon garlic powder
3/4 teaspoon paprika (not hot)
1 tablespoon olive oil

Steps:

  • Make sauce:
  • Put oven rack in middle position and preheat oven to 400°F.
  • Cut off and discard top fourth of garlic head. Drizzle exposed garlic with oil and sprinkle with 1/4 teaspoon salt, then wrap head tightly in foil. Roast garlic until tender, about 1 1/4 hours, then open foil and cool.
  • While garlic roasts, simmer cream in a 1 1/2- to 2-quart heavy saucepan, stirring occasionally, until reduced to about 3/4 cup, 20 to 25 minutes, then transfer to a bowl.
  • Squeeze garlic into a small bowl, discarding skins, and mash together with horseradish, pepper, and remaining 1/2 teaspoon salt using a fork.
  • Stir garlic mixture into cream, then chill until ready to use.
  • Roast tenderloin:
  • Increase oven temperature to 475°F.
  • Pat tenderloin dry. Stir together pepper, bouillon, salt, cornstarch, oregano, garlic powder, and paprika in a small bowl. Rub oil all over tenderloin, then sprinkle with spice mixture, rubbing it into meat. Put tenderloin on rack in roasting pan and roast 10 minutes, then reduce oven temperature to 425°F and cook until thermometer inserted diagonally into center of meat registers 130°F, 20 to 25 minutes for medium-rare. Let beef stand on rack in pan 10 minutes before serving.
  • Cut beef into 1/4-inch-thick slices and serve with garlic horseradish cream.

Place a strainer over a medium bowl or a Pyrex 4-cup measuring cup. Pour the meat juices into the strainer and press on the solids to extract all of the liquid. Discard the solids.
