THANKSGIVING CHIMICHANGA

Number Of Ingredients 10

Peanut oil or vegetable oil, for frying
1 pound leftover turkey meat, sliced
3 to 4 cups turkey gravy
Eight 12- to 14-inch flour tortillas
2 cups mashed sweet potatoes, warm
2 cups cranberry sauce
2 cups stuffing, warm
1 bunch fresh flat leaf Italian parsley
1 orange, sliced into wedges
1 cup fresh cranberries

Steps:

  • Fill a deep-fryer with peanut oil and heat to 350 degrees F. (If you do not have a deep-fryer, you can use a Dutch oven filled with about 4 inches of oil heated to 350 degrees F.)
  • Allow the turkey to simmer in the gravy in a medium saucepan for about 5 minutes. Remove from the heat and set aside.
  • Wrap the tortillas in a clean, damp kitchen towel and microwave just long enough to make them pliable, about 20 seconds. Unwrap and lay one on the counter, and layer in your leftover ingredients, starting in the lower center of the tortilla, adding 1/4 cup each of mashed sweet potatoes, cranberry sauce, stuffing and the warmed turkey in gravy. Take care to keep the ingredients away from the edges so they don't spill out.
  • Fold the bottom half over the filling to the center of the tortilla. Then, fold each remaining side in. The filling should be mostly covered at this point. Roll everything away from you towards the top of the tortilla and secure the seam with toothpicks. Repeat the process until all the burritos have been rolled.
  • Preheat the oven to 200 degrees F. Fit a rack inside a sheet tray and set aside.
  • Carefully place one burrito at a time into the hot oil. Fry until golden brown, 4 to 5 minutes. Remove from the oil and allow the excess oil to drain over the fryer or pot. Hold on the prepared rack in the oven while you fry the remaining chimichangas. Serve on a bed of flat leaf parsley, orange slices and cranberries. Slice the chimichangas in half, then top with the leftover warm gravy and enjoy.

A chocolate bar is wrapped inside a large flour tortilla and deep-fried, then topped with caramel-pecan and hot fudge sauces and ice cream. There goes my diet- but I will work it off tomorrow.ha! lol

8 small 1.55 oz. -mars,snickers or milky way
8 large flour tortillas
32 oz bottle of vegetable oil
12 oz caramel ice cream topping
1 c chopped pecans
12 oz jar hot fudge ice cream topping
1 qt vanilla ice cream

Steps:

  • 1. Freeze candy bars for at least 1 hour or more- use frozen. Remove from freezer as needed and place one unwrapped candy bar in the center of a tortilla. Fold the bottom of the tortilla up and over candy bar, and then fold the sides in and over. Fold the top of the tortilla over the folded sides and place, seam side down, on a tray or baking sheet. Repeat to make the remaining chimichangas.
  • 2. Heat the oil in a large stockpot to 360^. Using tongs, place 2 bundles, seam side down, in the hot oil.Hold bundles down for a few seconds to seal. Fry until golden brown on all sides, about 2-3 minutes. Drain each bundle on a wire rack and repeat with remaining bundles.
  • 3. Heat the caramel sauce over medium heat-add the pecans and heat through. Cool for 5 minutes. Heat hot fudge in microwave following instructions on jar.(about 30 seconds)
  • 4. Place chimichanga bundle on dessert plate and top with pecan sauce and drizzle with hot fudge and scoop of ice cream.

2 cups pecan halves
2 (12 ounce) bags chocolate chips
25 individually wrapped caramels, unwrapped
2 tablespoons water
½ cup butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange pecans on a baking sheet.
  • Bake pecans in the preheated oven until fragrant and lightly browned, 7 minutes.
  • Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Line a baking sheet with aluminum foil; grease with butter.
  • Combine caramels, water, and butter in a saucepan over low heat; cook, stirring occasionally, until caramels are melted and smooth. Fold in pecans.
  • Drop caramel mixture by the spoonful onto the prepared baking sheet. Allow to cool and harden.
  • Drizzle chocolate over caramel nut clusters. Refrigerate to set, about 1 hour.

  • Slice apples into 1/2" pieces. (It's really important to have a good quality chef's knife. I love Wusthof.) With a knife make a little slit in the bottom of each apple slice to make it easier to insert a popsicle stick. Insert a popsicle stick into each piece of apple. Set aside.
  • In a medium bowl, melt chocolate chips in the microwave on high for about 2 minutes (in 30 second intervals, don't overheat because the chocolate will burn).* Stir in coconut oil until smooth. (If the apples are extra juicy, pat down with a paper towel before dipping.) Dip apple slices in chocolate and place on parchment lined cookie sheet. (I used a 13"x18" half sheet pan.)
  • Place caramels in microwave safe bowl and microwave on high for 30-60 seconds.* (Note: Microwave power varies.) Do NOT overheat. Stir until smooth. Drizzle melted caramel over chocolate and sprinkle with nuts.
  • Refrigerate for about 1 hour. Serve and enjoy immediately. Apples are best the first day. Store in refrigerator.
