Homemade Turtles image

Fast, easy, no-bake and just 4 ingredients! Chewy, gooey, salty-and-sweet! Homemade always tastes better! Yum!!

Number Of Ingredients 5

8 ounces pecan halves (I used roasted, lightly salted)
25 caramel squares, unwrapped (about 1 heaping cup)
1/4 cup cream or half-and-half, divided
about 16 ounces roughly chopped chocolate, melted (I used 8 ounces dark and 8 ounces milk, both Trader Joe's Pound Plus bars)
sea salt, optional for sprinkling

Steps:

  • Line two baking sheets or large platters with parchment paper. It's helpful if they will fit in either fridge or freezer.
  • Make small piles of pecans, using 5 to 6 pieces per pile. Overlap the pecans some to reduce gaps so the caramel doesn't seep through.
  • In a medium microwave-safe bowl, add the caramels, half of the cream (reserve the remainder), and heat on high power to melt. It will probably take about 3 to 4 minutes total, but you must stop and stir the mixture every 30 seconds so you don't burn it. Alternatively, you can melt caramels on the stove over low heat, using caution and stirring frequently. **(see notes below on melting the caramels)
  • Add about 1 tablespoon caramel to the top of each pecan pile; set aside.
  • In a medium microwave-safe bowl, add 8 ounces chocolate and heat to melt, about 1 minute on high power. Heat in 15-second increments until chocolate can be stirred smooth. I prefer working in smaller batches with chocolate and recommend doing the same and not heating all 16 ounces at once; melt additional chocolate as necessary.
  • Add about 2 tablespoons chocolate to the top of each pecan cluster by dolloping it on top and letting it fall down the sides.
  • Optionally add a pinch of sea salt to each Turtle.
  • Allow Turtles to firm up at room temp (will take many hours) or in the fridge or freezer (about 15 minutes) before serving.

1 pouch (1 lb 1.5 oz) Betty Crocker™ oatmeal cookie mix
1/2 cup butter or margarine, softened
1 tablespoon water
1 egg
1 cup chopped pecans
40 caramels, unwrapped
1/3 cup whipping cream
3/4 cup chopped pecans
1 bag (11.5 oz) milk chocolate chips (2 cups)
1/3 cup whipping cream
1/4 cup chopped pecans

Steps:

  • Heat oven to 350°F. In large bowl, stir cookie mix, butter, water and egg until soft dough forms. Stir in 1 cup pecans. Press dough in bottom and up sides of ungreased 9-inch tart pan with removable bottom.
  • Bake 19 to 21 minutes or until light golden brown. Cool 10 minutes. Using back of a spoon, gently press center of crust to flatten slightly.
  • Meanwhile, in medium microwavable bowl, microwave caramels and 1/3 cup cream on High 2 to 4 minutes, stirring twice, until caramels are melted. Stir in 3/4 cup pecans. Spread over cooled crust. Refrigerate 15 minutes.
  • In medium bowl, place chocolate chips. In 1-quart saucepan, heat 1/3 cup whipping cream over medium-low heat 3 to 5 minutes or until hot. Pour cream over chocolate chips in bowl; let stand 5 minutes. Stir until smooth. Pour over filling. Sprinkle with 1/4 cup pecans. Refrigerate 2 hours or until set. To serve, let stand at room temperature 10 minutes before cutting. Store covered in refrigerator.

  • Preheat oven to 450°. Unroll pie crust on a lightly floured surface. Transfer to an 11-in. fluted tart pan with removable bottom; trim edges., Line unpricked pie crust with a double thickness of heavy-duty foil. Bake 8 minutes. Remove foil; bake until light golden brown, 5-6 minutes longer. Cool on a wire rack., In a large saucepan, combine caramels and 1/2 cup cream. 1/2 cup sugar
2 tablespoons butter, melted
FILLING:
2 cups semisweet chocolate chips
1-1/2 cups heavy whipping cream
1/2 cup finely chopped pecans, toasted
CARAMEL SAUCE:
1/2 cup butter, cubed
1 cup sugar
1 cup heavy whipping cream

Steps:

  • Preheat oven to 350°. Place pecans and sugar in a food processor; pulse until pecans are finely ground. Add melted butter; pulse until combined. Press onto bottom and up sides of a 9-in. fluted tart pan with removable bottom. Bake 12-15 minutes or until golden brown. Cool completely on a wire rack., For filling, place chocolate chips in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; stir with a whisk until smooth. Pour into cooled crust; cool slightly. Refrigerate until slightly set, about 30 minutes., Sprinkle pecans over filling. Refrigerate, covered, until set, about 3 hours., For sauce, in a large heavy saucepan, melt butter over medium heat; stir in sugar until dissolved. After receiving these as part of a Christmas baking exchange I just had to have the recipe! These tarts are simple to make and so delicious.

Number Of Ingredients 8

40 prepared tart shells (prepared or homemade)
1 (14 ounce) can sweetened condensed milk
1 cup brown sugar
1 cup margarine
4 tablespoons corn syrup
1 teaspoon vanilla
pecan pieces
40 chocolate melting wafers, 1 for each tart

Steps:

  • Bake tart shells according to directions.
  • Break up pecan pieces and place a small amount in each tart shell.
  • *You can make the filling fill more tart shells if you use more pecans* Melt margarine in a saucepan and then add the rest of the ingredients.
  • Bring to a boil, stirring a few times with a whisk.
  • Let boil for 2 minutes.
  • While mixture is still hot fill tart shells and top with 1 chocolate melting wafer or a few chocolate chips. **or melt chocolate in a ziploc bag, cut off one end,and drizzle over tarts**.
  • Cool and enjoy!
  • These also freeze well. Place cooled tarts in a Tupperware container or a ziploc bag. (You can use wax paper to separate the layers if desired) Label and Freeze. To serve: remove tarts from container and let come to room temperature and then enjoy!

This is another recipe for the SEMI HOMEMADE group I started today (12/15). It is cookie based, yet Oooeeee, gooey, yummy tart! Always great to make and serve a prize winning dessert from Betty Crocker.

COOKIE BASE:

  • 4. In another med. microwaveable bowl, microwave chocolate chips and 1/3 cup cream on high 1-2 minutes, stirring every 30 seconds, until chocolate is smooth. Pour over filling. Sprinkle with 1/4 cup pecans. Refrigerate 2 hours or until set. To serve, let stand at room temperature 10 minutes before cutting. Store covered in refrigerator.
  • 5. *If you do not have a tart pan..use a 9 by 13 inch pan and cut into squares, instead of wedges. Also, I used a tart pan that didn't have a bottom that was removeable...and it worked out fine. Just cut into wedges right from the tart dish.
