TURTLE COOKIE CUPS

1 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 large eggs
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1-1/4 cups semisweet chocolate chips, divided
1/2 cup chopped pecans
1 cup Kraft caramel bits
3 tablespoons heavy whipping cream
48 pecan halves (about 3/4 cup)

Steps:

  • Preheat oven to 375°. In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture., Shape dough into 1-in. balls; place in greased mini-muffin cups. Press evenly onto bottoms and up the sides of cups. Bake 9-11 minutes or until edges are golden brown. With the back of measuring teaspoon, make an indentation in each cup. Immediately sprinkle with 3/4 cup chocolate chips and chopped pecans. Cool in pans 10 minutes. Remove to wire racks to cool., Meanwhile, in a small saucepan, melt caramel bits with cream; stir until smooth. Spoon into cups. Top each with a pecan half. In a microwave, melt remaining chocolate chips; stir until smooth. Drizzle over pecans.

4 tablespoons unsalted butter
1 package (12 ounces) semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1-1/2 cups chopped pecans, toasted
1-1/4 cups caramel bits
ICING:
1 cup semisweet chocolate chips
2 teaspoons shortening

Steps:

  • Preheat oven to 350°. Microwave butter on high until melted. Add chocolate chips and milk; microwave until chips are melted, stirring every 30 seconds. Stir in vanilla. Add flour; mix well. Stir in pecans and caramel bits., Drop dough by tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake until edges are set, 7-9 minutes. Cool on pans 2 minutes. Remove to wire racks to cool completely., For icing, microwave chocolate chips and shortening on high until melted. Drizzle over cooled cookies. Store in an airtight container.

A recipe I got from a Gooseberry Patch cookbook, contributed by Cheri Emery, using a cake mix. It's posted as written, but I used 5 pecan halves to give them 4 legs and a head!:) I also added a rolo inside each so when you bite into them you get caramel too! It's important the dough is completely covering the rolo or it will seep out!

18 1/2 ounces fudge cake mix
1 tablespoon water
2 tablespoons oil
2 eggs
1/2 lb pecan halves
1 tablespoon butter
2 tablespoons baking cocoa
1/2 teaspoon vanilla extract
1 cup powdered sugar
2 tablespoons milk

Steps:

  • Combine dry cake mix, water, oil and eggs, mixing well and set aside.
  • Arrange pecans in clusters of 3 on greased baking sheets.
  • Shape dough into 1 inch balls.
  • Center each on a cluster of pecans and flatten slightly.
  • Bake 8-10 minutes at 375*.
  • Cool and frost.
  • FROSTING: Sift powdered sugar and cocoa, set aside. Cream butter and vanilla, then add the powdered sugar mixture and milk alternately until desired consistency.

This is a tasty butter cookie, rolled in nuts, filled with caramel, and coated with chocolate. I won a local baking contest with these. Everyone loves them! You can fill the cookies with caramel apple dip instead of caramel ice cream topping. Works great!

1 cup butter
1 teaspoon vanilla extract
1 cup confectioners' sugar
2 cups all-purpose flour
2 egg whites
1 cup chopped pecans
½ cup caramel ice cream topping
1 cup chocolate coating wafers, melted

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium bowl, cream together the butter and sugar until smooth. Stir in the vanilla, then the flour.
  • Roll the dough into walnut sized balls, roll the balls in the egg whites, then roll them in the chopped pecans. Place the cookies 1 1/2 inches apart on an unprepared cookie sheet. Using your finger, make an indention in the center of each cookie.
  • Bake for 12 to 15 minutes in the preheated oven, until bottom of cookies are lightly browned.
  • When the cookies come out of the oven fill the indentation with the caramel filling, and let cool. Pour about 1 to 1 1/2 teaspoons of chocolate over each cookie to cover the caramel center. Let stand until chocolate is set.

  • Preheat waffle iron to medium heat.
  • In a medium bowl, combine the flour, cocoa, sugar and salt. Stir in the eggs, melted margarine and vanilla until well blended. Drop batter by spoonfuls onto the sections of the preheated waffle iron. Close the waffle iron and cook for 1 1/2 to 2 minutes. Carefully remove cookies and cool on wire racks.

  • On high speed in a stand mixer or with a hand mixer, beat together butter and sugar for about 2 minutes until light and fluffy. Add egg yolk, milk and vanilla. Mix until incorporated. Reduce speed to low and add flour mixture until combined. Wrap dough in plastic wrap and refrigerate for an hour.
