Steps:
- Cream butter or margarine, gradually add brown sugar, beating at medium speed of an electric mixer until light and fluffy.
- Add 1 egg, 1 egg yolk, and vanilla; beating until well blended.
- Combine flour, baking soda and salt; add to creamed mixture, mixing well.
- Chill dough at least 1 hour.
- Arrange pecan halves in groups of 5 on ungreased cookie sheets, resembling head and legs of turtles.
- Shape dough into 1-inch balls, and dip bottoms in remaining egg white. Press gently onto pecans to resemble turtle bodies. Bake at 350 degrees F (180 degrees C) for 10 to 12 minutes. Cool on wire racks. Spread frosting on top of cookies.
- To Make Frosting: Combine chocolate squares, milk and 1 tablespoon butter or margarine in a small saucepan; cook over low heat, stirring constantly, until chocolate melts. Remove from heat. Add approximately 1 3/4 cups confectioner's sugar; beat until smooth.

- Beat butter with an electric mixer for 30 seconds. Add sugar and continue beating until combined and creamy. Add egg yolk, milk, and vanilla and beat until well combined.
- Sift flour, cocoa powder, and salt together in a separate bowl. Add flour mixture to the butter mixture a little at a time {trying to avoid a cocoa cloud - quite messy!} and beat until well combined.
- Wrap the cookie dough in plastic wrap and chill for a couple hours.
- Chop the pecans pretty fine...
- Enlist helpers to unwrap the caramels.
- Heat unwrapped caramels and whipping cream in a small saucepan over low heat until nice and smooth.
- Preheat oven to 350 degrees. Shape the dough into 1-inch balls and roll the balls in slightly beaten egg white. Then roll in pecans until coated. Reece did an entire tray all by himself and he's six. Bryce's balls were not exactly round per se, but who cares!
- Place balls on a lightly greased cookie sheet about one inch apart. Use your thumb to press in the center, making an indention.
- If you have a helper with smaller fingers, you may want to secretly use your thumb or else there won't be a lot of room for the caramel and that, my friends, would be a catastrophe.
- Bake for 10 minutes or until edges are set. If the indention has disappeared during baking, use a measuring spoon to re-create the indention. {I actually used a carrot - LOL!}
- Spoon caramel mixture into the center of the cookies and remove to a wire rack and let cool. {If the caramel has thickened too much, just reheat on low until it reaches a thinner consistency.}
- Be careful not to overfill the cookies...
- Once the cookies have cooled, melt chocolate chips and shortening in microwave by heating in 15 second intervals, stirring in between.
- Drizzle the chocolate over the tops of the cookies and get ready to enjoy!

- Heat oven to 350°F. In medium bowl, stir together cookie mix, butter, egg and 1/2 cup chopped pecans until soft dough forms. Press evenly in ungreased 8-inch square pan. Bake 28 to 33 minutes or until golden brown.

TURTLE COOKIES
A recipe I got from a Gooseberry Patch cookbook, contributed by Cheri Emery, using a cake mix. It's posted as written, but I used 5 pecan halves to give them 4 legs and a head!:) I also added a rolo inside each so when you bite into them you get caramel too! It's important the dough is completely covering the rolo or it will seep out!

- Combine dry cake mix, water, oil and eggs, mixing well and set aside.
- Arrange pecans in clusters of 3 on greased baking sheets.
- Shape dough into 1 inch balls.
- Center each on a cluster of pecans and flatten slightly.

- Cool and frost.

- Preheat oven to 325 degrees. Line two baking sheets with parchment paper or silicone baking mats.
- Cream together butter, sugar, and brown sugar using a stand mixer or hand mixer.
- Add in eggs and vanilla extract and beat until combined.
- Beat in cocoa powder, baking soda, and salt.
- Use a spoon or rubber spatula to stir in flour until combined. Stir in chocolate chips and pecans.
- Scoop out about two tablespoons of the cookie dough and roll into a ball and place on prepared pans. Repeat with remaining dough until you have 24 cookies. Place in the freezer for 30 minutes.
- Bake in the preheated oven for 12 minutes.
- Meanwhile, place unwrapped caramels and heavy cream into a microwave safe bowl. Place in the microwave for 30 seconds. Stir, and microwave again for 30 seconds. Continue until caramel is completely melted and smooth.
- Once the cookies are out of the oven drizzle with caramel and let cool completely on a wire rack.

- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl, cream together the butter and sugar until smooth. Stir in the vanilla, then the flour.
- Roll the dough into walnut sized balls, roll the balls in the egg whites, then roll them in the chopped pecans. Place the cookies 1 1/2 inches apart on an unprepared cookie sheet. Using your finger, make an indention in the center of each cookie.
- Bake for 12 to 15 minutes in the preheated oven, until bottom of cookies are lightly browned.
