Easy 3-Ingredient Turtles Candy - the name says it all! With only 3 ingredients, this Turtle Candy is super easy to make and makes perfect gifts for the upcoming holidays. Don't however be fooled by their simplicity. They taste as good as Turtle Candy that took hours to make!

Categories     Candy     Christmas

Time 22m

Number Of Ingredients 3

60 pecan halves, lightly roasted (See Note 1)
12 caramels (See Note 2)
24 dark chocolate melting wafers

Steps:

  • Preheat oven to 350° F.
  • For the turtle legs, cut about 1/4 to 1/2 inch diagonal on opposite sides of 24 pecan halves. Place the legs together on parchment or silicon lined baking sheet. Assemble two pecan halves above the legs with the ends touching and add the remaining pecan half for the head.
  • Unwrap the caramels. Flatten each to a 1 1/4 inch square with the heel of your hand. Place flattened caramels in center of pecan clusters.
  • Place baking sheet in preheated oven for 4 to 5 minutes, or until caramel starts to melt. Watch carefully to ensure that caramel doesn't melt completely. (See Notes 3 and 4)
  • Remove from oven and place 2 melting wafers in center of each caramel. Return to oven for 1 to 2 minutes, or until melting wafers begin to melt. (See Note 5)
  • Remove from oven and spread melted chocolate over the caramel with the back of a small spoon.
  • Allow to cool completely on baking sheet. Store in airtight container for up to 1 week.
  • Yield: 12 Turtle Candies. (See Note 6)

HOMEMADE TURTLES

Homemade Turtles image

Fast, easy, no-bake and just 4 ingredients! Chewy, gooey, salty-and-sweet! Homemade always tastes better! Yum!!

Provided by Averie Sunshine

Categories     Candy & Treats

Time 30m

Number Of Ingredients 5

8 ounces pecan halves (I used roasted, lightly salted)
25 caramel squares, unwrapped (about 1 heaping cup)
1/4 cup cream or half-and-half, divided
about 16 ounces roughly chopped chocolate, melted (I used 8 ounces dark and 8 ounces milk, both Trader Joe's Pound Plus bars)
sea salt, optional for sprinkling

Steps:

  • Line two baking sheets or large platters with parchment paper. It's helpful if they will fit in either fridge or freezer.
  • Make small piles of pecans, using 5 to 6 pieces per pile. Overlap the pecans some to reduce gaps so the caramel doesn't seep through.
  • In a medium microwave-safe bowl, add the caramels, half of the cream (reserve the remainder), and heat on high power to melt. It will probably take about 3 to 4 minutes total, but you must stop and stir the mixture every 30 seconds so you don't burn it. Alternatively, you can melt caramels on the stove over low heat, using caution and stirring frequently. **(see notes below on melting the caramels)
  • Add about 1 tablespoon caramel to the top of each pecan pile; set aside.
  • In a medium microwave-safe bowl, add 8 ounces chocolate and heat to melt, about 1 minute on high power. Heat in 15-second increments until chocolate can be stirred smooth. I prefer working in smaller batches with chocolate and recommend doing the same and not heating all 16 ounces at once; melt additional chocolate as necessary.
  • Add about 2 tablespoons chocolate to the top of each pecan cluster by dolloping it on top and letting it fall down the sides.
  • Optionally add a pinch of sea salt to each Turtle.
  • Allow Turtles to firm up at room temp (will take many hours) or in the fridge or freezer (about 15 minutes) before serving.

  • Line a baking sheet with parchment paper; set aside. Finely chop 1/2 cup toasted pecans, leaving the remaining 1 1/2 cups whole.
  • In a medium saucepan, stir together brown sugar, condensed milk, corn syrup, butter, and salt. Place over medium heat and bring to a boil, stirring constantly, until mixture reaches 240°F, about 5 minutes. Remove from heat; stir in vanilla extract and baking soda.
  • Add chopped and whole pecan halves and stir for one minute until caramel begins to thicken slightly. Working quickly, use a spoon to scoop 2 tablespoons of mixture in a mound on prepared baking sheet. Repeat until all of the mixture has been used, yielding 12 caramel-pecan mounds. Transfer baking sheet to refrigerator until mounds have solidified and are no longer warm to the touch, about 20 minutes.
  • Over a double boiler or in the microwave, melt chocolate until smooth. Coat each caramel mound in chocolate, gently lifting the mound out of the chocolate with a fork allowing excess chocolate to drip off. Return chocolate covered mound to its place on baking sheet. If using, sprinkle surface with flake salt while chocolate is still warm. Repeat with remaining mounds, chocolate, and flake salt. Once all turtles are coated, return baking sheet to refrigerator to allow chocolate to harden, about 30 minutes. Store in an airtight container and keep in the fridge.

  • Preheat oven to 350 degrees F. Place your pecan halves on a baking sheet; transfer to the oven and bake for about 8-10 minutes until toasted and fragrant. (Alternatively, you can add them to a hot non-stick skillet, stirring constantly until they are fragrant, about 5 minutes.)
  • Line two baking sheets with parchment paper (that can also fit in the refrigerator or freezer.) Make 18 small mounds, about 5 pecan halves in each one depending on their size. (Overlap the pecans some to reduce gaps, otherwise the caramel will seep through.)
  • Add the caramels and water to a microwave safe bowl (making sure it's free of any debris or moisture) and microwave in 30 second increments, stirring each time, until fully melted and stirred together fully. (The first few times you try to stir, it feels impossible, but eventually they do soften and you'll be able to stir them until smooth. The caramel will be runny when it first comes together, but firms up quite a bit as it cools.)
  • As soon as your caramel is ready, quickly spoon a 2 teaspoons of the hot caramel on top of the clusters, making sure each pecan is covered with some caramel. Don’t worry about them being perfect, just work quickly before the caramel starts to set up.

  • Pecans: Preheat oven to 350°F. Line a large baking sheet with parchment paper and spread the pecan halves in a single layer on the prepared pan. Bake for 10 -12 minutes until lightly browned and fragrant.
  • Allow the pecans to cool. Line another baking sheet with parchment paper and when the pecans are cooled arrange them into clusters of 3 or 4 nuts. Using an additional baking sheet allows you more space to work so they are not packed too close together as you top with caramel. Set the pecans aside.
  • Caramel: In a medium, heavy-bottomed saucepan or Dutch Oven combine the butter, brown sugar, corn syrup, and salt. Bring to a boil over medium heat. Add in the sweetened condensed and continue boiling until it reaches 240°F on a candy thermometer. Remove from the heat and stir in the vanilla. Allow the caramel to cool for 5 minutes and then spoon an approximate teaspoon on top of each pecan cluster.
