TURON (SWEET FRIED BANANA SPRING ROLLS)

Turon (Sweet Fried Banana Spring Rolls) image

These are famous sweet Filipino snacks sold in sidewalks. Very simple to make and a traditional comfort food for many households. Basics would just be the bananas, sugar and wrapper but adding the jack fruit makes all the difference and is preferred by most. Note: There are different types of spring roll wrappers. Get the non-translucent ones, if ever.

Provided by Pneuma

Categories     Dessert

Time 20m

Yield 12 rolls, 6 serving(s)

Number Of Ingredients 8

6 plantains, ripe and each cut lengthwise
12 spring roll wrappers, non-translucent or 12 egg roll wrappers or lumpia skins
3/4 cup dark brown sugar
6 slices jackfruit, cut lengthwise (optional)
1 teaspoon cinnamon (optional)
1/4 cup water
1 teaspoon starch
1 cup oil, for deep frying

Steps:

  • place a sliced banana 1 1/2 inch from the bottom edge of a spring roll wrapper, sprinkle it with some sugar and cinnamon, and top it with a sliced jack fruit.
  • seal the sides and roll the wrapper, sealing the top as well with water/starch mixture.
  • In the meantime, heat oil in non-stick wok(so sugar doesn't stick) until it's sizzling hot with the leftover sugar and fry the wrapped bananas until it's golden brown, spooning (or use spatula) the sugar from the pan on the wrapper to give it a bit of caramelized coating.
  • Drain on paper towels or sieve.
  • Serve while still warm and the wrapper's crunchy.

{Air Fryer} Turon - Banana Spring Rolls image

PLANTAIN EGG ROLLS (TURON)

Plantain Egg Rolls (Turon) image

This is a Filipino dessert that has been my favorite since I was a child. Crispy, sugary shells with soft and warm plantains inside. They are a breeze to make when you have everything set up in advance. They can be frozen in bulk and fried without any defrosting.

TURON

Turon image

Deep-fried banana rolls. When picking out your bananas, please adjust the amount you buy to equal two large bananas for this recipe. The time it takes to make these really depends on how adept your are at rolling. I said 15 minutes prep. time, but this is with my kids "helping" me with the sugar and placing the bananas. (They can't roll yet thank goodness. Haha) After frying your turon I recommend draining them on a wire rack or or something. You can use paper towels, but if some of the brown sugar melted out they'll stick. I usually just stand them up on their sides in my metal colander until they've cooled off enough to eat. This recipe calls for using lumpia wrappers which are much thinner than eggroll wrappers, almost like paper. I find them at my local Asian market. Try eating your turon with some icecream! It's great.

Time 29m

Yield 8 rolls, 4 serving(s)

Number Of Ingredients 5

8 lumpia skins
2 large bananas, ripe
1/2 cup brown sugar
1 egg, beaten (optional)
jackfruit, slivered (optional)

Steps:

  • Peel and cut bananas to fit the wrappers. I use rather large bananas so I cut them both lengthwise and crosswise to make 4 pieces. Adjust this so that your banana "fits" so you can roll it like and eggroll.
  • Spread a little brown sugar on the lumpia wrapper, add the banana. Alternatively, you can roll the banana in the sugar instead of sprinkling some on the wrapper. My kids find this easier. If you are using jackfruit add a little with the banana.
  • Roll like you would an eggroll. Wet the end flap with a little water or beaten egg to seal.
  • Deep fry at about 350 degrees until golden brown. It generally takes me 5-7 minutes per batch.

  • Roll each slice of banana in sugar. Place one slice banana across the corner of a thin spring roll wrapper. Add a few thin strips of sliced jackfruit on top. If you wish, you may sprinkle a little more brown sugar on top. Roll the wrapper from the corner (where the banana is) to the center. Tuck the sides of the wrapper to seal then continue rolling until you reach the top edge. Use water or egg wash to seal the top. Repeat until all the banana and jackfruit are used up.
  • Heat the oil to medium (not too hot or the wrapper may brown too quick without fully cooking the bananas). Once the oil is hot and just before frying roll each wrapped banana in some sugar then immediately add to the fryer and cook until golden brown and crispy about 3-4 minutes. The extra sugar will cause the wrapper to caramelize on the outside making it extra yummy! Place each fried banana roll on paper towels to absorb any excess oil. Enjoy while still warm and crispy!

  • Preheat your oven to 400ºF (375º with convection). Line a baking tray with nonstick foil and put it in the oven to preheat.
  • Peel the bananas and quarter them. Dip each quartered piece in the cinnamon sugar mixture and lay at the center of one lumpia wrapper. One corner of the wrapper should be facing you; lay the banana piece horizontally and fold the corner closest to you over the banana. (If you wish, you can add chocolate chips on top of the banana.) Fold the left and right corners in towards the banana and wrap tightly. When you get to the last fold, brush the ends with them melted butter and fold to seal. Repeat with the remaining ingredients.
  • When the oven and baking tray have preheated, brush the entire surface of the banana spring rolls with the melted butter and arrange them on the baking tray. Don't pack them too closely to allow air to pass through between the rolls so they crisp up. Sprinkle the turbinado sugar on top of the spring rolls before baking. This step is optional but adds more crunch to the rolls.
