- Combine the flour, sugar, and salt in a large bowl. Cut in the butter and shortening using a pastry blender, two knives, or your hands until the mixture resembles coarse meal. Add the water -- a few tablespoons at a time as necessary -- and mix until just combined.
- Gather dough into a ball and flatten into 2 equal-size disks. Wrap tightly in plastic wrap and refrigerate for 1 to 2 hours or overnight. Roll out as directed by recipe.

CHERRY CHEESECAKE TURNOVERS
Cherry Cheesecake Turnovers made completely from scratch with a flaky, buttery, homemade pie crust and a sweet cherry cheesecake filling.

- Preheat oven to 400F (205C)
- Divide your chilled pie dough into two pieces that are roughly the same size.
- Transfer to a lightly floured surface and roll one piece into a rectangle about ⅛" thick.
- Using a pizza cutter or a knife, neatly cut dough into 4.5" squares and transfer to a parchment-paper-lined baking sheet (you will need to gather the scraps and re-roll them out to make all 10 turnovers).
- Place squares on a parchment paper lined cookie sheet and return to the refrigerator.
- Repeat rolling and cutting with your second half of pie dough until you have 10 squares chilling in your refrigerator.
- Meanwhile, prepare your cherry pie filling by combining pitted cherries, sugar, cornstarch, and lemon juice in a medium-sized saucepan over medium-low heat.
- Stir frequently until cherries release their juices and mixture is liquidy. Increase heat to medium and bring to a simmer, stirring frequently until mixture is thickened.
- Remove from heat and stir in bourbon, if using. Allow cherry mixture to cool (at least 15-20 minutes -- if you add hot cherry pie filling to your pie dough you will melt it) before proceeding.
- While your cherry pie filling cools, prepare your cheesecake filling by combining cream cheese, sugar, and vanilla extract in a bowl and stirring until well-combined. Set aside.
- Once your pie filling has cooled, remove your prepared turnover dough from the refrigerator and use a pastry brush to lightly brush the insides of your pastry squares with egg wash.
- Portion about 2 teaspoons of cheesecake mixture into the center of each turnover square and then top with 1 ½ Tablespoons of cherry pie filling (see image in post). Gently fold over one corner to the other to envelope the filling (if your dough is still cold and stiff from the refrigerator, just let it sit at room temperature for several more minutes and it will become flexible enough to fold over. Use the tines of a fork to press and seal the turnovers.
- Brush the outside lightly with egg wash, cut small slits across to vent, and sprinkle with coarse sugar, if desired.
- Bake on 400F (205C) oven for 25 minutes, until pastry is beginning to turn golden brown.
- Allow to cool before enjoying.

I got this YEARS ago from a magazine running a 5 meals in 5 hours article. I LOVE this dish. I think it was the first time I'd ever had curry and I've been hooked ever since.

Steps:
- If turkey is frozen, let it thaw overnight in the refrigerator.
- For filling, in a 10-inch skillet cook turkey and onion till turkey is brown.
- Drain off any fat.
- Stir in the green pepper, carrot, raisins, curry powder, salt cumin and pepper, cover and simmer 10 minutes.
- If necessary, remove cover and cook over high heat 3 to 4 minutes or till liquid is evaporated.
- Spoon filling into a bowl and let cool.
- Let frozen pie crusts stand at room temperature while the filling cools.
- To assemble turnovers, unfold/unroll/roll-out pie crusts; sprinkle with flour.
- Place crusts, floured side down, on a baking sheet.
- Spread half of the filling over half of each crust, leaving a 1-inch edge along the outside.
- Moisten edge with water.
- Gently lift and fold other half of pie crust over filling.
- Seal and flute edges.
- Wrap each turnover separately in foil; seal, label, and freeze.
- SERVE IMMEDIATELY: Brush turnovers with beaten egg.
- Cut slits in dough to let steam escape.
- Bake in a 375°F oven about 25 minutes or till golden brown and heated through.
- Serve as above with yogurt, sour cream and/or chutney.
- If frozen plan to cook for 40 to 45.
TURNOVERS AND TURNOVER CRUST RECIPE - (4/5)

- Mix flour and salt in bowl. Cut in butter or shortening and mix well. Add water, 1 tbsp at a time until forms into a dough consistency. Wrap in saran wrap and place in refrigerator for 20-30 minutes. Take out of wrap and place on lighly floured surface. Flour your rolling pin. Roll the dough out until it is no thicker than 1/4 inch, a little thinner is perfect. Using a dough press, lid or glass, cut dough into 6 inch circles. TO MAKE TURNOVERS: 1.Preheat oven to 425 degrees 2. On lightly floured surface, roll out dough and cut into 6 in. circles 3. Place 2-3 tbsp filling in center of circle. 4. Brush the entire edge with water. Fold into half circle. Press edges firmly. Press the edges with a fork to seal well. 5. Arrange on dampened baking sheet, brush with egg wash 6. With a knife, cut several slits in tops of each turnover 7. Sprinkle with turbinado sugar. Bake in teh upper 1/3 of the oven, 12-15 minutes until puffed and golden.

- Preheat oven to 400F.
- In a large skillet, heat oil, and add mushrooms, green beans, onion, garlic, thyme and rosemary.
- Cook until veggies are crisp-tender.
- Add flour and cook, continuously stirring, for 1 minute.
- Add cream and stir until thickened, then remove from heat.
- Mix turkey, salt and pepper into the cooling mixture and allow to rest for 5 minutes.
- Unfold the pastry sheets and cut into 4 squares.
- Divide turkey mixture and spoon into the middle of each square.
- Brush the edges of the pastry with water, then fold over to form a triangle, pressing the edges to seal, and crimping the edges with a fork.
- Place finished pastries on an ungreased baking sheet and bake at 400F for 12-15 minutes or until golden.
