- Place turnips in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15 minutes or until tender and drain. Transfer turnips to a bowl and mash. Add the egg, sugar, butter and salt. , Transfer to a greased 1-qt. baking dish; sprinkle with cinnamon. Cover and bake at 350° for 20-25 minutes or until a thermometer reads 160°.

DONNA'S TURNIP GREEN CASSEROLE
My MIL has made this for the last 20 years I've know her. It is really good and is usually only fixed for Thanksgiving and Christmas. Use a good quality brand of turnip greens. - 1. Mix all the wet ingredients together, then pour into a casserole dish. Add as much salt and pepper as you wish. She used a couple of shakes, probably about 1/4 teaspoon of each.
- 2. Top with bread crumbs and cheese.
- 3. Bake one hour at 350 degrees
- 4. She has one of those big square Corning Ware casserole dishes she uses. Note 11/15/12 I made this for a work luncheon. It fits in a 8x8 or 9x9 square baking pan. My MIL must have made a doube batch because her dish was much larger.
COUNTRY TURNIP GREENS

Steps:
- Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
- Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
- Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.

- Preheat the oven to 375 degrees F (190 degrees C).
- Place turnips into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return to the pot. Mash turnips; add butter and eggs.

- Heat oven to 350ºF.
- Cook macaroni as directed on package, omitting salt.
- Meanwhile, heat 1 Tbsp. oil in large saucepan on medium heat. Add onions and garlic; cook and stir 1 min. Add turnip greens; cook and stir 3 to 4 min. or until wilted. Spoon into bowl; set aside.
- Heat remaining oil in same pan. Whisk in flour; cook and stir 1 min. Gradually whisk in milk; cook and stir 3 to 5 min. or until thickened. Add 1-1/4 cups shredded cheese, 1 Tbsp. Parmesan and mustard; cook and stir 2 to 3 min. or until shredded cheese is melted.
- Drain macaroni. Add to cheese sauce along with the crushed red pepper and turnip greens mixture; mix well. Spoon into 1-1/2-qt. casserole sprayed with cooking spray; top with remaining cheeses.
- Bake 20 min. or until heated through.

- Prepare a pan of cornbread (best if the cornbread is made a day or two ahead); crumble into small pieces
- In a large skillet, cook the onion and sausage; drain if there's excess oil
- In a large bowl, combine greens with their juice and the condensed soup
- Fold in cooked sausage and onions, crumbled cornbread; season with Trappey's pepper sauce, salt and pepper; sprinkle in red pepper flakes (optional)
- Transfer to ungreased baking dish and bake uncovered for 30 minutes, or until most of the liquid is absorbed

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
- Bring a pot of water to a boil and add turnips. Reduce heat to low, and simmer turnips until tender, about 15 minutes. Drain.
- Transfer turnips to a large bowl and mash with applesauce, 6 tablespoons softened butter, brown sugar, eggs, salt, black pepper, and half the bread crumbs. Spoon turnip mixture into the prepared casserole dish, and sprinkle with remaining half of bread crumbs. Drizzle with 2 tablespoons melted butter.
- Bake in the preheated oven until set, about 30 minutes.

- Add butter and eggs and beat well.
- (This can be done the a day ahead).
- Combine flour, sugar, baking powder, seasoning and nutmeg.
- Stir into turnip mixture.
- Pour into a buttered casserole dish.
- Mix breadcrumbs and butter and sprinkle on top.
- Bake at 375 for 25 minutes or until light brown on top.

- 1. In a small casserole dish melt one stick of margarine in a 350* oven. Crumble a layer of cornbread in margarine and layer of turnip greens (DO NOT DRAIN TURNIP GREENS), a layer of onion, and a layer of cream of chicken soup. Repeat the layers ending with cornbread. Bake for 30 to 35 minutes.
- 2. You can add red pepper flakes if you prefer spicy greens
