- Preheat the oven to 500 degrees F (260 degrees C).
- Make slits all over the roast by pricking with a small knife. Insert slivers of sliced garlic. Season the roast with salt and pepper, then spread generously with mustard. Place on a rack in a roasting pan, and cover.
- Roast for 60 minutes in the preheated oven. Turn off oven. Leave oven closed, and do not peek for 90 minutes. The internal temperature of the meat should be at least 140 degrees F (60 degrees C) for medium-rare, or 155 degrees F (68 degrees C) for medium.

OFF-OVEN ROAST BEEF

- Remove roast from refrigerator. Preheat oven to 500 degrees.
- In a small bowl, mix together salt, pepper, garlic, olive oil and red-pepper flakes to create a kind of paste. Rub this all over the roast. Place beef in a roasting pan or cast-iron skillet, fat-side up, and put in oven. Cook undisturbed for 5 minutes per pound.
- Turn off oven. Do not open oven door. Leave roast to continue cooking, undisturbed, for two hours.
- After two hours, remove roast from oven. Slice and serve alongside, ideally, a watercress salad, some skillet-fried potatoes and a small tureen of Henry Bain sauce.
CHEF JOHN'S PERFECT PRIME RIB
This is a specific formula for achieving a perfectly pink prime rib cooked somewhere a shade under medium rare. To use this method you must have a full-sized, modern oven with a digital temperature setting that indicates when it is preheated. Older ovens with manual controls can vary greatly, and the doors may not have the proper insulation.

ROAST PRIME RIB
The cooking method for this show-stopping roast may seem unconventional, but that's by design: Roasting at an initial high temperature sears the outside into a crust, then shutting off the oven and leaving the roast inside allows it to cook itself to the perfect medium rare. Use that time to whip up the creamy horseradish sauce.

- For the prime rib: Preheat the oven to 500 degrees F. Put the butter, horseradish, peppercorns and 2 tablespoons salt in a medium bowl and stir until evenly combined. Slather the seasoned butter evenly over the top and sides of the roast (leave the bottom bare) and put on a rack set in a large roasting pan. Roast for 35 to 40 minutes (5 minutes per pound), then turn the oven off and let the roast sit inside the oven for 1 1/2 hours (do not open the oven door during this time). It should be dark golden brown on the outside and medium rare on the inside.
- For the sauce: Meanwhile, whisk the sour cream, horseradish, 2 teaspoons salt and 1 teaspoon pepper together in a medium bowl until well combined. Stir in the chives, cover and refrigerate until ready to serve.
- Cut the roast into 1-inch-thick slices and serve with the sauce.
PERFECT CHRISTMAS PRIME RIB RECIPE (FOOLPROOF 500° METHOD)
Back when I first tried my hand at making prime rib, I did a LOT of research to find the perfect prime rib recipe. This is the foolproof method I ended up using, and I've been making it every Christmas ever since!

- Mix up 1 tablespoon + 1 teaspoon each of onion salt, seasoned salt, and garlic powder, for a total of 1/4 cup of seasoning mix.
- Pat the seasoning mix on both ends of the roast as well as the fat side. (The salt may not stick as well on the fat side, but don't worry about it.)
- Set the seasoned roast on a roasting rack, bone-side down and fat-side up. Place the rack in a large roasting pan, and insert your meat thermometer into the middle of the roast.
- Place the roast into a 500° preheated oven, uncovered, and cook for 5-6 minutes per pound.
- Then shut the oven off completely, and DO NOT OPEN THE OVEN DOOR FOR TWO HOURS.
- After two hours, check the temperature of the meat. If your thermometer reads 135-140°F, it's done! (If it isn't quite to temp yet, just put it back in the oven at 375°F until it's done.)

- Your cooking times will vary depending on the size of your prime rib roast. To calculate your cooking time, multiply the exact weight of the roast by 5. Turn the oven off and wait 2 hours before opening the oven door. Remove the prime rib and slice into the most perfectly medium-rare meat you've ever see.

TURN THE OVEN OFF! PRIME RIB ROAST
This roast is made on YOUR time schedule. Start it a couple hours ahead of your dinner party, finish it when you are ready for it. This is a family favorite NO FAIL ROAST recipe that has been shared throughout my very large family. I have used it on other roasts as well.

- Any size roast.
- Rub with olive oil.
- Rub with Salt & Pepper to taste.
- Garlic Salt (I use fresh minced garlic).
- Preheat oven to 375°.
- Place beef (fat-side up on rack) in a roasting pan uncovered in oven for 1 hour AND THEN TURN OFF OVEN.
- DO NOT OPEN THE OVEN DOOR FOR ANYTHING!
- NO PEEKING!
- Before serving, turn oven back on to 300°.
- 45 minutes before serving the roast will be RARE DONE.
- 50 minutes before serving the roast will be MEDIUM DONE.
- 55 minutes before serving the roast will be WELL DONE.
- Take out of oven and let rest for 10-15 minutes before cutting.
- PERFECT EVERY TIME.

- Season the Meat. Dry the rib with paper towels 24 hours before you want to cook it. Liberally season the prime rib on all sides — the fat cap, front, back, sides and bottom — with kosher salt and massage it in thoroughly.
- Refrigerate for 24 Hours. Set the prime rib in a shallow dish or on a tray. Store the prime in the refrigerator for 24 hours, uncovered.
- Bring to Room Temperature. Take the prime rib out of the refrigerator two to four hours before you want to cook it. Let it sit out until it reaches room temperature, about two to three hours for a 2- to 4-pound roast and three to four hours for a 4- to 8-pound roast.
- Heat the Oven. Heat the oven to 500 degrees Fahrenheit. If you have a convection oven, operate it with the convection fan off.
- Place in Oven. Set the prime rib on a roasting rack set in a deep roasting pan. Place the prime rib on the middle rack when the oven reaches 500 degrees Fahrenheit.
- Roast With Oven On. Roast the prime rib for five minutes per pound. For example, if you have a 6-pound boneless prime rib, you need to roast it for 30 minutes at 500 degrees Fahrenheit.
- Turn Off the Oven. Turn off the oven. Let the prime rib cook continue to cook using residual heat for two hours. Set the timer to alert you when to remove the prime rib.
- Serve and Enjoy. Take the prime rib out of the oven. Serve the prime rib immediately. You don't have to let the prime rib rest; the residual-heat cooking took care of it.
