1 tablespoon olive oil
Red-pepper flakes to taste

  • Remove roast from refrigerator. Preheat oven to 500 degrees.

CHEF JOHN'S PERFECT PRIME RIB

Chef John's Perfect Prime Rib image

This is a specific formula for achieving a perfectly pink prime rib cooked somewhere a shade under medium rare. To use this method you must have a full-sized, modern oven with a digital temperature setting that indicates when it is preheated. Older ovens with manual controls can vary greatly, and the doors may not have the proper insulation.

Provided by Chef John

Categories     Main Dish Recipes     Roast Recipes

Time 6h30m

Yield 4

Number Of Ingredients 5

4 pounds prime rib roast
¼ cup unsalted butter, softened
1 tablespoon freshly ground black pepper
1 teaspoon herbes de Provence
kosher salt

Steps:

  • Place rib roast on a plate and bring to room temperature, about 4 hours.
  • Preheat an oven to 500 degrees F (260 degrees C).
  • Combine butter, pepper, and herbes de Provence in a bowl; mix until well blended. Spread butter mixture evenly over entire roast. Season roast generously with kosher salt.
  • Roast the 4-pound prime rib (see footnote if using a larger and smaller roast) in the preheated oven for 20 minutes. Turn the oven off and, leaving the roast in the oven with the door closed, let the roast sit in the oven for 2 hours. Remove roast from the oven, slice, and serve.

ROAST PRIME RIB

Roast Prime Rib image

The cooking method for this show-stopping roast may seem unconventional, but that's by design: Roasting at an initial high temperature sears the outside into a crust, then shutting off the oven and leaving the roast inside allows it to cook itself to the perfect medium rare. Use that time to whip up the creamy horseradish sauce.

Provided by Food Network Kitchen

Categories     main-dish

Time 2h25m

Yield 10 to 12 servings

Number Of Ingredients 9

2 sticks (1 cup) unsalted butter, at room temperature
1/4 cup prepared horseradish
2 tablespoons mixed or tri-color peppercorns, coarsely cracked
Kosher salt
One 7- to 8-pound boneless prime rib roast
2 cups sour cream
2/3 cup prepared horseradish, drained
Kosher salt and freshly ground black pepper
1 bunch fresh chives, coarsely chopped (about 3/4 cup)

Steps:

  • For the prime rib: Preheat the oven to 500 degrees F. Put the butter, horseradish, peppercorns and 2 tablespoons salt in a medium bowl and stir until evenly combined. Slather the seasoned butter evenly over the top and sides of the roast (leave the bottom bare) and put on a rack set in a large roasting pan. Roast for 35 to 40 minutes (5 minutes per pound), then turn the oven off and let the roast sit inside the oven for 1 1/2 hours (do not open the oven door during this time). It should be dark golden brown on the outside and medium rare on the inside.
  • For the sauce: Meanwhile, whisk the sour cream, horseradish, 2 teaspoons salt and 1 teaspoon pepper together in a medium bowl until well combined. Stir in the chives, cover and refrigerate until ready to serve.
  • Cut the roast into 1-inch-thick slices and serve with the sauce.

PERFECT CHRISTMAS PRIME RIB RECIPE (FOOLPROOF 500° METHOD)

Perfect Christmas Prime Rib Recipe (Foolproof 500° Method) image

Back when I first tried my hand at making prime rib, I did a LOT of research to find the perfect prime rib recipe. This is the foolproof method I ended up using, and I've been making it every Christmas ever since!

Provided by Jill Nystul

Categories     Main Course

Time 2h11m

Number Of Ingredients 4

5 lb Bone-in ribeye roast
4 tsp onion salt
4 tsp seasoned salt
4 tsp garlic powder

Steps:

  • Mix up 1 tablespoon + 1 teaspoon each of onion salt, seasoned salt, and garlic powder, for a total of 1/4 cup of seasoning mix.
  • Pat the seasoning mix on both ends of the roast as well as the fat side. (The salt may not stick as well on the fat side, but don't worry about it.)
  • Set the seasoned roast on a roasting rack, bone-side down and fat-side up. Place the rack in a large roasting pan, and insert your meat thermometer into the middle of the roast.
  • Place the roast into a 500° preheated oven, uncovered, and cook for 5-6 minutes per pound.
  • Then shut the oven off completely, and DO NOT OPEN THE OVEN DOOR FOR TWO HOURS.
  • After two hours, check the temperature of the meat. If your thermometer reads 135-140°F, it's done! (If it isn't quite to temp yet, just put it back in the oven at 375°F until it's done.)

PERFECT PRIME RIB

Perfect Prime Rib image

I saw this made on a video and my mouth was was watering! Prime Rib is so expensive I can't bear to ruin a cut, so here it is. Perfection!

Provided by pammyowl

Categories     Winter

Time 5h

Yield 4 serving(s)

Number Of Ingredients 5

4 lbs prime rib roast
1/4 cup unsalted butter, softened
1 tablespoon fresh ground black pepper
1 teaspoon herbes de provence or 1 teaspoon thyme, whatever you like best
kosher salt

  • Tip*.
  • Your cooking times will vary depending on the size of your prime rib roast. To calculate your cooking time, multiply the exact weight of the roast by 5. Round the resulting number to the nearest whole number. The rib is cooked at 500 degrees F for exactly that many minutes. For example, for a 6 pound roast: 6x5=30, so cooking time is 30 minutes. Turn the oven off and wait 2 hours before opening the oven door. Remove the prime rib and slice into the most perfectly medium-rare meat you've ever see.

  • Season the Meat. Dry the rib with paper towels 24 hours before you want to cook it. Liberally season the prime rib on all sides — the fat cap, front, back, sides and bottom — with kosher salt and massage it in thoroughly.
  • Refrigerate for 24 Hours. Set the prime rib in a shallow dish or on a tray. Store the prime in the refrigerator for 24 hours, uncovered.
  • Bring to Room Temperature. Take the prime rib out of the refrigerator two to four hours before you want to cook it. Let it sit out until it reaches room temperature, about two to three hours for a 2- to 4-pound roast and three to four hours for a 4- to 8-pound roast.
  • Heat the Oven. Heat the oven to 500 degrees Fahrenheit. If you have a convection oven, operate it with the convection fan off.
  • Place in Oven. Set the prime rib on a roasting rack set in a deep roasting pan. Place the prime rib on the middle rack when the oven reaches 500 degrees Fahrenheit.
  • Roast With Oven On. Roast the prime rib for five minutes per pound. For example, if you have a 6-pound boneless prime rib, you need to roast it for 30 minutes at 500 degrees Fahrenheit.
  • Turn Off the Oven. Turn off the oven. Let the prime rib cook continue to cook using residual heat for two hours. Set the timer to alert you when to remove the prime rib.
  • Serve and Enjoy. Take the prime rib out of the oven. Serve the prime rib immediately. You don't have to let the prime rib rest; the residual-heat cooking took care of it.
