I live in Turkey and love ordering haydari at restaurants or picking it up from the deli section at the market. It is a thick and tangy Turkish yogurt dip best served with meat kebab and pita bread.

1 (16 ounce) container plain yogurt
5 cloves garlic
1 pinch salt
1 bunch fresh dill, chopped
1 bunch fresh parsley, chopped
1 (4 ounce) package cream cheese, softened
2 mint leaves, for garnish

Steps:

  • Line a colander with two layers of cheesecloth and place over a medium bowl. Place the yogurt on the cheesecloth and cover the colander with plastic wrap. Allow yogurt to drain 8 hours or overnight.
  • Scoop the drained yogurt into a mixing bowl. Mash the garlic cloves with the salt into a fine paste; mix into the yogurt. Stir the dill, parsley, and cream cheese into the yogurt and garlic mixture. Spread onto a dish and garnish with the mint leaves to serve.

1/2 small onion ((50 grams) minced)
1 large garlic clove (minced)
200 grams fresh spinach leaves
100 grams full-fat Greek yogurt
a pinch of fresh dill (chopped)
OPTIONAL: fresh lemon juice

Steps:

  • Heat olive oil in a pan over high heat.
  • Add onion and garlic and cook until soft and golden in color.
  • Add spinach in the pan. A hadful at a time while stiring with a wooden spatula.
  • Cook spinack for 2-3 minutes. Season with salt and pepper.
  • Turn of heat and stir in the Greek yogurt and fresh dill.
  • Serve with a few drops of freshly squeezed lemon on top.

1 6-ounce bag baby spinach
2 plump garlic cloves, halved, green shoots removed
Salt, preferably kosher salt, to taste
1 tablespoon freshly squeezed lemon juice (more to taste)
2 tablespoons chopped fresh dill
1/2 cup finely chopped parsley
2 tablespoons chopped fresh mint, or 1 teaspoon dried mint
2 to 3 tablespoons extra virgin olive oil
2 cups thickened yogurt or thick Greek style yogurt
1 bunch scallions, chopped (optional)

Steps:

  • Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. When the water comes to a boil, add the spinach and blanch for 10 to 20 seconds. Transfer to the ice water, cool for a minute, then drain and squeeze dry. Chop coarsely.
  • Place the garlic in a mortar and pestle with 1/2 teaspoon salt and mash to a paste (alternatively, finely mince). Combine with the lemon juice and olive oil, and let stand for 10 minutes. Stir in the yogurt.
  • In a medium bowl, combine the chopped spinach, dill, parsley and mint. Stir in the yogurt and garlic mixture, and the optional scallions. Add freshly ground pepper to taste and more salt if desired. Serve with bread, pita or raw vegetables.

2 c full fat greek yogurt
4 oz cream cheese (room temperature)
8-oz can water chestnuts (drained)
1 tsp kosher salt
½ tsp onion powder
½ tsp garlic powder
½ tsp dried parsley

Steps:

  • Place the spinach in a mesh strainer; run under warm water until the spinach is defrosted. Squeeze the excess liquid from the spinach until dry.
  • Combine yogurt, cream cheese, water chestnuts, salt, onion powder, garlic powder, and parsley in the bowl of a food processor. Process 30 seconds, scrape down the sides, then process an additional 30-60 seconds until smooth.
  • Transfer the mixture to a mixing bowl. Add the spinach and mix with a rubber spatula until combined.
  • Place in the refrigerator and chill for at least 1 hour.
  • Serve with pita or your favorite sliced raw vegetables.

2 cups packed fresh spinach, chopped
1/3 c. water
1 t. salt
1 garlic clove, minced
2 c. plain Greek yogurt

Steps:

  • Chop 2 packed cups of fresh spinach.
  • Place spinach in a microwave-safe dish and add 1/3 cup water.
  • Microwave on HIGH for 5 minutes.
  • Squeeze cooled spinach completely dry and discard liquid.
  • To the spinach, mix in 1 t. salt and 1 minced garlic clove (take out the center for a milder taste!).

1 small onion, finely chopped
1 large clove garlic, finely chopped
8 oz. frozen leaf spinach, thawed and squeezed dry
2 c. plain Greek yogurt
1 tbsp. fresh lemon juice
Kosher salt and pepper
1/4 c. fresh mint leaves, coarsely chopped

Steps:

  • Heat 1 tablespoon oil in large skillet on medium. Add onion and cook, stirring occasionally, until tender, 5 to 6 minutes. Stir in garlic and cook 2 minutes; transfer to bowl.
  • Chop spinach and toss with onion mixture. Fold in yogurt, lemon juice and 1/2 teaspoon each salt and pepper.

1 1/2 pounds spinach, stemmed and washed thoroughly in 2 changes of water (or 12 ounces baby spinach)
1 to 2 large garlic cloves (to taste)
Salt to taste
1 cup thick plain yogurt
2 tablespoons extra virgin olive oil
2 allspice berries, ground, or 1/8 teaspoon ground allspice (more to taste)
1 clove, ground, or 1/8 teaspoon ground clove
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon ground cinnamon
1 scant teaspoon coriander seeds, or 1 teaspoon freshly ground coriander
Chopped walnuts for garnish (optional)

Steps:

  • Blanch the spinach for 20 to 30 seconds or steam for 2 to 3 minutes. Rinse and squeeze out excess water and chop coarsely.
  • Pound the garlic to a paste with salt in a mortar and pestle. Stir into the yogurt and set aside.
  • Heat the olive oil over medium heat in a wide, heavy skillet and add the spices. Cook, stirring, until they begin to sizzle, and add the spinach. Cook, stirring, until heated through and coated with the oil and spices, 2 to 3 minutes. Transfer to a food processor and pulse to a puree. Add the yogurt and blend together. Transfer to a bowl or platter. Serve on croutons or with crudités such as red pepper squares, or with pita triangles. Garnish with chopped walnuts if desired. Serve with pita bread.
