SPICED MIDDLE EASTERN LAMB PATTIES WITH PITA AND YOGURT



Spiced Middle Eastern Lamb Patties with Pita and Yogurt image

Whether you spell it kefta or köfte or kufte or some other variation, you can find versions of these lamb or beef meatballs throughout the Middle East. The seasoning mixture here is simple, with spices you should already have on your shelf and you can play around, adding fresh or dried mint, grated onion, or a pinch of cinnamon. And if you like a garlicky yogurt sauce, by all means, add a minced clove.

Yield Makes 4 to 6 pita sandwiches

Number Of Ingredients 14

Yogurt sauce:
1 cup plain full-fat or low-fat yogurt
2 tablespoons fresh lemon juice
2 tablespoons finely chopped herbs, such as mint, dill or cilantro, plus herb sprigs, for serving
Kosher salt
Patties and pita:
1 1/2 pounds ground lamb or beef
1 tablespoon minced garlic (about 1 large clove)
1 tablespoon coriander
2 teaspoons ground cumin
1 1/2 teaspoons hot paprika
11/2 teaspoons kosher salt
1 1/2 tablespoons extra-virgin olive oil
4 to 6 pita bread rounds

Steps:

  • For the sauce:
  • In a small bow, whisk the yogurt with the lemon juice. Stir in the chopped herbs, season with salt and refrigerate until ready to use.
  • For the patties and pita:
  • In a bowl, use your hands to mix together all of the ingredients, except for the pita. Form the mixture into twelve 3-inch oval patties (about 1 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm
  • Preheat a grill for at least 10 minutes and prepare it for grilling over moderately high heat. If you are using a charcoal grill, leave one area where you can grill the pita indirectly.
  • Oil the grill grates and grill the patties until dark brown grill marks form on the bottom, 5 to 6 minutes. Flip the patties and grill for 4 to 6 minutes longer, until just cooked through.
  • Meanwhile, wrap the pita in foil and set the package on the top shelf of a gas grill or in the cooler spot of a charcoal grill and allow them to warm through, 8 to 10 minutes.
  • Wrap 2 or 3 patties in each pita, spoon some of the yogurt sauce alongside and serve with herb sprigs, passing the remaining yogurt sauce at the table.

1 lb ground lamb
4 garlic cloves, crushed
1 c fresh bread crumbs
1 Tbsp chopped fresh cilantro
1 Tbsp plain yogurt
1 tsp ground cumin
1 tsp paprika
1 tsp curry powder
1 tsp tomato paste
1/4 tsp ground cinnamon
1/4 tsp turmeric
1/4 tsp salt
FOR SERVING:
pita bread
plain yogurt
mint
cucumber slices

Steps:

  • 1. Put the ground lamb into a bowl with the remaining ingredients and mix well. Shape into 4 patties.
  • 2. Put under the broiler, 4 inches from the heat, and cook for 3 to 4 minutes on each side, until browned and firm.
  • 3. Serve in pita bread with yogurt, mint, and cu­cumber slices.

1 cup boiling-hot water
1/3 cup bulgur
3/4 teaspoon salt
1 medium onion, quartered
1/4 cup packed fresh cilantro leaves
1/4 cup packed fresh flat-leaf parsley leaves
1 lb ground lamb
1/2 teaspoon paprika (not hot)
1/4 teaspoon ground allspice
1/4 teaspoon black pepper
1/4 teaspoon cayenne
For sauce
1 small garlic clove
1/8 teaspoon salt
1/2 cup walnuts (1 1/2 oz)
1/4 cup water
1 teaspoon fresh lemon juice
1/8 teaspoon cayenne
For pitas
4 (4-inch) pita loaves
1 tablespoon olive oil
Paprika (not hot) for dusting
Garnish: fresh cilantro sprigs

Steps:

  • Soak bulgur for burgers:
  • Pour boiling-hot water over bulgur with 1/2 teaspoon salt in a small bowl and soak 15 minutes, then drain in a sieve.
  • Make sauce while bulgur soaks:
  • Mince garlic and mash to a paste with salt (1/8 teaspoon) using a large heavy knife, then transfer to a food processor and blend with remaining sauce ingredients until smooth. Transfer to a bowl.
  • Prepare burgers:
  • Preheat broiler.
  • Pulse onion and herbs in cleaned processor until finely chopped, then transfer to a bowl and stir in bulgur, lamb, paprika, allspice, pepper, cayenne, and remaining 1/4 teaspoon salt until just combined. Form lamb mixture into 4 patties (4 inches in diameter).
  • Broil pitas and burgers:
  • Arrange pitas on a baking sheet. Brush with oil, then lightly dust with paprika and season with pepper. Broil on lowest rack until toasted, 1 to 3 minutes (watch to prevent burning). Keep pitas warm, loosely covered with foil, while broiling burgers.
  • Oil rack of a broiler pan and heat 4 inches from heat until hot, 3 to 5 minutes.
  • Broil burgers, turning over once, until cooked through, 5 to 7 minutes total. Serve burgers on pitas, topped with sauce.

I adapted this from a Bon Appetit magazine. I love ground lamb and have tried countless recipes to find the best lamb burger. The original recipe came close, then I added a few elements that I liked from various other recipes and came up with this.

1 1/2 lbs ground lamb
1 cup chopped green onion (about 4)
1 1/4 teaspoons salt
1 teaspoon pumpkin pie spice
1/2 teaspoon cayenne pepper
1/3 cup pine nuts, toasted
1 cup plain yogurt
1 teaspoon ground cumin
inch-diameter pita bread, top 1/4 cut off each
1 cup diced seeded plum tomato

Steps:

  • Combine lamb, 1/2 cup onions, 1 teaspoon salt, pumpkin pie spice, pine nuts, and 1/4 teaspoon cayenne pepper in medium bowl. Mix gently. Using moistened hands, form lamb mixture into 4 equal patties, each about 1/2 inch thick.
  • Combine yogurt, cumin, remaining 1/2 cup onions, 1/4 teaspoon salt, and 1/4 teaspoon cayenne pepper in small bowl. Stir to blend. Let stand 15 minutes.
  • Prepare barbecue (medium-high heat). Grill burgers until cooked to desired doneness, about 4 minutes per side for medium.
  • Carefully open pita breads to make pockets; insert burger in each. Spoon in yogurt mixture and tomatoes, dividing equally, and serve.
