TURKISH RED LENTIL SOUP WITH MINT
This soup is divine and much like you will get at any authentic Turkish restaurant. It has dynamic flavors and a lovely mild heat. I make a big batch and eat it for lunch with crusty bread and salad the entire week. Optional: Serve with additional mint and lemon wedges.

- Heat the olive oil in a large pot over high heat. Cook and stir the onion in the hot oil until it begins to soften, about 2 minutes. Stir the garlic into the onion and cook another 2 minutes. Add the diced tomatoes to the onion mixture; continue to cook and stir another 10 minutes.
- Pour in the chicken stock, red lentils, bulgur, rice, tomato paste, paprika, cayenne pepper, and mint to the tomato mixture; season with salt and black pepper. Bring the soup to a boil, reduce heat to medium-low, and cook at a simmer until the the lentils and rice are cooked through, about 30 minutes.
- Pour the soup into a blender to no more than half full. Firmly hold the lid in place and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth; pour into your serving dish. Alternately, you can use a stick blender and puree the soup in cooking pot.

RED BEET SOUP
After having a bowl of wonderful light beet soup at a Russian friend's home, I tried to recreate it by tweaking a recipe I had found. This recipe comes pretty close, but I haven't tried making it yet. Later I learned that this is a cold borscht and is called "svekolnik" in Russian. Sometimes boiled diced potatoes are also added, but these are cooked separately from the beets.

Steps:
- Cook beets 30 min or until tender. Keep water (broth).
- Peel beets and julienne; return to pot.
- Add sugar, salt, lemon juice to taste. Cool.
- When ready to serve, add cucumber, scallions and one-half egg to each bowl.
- Garnish with a dollop of sour cream, dill and parsley.
- NOTE: You can use red wine vinegar instead of lemon juice.

- Warm olive oil in a large saucepan over medium heat. Stir in onions and garlic; cook until soft but not browned, about 5 minutes. Stir in beets, and cook for 1 minute.
- Stir in stock, and season with salt and pepper. Bring to a boil; cover, and simmer until the beets are tender, about 20 to 30 minutes. Remove from heat, and allow to cool slightly.
- In batches, add soup to a food processor, and pulse until liquefied. Return soup to saucepan, and gently heat through. Ladle into bowls, and garnish with a swirl of cream.

- Place beets in a medium pot and cover with water. Bring to a boil. Turn heat down to low and simmer until fork tender all the way through, about 60-90 minutes. Rinse with cold water.
- Once beets are cold, slip off their skins using your hands. Slice and place 3 of the 4 beets (saving one) in a blender with 2 cups cold water, or cold veggie stock). Add half of the chopped onion (about ⅛ cup) , 2 garlic cloves, 2 sliced Turkish cucumbers (saving one) salt, pepper, vinegar and about ⅔ of the fresh dill ( saving some for garnish). Blend until very smooth. Taste and adjust salt and vinegar. Place in the refrigerator until ready to serve.
- Prep the garnishes. Finely dice the remaining beet, cucumber, avocado and chop the remaining dill. Pour chilled beet soup (the colder it is, the better) into bowls. Top with the garnishes. Drizzle with a little olive oil or a swirl of yogurt or sour cream if you like. Serve immediately!

- Peel beets; grate; put in water with stew beef, chopped onion, and stewed tomatoes.
- Cook for 1 hour until stew meat is tender.
- Add lemon juice, sugar, salt and pepper.
- Cook for 30 minutes more.
- Beat one egg in bottom of 4 separate bowls.( i did this but had to microwave the egg and i wouldnt add again ).

- Remove the beets greens and set aside. Arrange beets in a baking dish. Drizzle with 2 tablespoons olive oil, 1 teaspoon sea salt, and pepper. Fill baking dish with about 1/4-inch water. Cover tightly with foil. Roast beets 60 - 70 minutes or until beets are yielding to the touch and fork tender. Set aside to cool.
- Under cold running water, break off the stem base and rub the skins off the beets. Rough chop the beets.
- To prep the leeks, rinse very well. Peel back some of the outer layers of the leeks, if they're very sandy, peel back about 4 of the leek layers to expose the sandy part and swish vigorously in a sink filled with cold water.
